GRILLED CORN, PEACH AND SPINACH SALAD WITH HONEY LIME DRESSING



Grilled Corn, Peach and Spinach Salad with Honey Lime Dressing image

Number Of Ingredients 14

⅓ cup olive oil
¼ cup honey
3 Tablespoons lime juice
1 clove minced garlic OR 1 frozen garlic cube
1½ teaspoons salt
¼ t ginger
Pinch cayenne pepper
4 ears corn on the cob
Non-Stick Cooking Spray
Salt & Pepper
4 oz spinach
4 ears corn
2 peaches, diced
2-3 shallots, finely diced

Steps:

  • In a small bowl, whisk together all dressing ingredients until smooth. Set aside.
  • Spray each side of the corn with non-stick spray. Sprinkle salt and pepper over each ear of corn.
  • Broil or grill the corn for about 5-8 minutes per side, until it starts to brown. Remove from oven and set aside to cool.
  • Slice kernels off the corn and place in a salad bowl. Add spinach, peaches and shallots.
  • Drizzle dressing over the salad. (You may not need all of it, start with half and see how much more you need.)
  • Serve immediately.
  • Dressing can be made a couple of days ahead of time and stored in the fridge in an airtight container.
  • Corn can be grilled a day or two ahead of time.

6 ears corn, husks and silk removed
1 cup cherry tomatoes, halved
1 avocado, diced
1 orange bell pepper, seeded and diced
1/2 red onion, diced
1 bunch fresh cilantro, chopped
1/2 cup avocado oil
1 tablespoon honey
1 tablespoon hot sauce
1 teaspoon garlic, grated
2 limes, juiced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the grill to high heat.
  • Place the corn on the grill and roast, turning frequently, until the outside of the corn is lightly charred, 7 to 10 minutes. Allow the corn to cool completely. Cut the corn kernels off the cobs and dump them into a large bowl.
  • Add the cherry tomatoes, avocado, bell pepper, onion and cilantro to the corn and toss gently to combine. Set aside.
  • For the dressing, combine the avocado oil, honey, hot sauce, garlic, lime juice, salt and pepper in a small bowl, whisking to dissolve the honey and salt. Pour over the salad and toss gently to combine. Refrigerate until ready to serve. Serve as a side dish or with chips.

A friend of mine brought this to a dinner party and everyone loved it. I've had it twice since then and it just might become my favorite summer salad. Its flavors are refreshing and light with a spicy kick from the jalapeno. It's a perfect side dish for grilled meat or fish. Give this one a try! *Prep time does not include time to cook the corn. Cook time is the rest time after the salad is prepared.

1/4 cup fresh lime juice
1 tablespoon honey
1 jalapeno pepper, seeded and minced
1 -3 tablespoon fresh cilantro, minced
1/4 teaspoon salt
6 ears corn, cooked
1 1/2 cups Baby Spinach
1 large tomatoes, seeded and chopped
3/4 cup cucumber, seeded and chopped

Steps:

  • Whisk together lime juice and honey.
  • Add jalapeno, cilantro, and salt and set aside.
  • Cut corn off cobs leaving some pieces large.
  • Add to dressing.
  • Add spinach, tomato and cucumber and mix well.
  • This salad tastes best after about half an hour when the spinach has wilted and the flavors have had time to meld.

2 cups cherry tomatoes
6 ears fresh corn
1 red onion, finely chopped
2 cups arugula
2 tablespoons canola oil
1/2 yellow bell pepper, finely chopped
1/4 cup olive oil
2 tablespoons honey
1/4 cup lime juice
1 garlic clove, minced
1 teaspoon jalapeno, chopped
2 tablespoons fresh cilantro, chopped
salt and black pepper, to taste
fresh parsley, to garnish

Steps:

  • Preheat the broiler or grill to moderate. Remove the husks and silks from the corn.
  • Rub the canola oil over the corn and season it with salt and black pepper. Broil or grill it for about 6 minutes or until the ears are golden brown.
  • Let the corn cool down, then remove the kernels, and combine them with the cherry tomatoes, red onion, and red bell pepper.
  • Combine the olive oil, honey, lime juice, garlic, jalapeno, and cilantro to make the salad dressing and add salt and black pepper to taste.
  • Stir the dressing into the corn mixture. Arrange the arugula in a big serving bowl and top it with the corn mixture. Garnish the corn salad with the fresh parsley. Serve at room temperature.

1 (10 ounce) package fresh spinach or 1 lb fresh spinach
1 avocado, cubed (sprinkle with lemon or lime juice)
1 small jicama, peeled and cut into thin strips
1/4 cup safflower oil or 1/4 cup vegetable oil
2 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon cumin
1/2 cup sunflower seeds

Steps:

  • If using bulk spinach, remove stems, wash, pat dry and tear into bite-sized pieces.
  • Combine spinach, avocado and jicama in large bowl; set aside.
  • Combine oil and next 6 ingredients in a jar; cover tightly and shake vigorously.
