GRILLED OLD BAY® CORN ON THE COB
Mexican street corn is one of my favorite ways to eat corn but I wanted to try something different. I came up with this Cajun version by replacing lime with lemon, chili powder with Old Bay®, cotija with Parmesan, and cilantro with parsley.

INSTANT POT® OLD BAY® CORN ON THE COB
If you've never made corn in your Instant Pot®, you need to give it a try. Corn cooked in your pressure cooker comes out crisp and naturally sweet and buttery since none of the natural flavor is boiled off or lost in escaping steam. This recipe for Old Bay® corn on the cob gives you that flavor of a low country boil but with very little effort.

Steps:
- Whisk together the buttermilk and seafood seasoning in a large bowl. Submerge the corn in the seasoned buttermilk and allow to soak at room temperature for 15 minutes or up to 3 hours.
- Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- Remove the corn from the buttermilk and allow the excess liquid to drain off. Place on the direct heat side of the grill and char on all sides, about 1 minute per side. Move to the indirect heat side of the grill, then close the lid and cook until cooked through, 5 to 10 minutes. Remove from the grill and serve!

CORN ON THE COB WITH OLD BAY AND LEMON
If you've had the pleasure of eating your way through a bucket of Maryland blue crabs poured out onto newspaper, you've probably had Old Bay seasoning. It's a blend of celery salt, black pepper, crushed red-pepper flakes and paprika, and any member of its fiercely loyal Mid-Atlantic fan base will tell you that it should be present at any proper crab or shrimp boil. In this recipe, you get lots of that seaside flavor without having to source fresh blue crab.
