Grilled Chicken Street Tacos with Peach Salsa image

These Grilled Chicken Tacos are made with juicy grilled chicken, fresh salsa, corn, cilantro, lime, and Cotija on street-sized tortillas. They're super easy, festive, and disappear at every gathering!

2 Boneless Skinless Chicken Breasts (patted dry with a paper towel)
1 teaspoon Extra Virgin Olive Oil
pinch Salt and Pepper
1/4 teaspoon Ground Cumin
8-12 Corn Tortillas
1 cup Peach Salsa (or mango salsa)
1 ear Corn (kernels removed)
2 tablespoons Cotija Cheese
1/4 cup Cilantro (chopped)
1 Lime (cut into wedges)

Steps:

  • Preheat grill to medium. Clean the grill surface and brush with oil.
  • Prepare CHICKEN BREASTS by lightly coating with OLIVE OIL and sprinkling SALT, PEPPER, and CUMIN over the surface. Allow chicken to sit at room temperature for about 15 minutes (this helps it cook more evenly when it's on the grill).
  • To grill chicken breasts, place them in the center of the hot grill, close the lid, and set a timer for 3-5 minutes, or until chicken easily releases from the grill and shows well-defined grill marks.
  • Next, turn the outside grill burners to MEDIUM and center grill burner to OFF. This is known as MOM = medium-off-medium, which creates indirect heat under the chicken and allows it to bake like it's in an oven.
  • Open the grill lid and flip chicken breasts over, keeping them in the center of the grill. Close the grill lid and continue cooking until chicken reaches an internal temperature of 165°.
  • Warm the tortillas and thinly slice the CHICKEN BREAST to scatter evenly among them; top with PEACH or MANGO SALSA; FRESH CORN, COTIJA CHEESE, CILANTRO, and LIME WEDGES.

6 boneless, skinless chicken thighs
1 cup long-grain white rice
One 16-ounce jar mango salsa
Kosher salt and freshly ground black pepper
Olive oil

Steps:

  • Preheat a large cast-iron skillet over medium-high heat.
  • Sprinkle the chicken thighs with salt and pepper on both sides. Add 2 tablespoons oil to the skillet and sear the chicken thighs until browned well, 2 to 3 minutes per side. Remove the chicken to a plate.
  • Add the rice, 1 1/2 cups water and 1 cup of the mango salsa. Stir and bring to a boil. Add the chicken back to the top of the rice, reduce to a simmer, cover and cook until the chicken and rice are cooked through, 17 to 20 minutes.
  • Serve up a pile of rice, topped with the chicken and garnished with additional mango salsa.

A sweet and juicy Peach Mango Salsa with chopped cilantro, lime juice, and red onions spooned on top of a succulent, grilled chicken breast - dinner can't get more summery than that!

1 cup peach (ripe but still firm, peeled and cubed (about 2 peaches))
1 cup mango (ripe but still firm, peeled and cubed (about 1 small mango))
1 lime
1 1/2 tbsp red onion (finely chopped)
1/4 tsp red pepper flakes
1 tbsp fresh cilantro (chopped)
pinch salt
4 small skinless boneless chicken breasts (about 5 oz / 140 grams each)
sea salt and freshly cracked pepper to taste
Olive oil spray

Steps:

  • Prepare the salsa. Combine all the ingredients in a medium bowl and toss gently. Set aside.
  • Heat a grill pan (I use one similar to this one) over high heat. Season the chicken with salt and pepper. When hot, spray lightly with olive oil and brown chicken, about 3 minutes on each side.
  • Reduce heat to medium and cook for an additional 2-4 minutes per side, or until chicken is cooked through (but still moist and juicy!). Transfer chicken on a cutting board, and using a fork to hold the chicken, slice it. Place cut chicken breasts on plates and top with salsa. Serve immediately.

4 chicken breast halves, bone-in
3 tablespoons Sandra Lee's All-Purpose Rub, recipe follows
1 tablespoon ground cumin
1/2 teaspoon cayenne
8 ounces frozen peach slices, diced small
8 ounces frozen mango chunks, diced small
1 jalapeno, finely chopped
1/4 teaspoon salt
1/4 cup chopped fresh cilantro leaves
1 lime, juiced
2 (1.25-ounce) packets original chili seasoning
3 tablespoons granulated garlic
1 tablespoon kosher salt
1 tablespoon salt-free all-purpose seasoning
2 tablespoons sugar

Steps:

  • Set up grill for direct grilling over medium-high heat. Oil grate when ready to start cooking.
  • Rinse and pat dry chicken breast; set aside.
  • In a small bowl, mix together All-Purpose Rub, cumin, and cayenne. Gently pat onto all sides of chicken breasts using all the rub mix; set aside while preparing salsa.
  • For salsa: In a medium bowl, toss to combine all ingredients. NOTE: It is easier to dice frozen fruit while it is still frozen. Cover and set aside while chicken cooks.
  • Place chicken on hot oiled grill. Grill chicken 5 to 6 minutes per side or until done.
  • INDOOR: Preheat oven to 350 degrees F. Prepare chicken breasts, as directed. Roast chicken breasts in preheated oven for 35 to 40 minutes.
  • Serve chicken hot with salsa.
  • Combine all ingredients. Store in air-tight container in cool dry place or freezer.

8 skinless, boneless chicken breast halves
1 pinch salt and ground black pepper to taste
2 cups peach preserves
3 tablespoons extra-virgin olive oil
2 tablespoons soy sauce
1 tablespoon finely chopped garlic
1 tablespoon Dijon mustard
4 ripe peaches, halved and pitted

Steps:

  • Preheat grill for medium heat and lightly oil the grate. Season chicken breast halves with salt and black pepper.
  • Stir peach preserves, olive oil, soy sauce, garlic, and mustard in a bowl; season with salt and black pepper. Reserve about 1/2 cup peach sauce.
  • Place chicken on preheated grill; cook until golden brown, 6 to 7 minutes, then flip chicken. Continue cooking for 5 to 6 minutes. Brush both sides of the chicken with peach sauce. Cook until no longer pink in the center and the juices run clear, 4 to 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Arrange peach halves cut side down on the grill. Grill for 2 minutes, flip, and brush with reserved 1/2 cup peach sauce. Continue to grill until peaches are tender, 3 to 4 minutes more.

1 large peach, peeled and chopped
1/2 cup chopped sweet onion
1/4 cup salsa
1 small jalapeno pepper, seeded and minced

1 large lime
4 garlic cloves
1 tablespoon olive oil
2 ripe mangoes, peeled and chopped
3 very ripe roma tomatoes, chopped
1 sweet red peppers or 1 yellow sweet pepper, seeded and chopped
1 serrano pepper (only use as much as the amount of heat you can take)
2 green onions, chopped
1/4 cup chopped fresh cilantro
1 lime, juice of

Steps:

  • Marinate the chicken w/ the juice of one lime and the oil and garlic in a zip lock bag in the fridge for at least 2 hrs or overnight.
  • For the salsa mix all the ingredients and season with salt and pepper to taste, set aside for the flavors to blend, mean while grill the chicken breasts on low heat till no longer pink.
  • Place 1 cup of rice on each plate cover with a chicken breast and then divide the salsa amongst the 4 plates and serve.
  • Time does not include marinade time or time to steam rice.

1 cup diced fresh mango
1 cup diced fresh papaya
1 large red pepper
1/4 cup shredded coconut
1/3 cup diced red onion
1 jalapeno pepper, seeded and minced
2 tablespoons of fresh mint, chopped
1 tablespoon fresh lime juice
1/4 cup olive oil
1/4 cup fresh lime juice
2 tablespoons finely chopped cilantro
1 tablespoon brown sugar
1 shallot, finely chopped

Steps:

  • Prepare the marinade: In a small bowl, combine all the marinade ingredients and whisk to combine. Taste for seasoning and adjust if necessary.
  • Place the chicken breasts between two sheets of plastic wrap and pound to flatten slightly with a rolling pin. Arrange the chicken breasts in a large shallow glass dish and pour the marinade over, Turning to coat evenly. Cover and refrigerate for 2 to 4 hours, turning several times to make sure the marinade covers all the chicken.
  • Meanwhile prepare the salsa: Place the red pepper in a preheated 425*F oven and roast until skin is well blistered. (alternatively roast over a gas flame) Place blistered pepper into a zip lock baggie and close the bag. Let it sit for about 10 to 15 minutes. Remove from bag. Slip peel off and remove seeds. Chop roasted pepper and combine with remaining salsa ingredients. Mix well, cover and chill until ready to serve.
  • Prepare a charcoal or gas grill for medium high heat grilling. Remove the chicken from the marinade and place on grill rack. Grill, turning once for 7 to 10 minutes on each side, or until juices run clear. Alternatively, you may broil the breasts for 7 to 10 minutes on each side, once again, until the juices run clear.
  • To serve, place the chicken on individual plates and spoon the mango salsa on top.
