Grilled Chicken Breast with Marinated Cherry Tomato Salad image

"This is a great summertime dish as tomatoes are at their peak during the summer," says Marc. "Serve with some crusty bread to soak up any leftover cherry tomatoes."

2 teaspoons coriander seeds
2 cups heirloom cherry tomatoes
1/4 red onion, thinly sliced
5 tablespoons extra-virgin olive oil
2 tablespoons fresh ginger juice
2 tablespoons fresh basil leaves, thinly sliced
1 tablespoon fresh mint leaves, thinly sliced
1 tablespoon sherry vinegar
1 clove garlic, minced
Kosher salt and freshly ground black pepper
3 tablespoons extra virgin olive oil
5 fresh basil leaves, torn
1 clove garlic, sliced
2 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper

Steps:

  • For the marinated cherry tomatoes: Toast the coriander seeds in a small skillet over medium heat until fragrant, 3 to 5 minutes. Transfer to a mortar and pestle and crack. Allow to cool.
  • Bring a medium pot of water to a boil. Make a small "x" incision at the bottom of each tomato. Blanch the cherry tomatoes for 1 minute and immediately transfer them to a large bowl filled with ice water (an ice bath). Allow the tomatoes to cool, and then peel the tomatoes and discard the skins.
  • In a medium bowl, mix together the coriander, peeled tomatoes, onions, olive oil, ginger juice, basil, mint, vinegar, and garlic. Season with salt and pepper, cover, and allow the tomato mixture to sit at room temperature for 4 hours.
  • For the chicken: Combine the olive oil, basil and garlic in a large bowl. Add the chicken breasts, making sure to coat all sides with the marinade. Cover and let marinate for at least 2 hours in the refrigerator.
  • Preheat the grill to medium heat. Remove the chicken from the marinade and pat dry with a towel. Sprinkle with salt and pepper. Add chicken breasts and grill for around 5 minutes on each side, depending on how hot your grill is, or until cooked through.
  • Serve the chicken with some of the marinated tomatoes on top.

1 kg (2.2 lb) chicken breasts (See Note 1)
1/4 cup (60 ml) extra virgin olive oil
2 tbsp lemon juice (See Note 2)
1 tsp garlic powder
1 tsp smoked paprika
1 tsp ground black pepper
1 1/2 cups (300 g) Perino Grape Tomatoes - quartered (See Note 3)
1/3 cup flat-leaf parsley - finely chopped (See Note 4)
3 spring onions/scallions - finely sliced, the white part and some of the green
1 1/2 cups continental cucumber - chopped into quarters, seeds removed
2 tbsp extra virgin olive oil (See Note 2)
1 tbsp lemon juice (See Note 2)
sea salt and freshly ground black pepper - to taste (See Note 5)

Steps:

  • Cut the chicken breasts in half horizontally to form two cutlets. Gently press down with the back of a knife to even the breasts if necessary.
  • In a large flat dish, mix your marinade and add the chicken. Cover the dish with plastic wrap and refrigerate for 30 minutes, turning the chicken over in the marinade halfway through.While the chicken is marinating, assemble your tomato salad.
  • Remove the chicken from the marinade, draining off the excess.
  • Heat a ribbed grill plate over high and cook the chicken for 2-3 minutes on both sides or until cooked through. Do not overcook, or the chicken will dry out.
  • Cut your cucumber in half, and remove the seeds using a teaspoon. Cut the cucumber in half again, and dice. Add to a medium-size bowl.
  • Slice the tomatoes into quarters. Finely slice the parsley and spring onions. Add to the bowl with the cucumbers.
  • Add the lemon juice and olive oil. Mix well and season to taste. Serve alongside the grilled chicken.

1 clove garlic
1 teaspoon kosher salt, plus more to taste
1 tablespoon extra-virgin olive oil
1/4 lemon, juiced (about 1 tablespoon)
1 cup pear tomatoes, sliced in rounds
1 kirby cucumber, unpeeled, quartered lengthwise and sliced
3 pepperoncini peppers, stemmed and minced
1 tablespoon chopped fresh dill
Freshly ground black pepper
4 chicken paillards (scaloppini), about 4 ounces each
Olive oil spray
Freshly ground black pepper

Steps:

  • Smash the garlic clove, sprinkle with 1 teaspoon of salt and with the flat side of a large knife, mash and smear to a coarse paste. Put the garlic paste in a large bowl and stir in the olive oil and lemon juice. Add the tomatoes, cucumber, pepperoncini, and dill and toss. Give a couple of generous grinds of black pepper. Toss again, and set aside.
  • Preheat a grill pan or nonstick skillet to medium high. Spray the chicken paillards lightly with the olive oil and season with salt and black pepper. Grill the chicken, in batches if necessary, to avoid crowding the pan, turning once, until cooked through, about 2 minutes per side. Place each paillard on a plate and serve topped with the tomato-cucumber salad.

I found this recipe on another web site and made it for Sunday night dinner - the family loved it. I wanted to get it posted before I lost the recipe. You could low carb this recipe by omitting the pasta and serving on a bed of salad greens.

1 1/4 cups carrots, julienne-cut
1 cup sliced onion, vertically sliced
1 cup zucchini, julienne-cut

1 tablespoon olive oil
4 boneless skinless chicken breasts
1/2 teaspoon dried basil
1/2 teaspoon dry oregano
1/4 cup balsamic vinegar
1/4 cup fresh lemon juice
1 tablespoon olive oil
1 1/2 teaspoons Dijon mustard
1 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, crushed
1 (12 ounce) box ziti pasta, cooked
2 tablespoons fresh basil, chopped
16 cherry tomatoes, halved
feta cheese, to garnish

Steps:

  • Preheat oven to 450 degrees.
  • Combine all the vegetables with the olive oil, toss gently to coat. Bake at 450 for 20 minutes, turning occasionally; cool.
  • Prepare grill.
  • Sprinkle chicken with dried basil and oregano; cook chicken 4 minutes on each side or until chicken is doen. Cool; cut into 1/4 inch wide strips.
  • Combine all ingredients for the vinaigrette, with a whisk.
  • Combine the roasted vegetables, chicken, vinaigrette, pasta, fresh basil, tomatoes and feta in a large bowl; toss gently to coat.

1/2 pound crusty peasant-style bread, torn into bite-size pieces (about 6 cups)
3 large vine-ripened tomatoes (about 1 1/2 pounds), cut into 3/4-inch pieces
3/4 cup finely chopped inner (very pale green) celery ribs and leaves
1/3 cup small brine-cured black olives such as Gaeta or Niçoise, halved and pitted
1/4 cup finely chopped red onion
2 tablespoons drained capers
2 to 3 tablespoons red-wine vinegar
2 garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1/3 cup extra-virgin olive oil
For Chicken
3 whole skinless boneless chicken breasts (about 2 pounds total), halved
vegetable oil for brushing chicken
1 cup fresh basil leaves, torn into pieces
Garnish: whole celery leaves

Steps:

  • Make Salad:
  • Preheat broiler.
  • On a large baking sheet spread bread in one layer and toast under broiler about 4 inches from heat until pale golden, about 3 minutes on each side. Cool bread. Bread may be toasted 2 days ahead and kept in a sealable bag at room temperature.
  • In a bowl toss together bread, tomatoes, chopped celery, olives, onion, and capers. In a blender or small food processor blend together vinegar, garlic paste, olive oil, and salt and pepper to taste until smooth and drizzle over salad. Toss salad well and let stand at room temperature while grilling chicken.
  • Grill Chicken:
  • Prepare grill.
  • Brush chicken with vegetable oil and season with salt and pepper. Grill chicken on a rack set 5 to 6 inches over glowing coals 4 to 5 minutes on each side, or until just cooked through. (Alternatively, chicken may be grilled in 2 batches in a hot well-seasoned ridged grill pan over moderately high heat.) Transfer chicken to a cutting board and cool.
  • Stir basil into salad. Slice chicken on the diagonal and serve with salad. Garnish each serving with whole celery leaves.

Steps:

  • Wrap corn in microwave-safe plastic wrap and microwave on high power until slightly softened, about 3 minutes, turning corn over halfway through cooking. Cool slightly and remove plastic wrap. Brush with 2 teaspoons oil and season with salt and pepper.
  • Whisk lemon juice, garlic, basil, and remaining 1/4 cup oil together in small bowl and season with salt and pepper. Transfer 2 tablespoons dressing to medium bowl and whisk in mustard and honey.

2 grilled chicken breasts, boneless, skinless, chopped (optional)
8 ounces grape tomatoes
1 -2 tablespoon olive oil
1 teaspoon dried basil or 1/2 cup chopped fresh basil
salt and pepper
3 cups mini penne pasta, uncooked
water or chicken broth, to cook pasta in
3/4 cup white wine
1/4 cup favorite Italian dressing, not creamy (I used Northern Italian)
10 -15 black olives or 1/4 cup sliced black olives

Steps:

  • Marinate chicken in favorite marinade and grill until done. You can leave out the chicken for a great vegetarian meal.
  • Heat oven to 400 degrees. Mix tomatoes with oil, basil and salt and pepper to taste. Roast for 12 minutes in shallow baking pan.
  • Meanwhile, cook pasta according to directions in water or broth add 1/4 cup white wine.
  • Smash cooked tomatoes with back of wooden spoon.
  • Chop chicken, if using.
  • Drain pasta.
  • Mix pasta, tomatoes, chicken and olives together. Add white wine and dressing.
  • Serve warm.

1/2 cup chopped green onion
6 cups mixed salad greens, torn into bite-sized pieces (including several leafy varieties, a bit of crunchy Romaine hearts and some arugula)
1 red sweet bell pepper, seeded and sliced into rings
1 yellow sweet bell pepper, seeded and sliced into rings
1 1/2 cups roasted garlic mayonnaise (recipe follows)
balsamic vinegar, for drizzling
8 garlic cloves
1 tablespoon olive oil
1 1/2 cups mayonnaise
1 teaspoon lemon juice
1 teaspoon Dijon mustard

Steps:

  • Brush each of the chicken breasts with the olive oil, then season both sides with the salt and pepper. Grill over hot coals, turning once, until golden brown and thoroughly cooked; cool, then cut into 1/2-inch chunks.
  • Combine cooled chicken with the Roasted Garlic mayonnaise, celery and green onions.
  • To serve, arrange one-fourth of the salad greens on each of 4 plates. Arrange pepper slices on top of greens, then drizzle some of the vinegar and olive oil over each portion, along with additional seasonings of salt and pepper.

  • Roasted Garlic Mayonnaise: Roast 8 garlic cloves, still in their skins, in 1 tablespoon olive oil in an oven-proof dish at 350 F until soft when pressed, about 45 minutes to 1 hour. Let garlic cool, peel away outer skins and place garlic pulp and oil from roasting dish in bowl of a food processor, along with mayonnaise, fresh lemon juice and Dijon-style mustard. Process until garlic is pureed and mixture is smooth. Season with salt and pepper, to taste. Makes about 1 3/4 cups.
