2 tablespoons Dijon mustard
1/4 cup Bourbon
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce

1/4 cup brown sugar
2 garlic cloves, minced

Steps:

  • Combine olive oil and next 7 ingredients.
  • Add chicken, cover and marinate in the refrigerator for at least 2 hours or as long as overnight. Remove chicken from marinade. Discard marinade.
  • Place chicken on grill over medium heat. Grill uncovered for 15-20 minutes, turning once.

1/4 cup kentucky Bourbon (corn whiskey like Jim Beam)
4 ounces soy sauce
2 tablespoons vegetable oil
1 onion, chopped
3 garlic cloves, chopped
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
3 lbs skinless chicken breast halves
1/2 cup ketchup

Steps:

  • In a food processor or blender, combine all of the ingredients except for the chicken and ketchup and puree until smooth.
  • Pour the marinade over the chicken, rub it in well, and refrigerate for 3-4 hours, turning the chicken over a couple of times while it's marinating.
  • Grill the chicken over hot coals for about 10 minutes on each side; baste with marinade while grilling.
  • Or broil chicken with marinade in a casserole dish at 350F for about 40 minutes, turning chicken and basting with pan juices a couple of times while it cooks.
  • When the chicken is done remove it from the pan.
  • Add ketchup to the remaining marinade and boil down until it is a thick dark sauce to coat the chicken with (about 5 minutes).

Chicken (boneless, bone in, breasts or thighs)
Salt & pepper
1/2 cup barbecue sauce
1/1 TBS to 1 TBS Whisky or Bourbon
2 TBS honey

Steps:

  • Pat your chicken dry and trim where necessary.
  • Season with salt and pepper.
  • Combine barbecue sauce (I used Spicy Jack Daniels BBQ), honey and Whiskey/Bourbon and stir until smooth and fully blended.
  • Oil grill, heat to med-high. When Grill is hot, place chicken on grill and cook (depending on cut used) until done flipping once. When placing the chicken on the grill do not brush the face down side with the sauce, brush the topside (separate a bit of sauce from the rest for this so you don't contaminate the rest with raw chicken then wash basting brush)., when you flip it, then brush the other side and cook until done.
  • Remove from grill and brush both sides of the chicken with more sauce, serve.

Steps:

  • Make the rub: Whisk all the spice rub ingredients in a small bowl.
  • Make the bbq sauce: Heat the oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onion and cook until soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Stir in 1/2 cup of the bourbon and cook until reduced. Add the ketchup and water, bring to a boil and simmer for 5 minutes. Stir in the remaining ingredients and simmer until thickened, stirring occasionally, about 10 minutes.
  • Cool for about 5 minutes, then transfer the mixture to a food processor and puree until smooth. Season with salt and pepper, to taste. Pour into a bowl, add the remaining 2 tablespoons of bourbon and allow to cool at room temperature. The sauce will keep for 1 week in the refrigerator stored in a tightly sealed container.
  • Heat the grill to medium heat. Brush the chicken with the 1/4 cup of oil and season on both sides with the spice rub. Season with salt and pepper, to taste. Grill the chicken slowly, with the lid closed, until golden brown on both sides and fat has rendered. Begin brushing the chicken liberally with the bbq sauce during the last 10 minutes of grilling.
  • Arrange on a serving platter and serve.

2 cups Kansas City BBQ Sauce, divided (see below for recipe)

½ medium onion, thinly sliced
8 slices provolone cheese
¼ teaspoon Fresh cilantro or parsley
Reynolds Wrap® Non-Stick Foil
1 cup ketchup
½ cup brown sugar
¼ cup yellow mustard
¼ cup apple cider vinegar

Steps:

  • Whisk together all sauce ingredients in a medium saucepan. Bring to a boil, reduce to a simmer and cook for 10 to 15 minutes. Remove from heat and allow to cool to room temperature, about 15 minutes.
  • Measure out 1/2 cup of sauce and set aside. Pour remaining sauce into a large sealable bag. Add chicken breasts to bag. Seal and refrigerate for 30 minutes.
  • Preheat grill to medium heat and arrange four 12x12-inch pieces of Reynolds Wrap® Non-Stick Foil on the grill. Use tongs to transfer one chicken breast to each foil square. Discard marinade.
  • Brush each chicken breast with some of the remaining 1/2 cup BBQ sauce. Top with mushrooms and onions. Fold foil around each chicken breast to enclose the chicken and veggies. 1/3 cup bourbon
1/3 cup soy sauce
1/4 cup olive oil
1 tablespoon grated gingerroot
4 cloves garlic, crushed

Steps:

  • Pound or cut chicken breasts into thin cutlets. Place in resealable food-storage plastic bag.
