Time 30m

Yield 4 servings

Number Of Ingredients 9

3 cloves garlic
1/2 cup extra-virgin olive oil, plus more for brushing
2 to 4 anchovy fillets, chopped
Juice of 1 lemon
Kosher salt and freshly ground pepper
1 pound skin-on, boneless chicken breasts
4 (1/2-inch-thick) slices focaccia or whole-wheat Italian bread
4 romaine lettuce hearts, halved lengthwise
3/4 cup freshly grated parmesan cheese, plus more for garnish

Steps:

  • Preheat a grill or grill pan to medium high. GRILLED SHRIMP CAESAR SALAD SKEWERS

Grilled Shrimp Caesar Salad Skewers image

This has everything you love about both Caesar salad and grilling, nestled together on a stick. Why turn on the oven to make croutons when you can transform a regular old baguette into deliciously crisp nuggets right on your grill?

Provided by Food Network Kitchen

Time 25m

Yield 4 servings

Number Of Ingredients 12

1/2 cup mayonnaise
1/4 cup plus 2 tablespoon extra-virgin olive oil
3 anchovies packed in oil, finely minced
2 small cloves garlic, grated
Zest and juice of 2 lemons (about 2 tablespoons zest and 1/3 cup juice)
Zest and juice of 2 lemons (about 2 tablespoons zest and 1/3 cup juice)
Freshly ground black pepper
2 ounces Parmesan, finely grated (about 1 1/2 cups lightly packed)
Kosher salt
One 6-inch French baguette
2 romaine hearts
1 pound large shrimp, peeled, deveined and tails removed

Steps:

  • Whisk the mayonnaise, 1/4 cup of the oil, the anchovies, garlic, lemon zest and juice and 1/2 teaspoon freshly ground black pepper together in a mixing bowl. Add 1 cup of the Parmesan and stir to combine. Season with some salt and pepper.
  • Preheat a large grill pan or outdoor grill over high heat. Slice the baguette in half length-wise, like you would to make a sandwich. Then slice each half into 8 equal pieces, about 3/4-inch-thick. Place the pieces on a baking sheet or large plate and reserve.
  • Quarter the romaine hearts lengthwise and cut each quarter into 1-inch pieces, making sure to keep each piece stacked and together. You will need 24 pieces total.
  • To assemble the skewers, carefully thread 1 stack of the romaine on a skewer, making sure that the thickest part of the romaine is in the center of the skewer. Follow the romaine with 1 piece of baguette and repeat until you have 3 stacks of romaine and 2 pieces of baguette on the skewer. Thread 2 shrimp onto the end of the skewer, making sure that both the top and bottom of each shrimp is taut on the skewer. Leave no more than 1/2-inch of exposed skewer at each end once all of the ingredients are on. This will prevent you from having to soak the skewers if you are using wooden skewers. Place the assembled skewer on a sheet tray. Repeat with the remaining 7 skewers and ingredients.
  • Place 1/2 cup of the dressing in a small bowl and whisk in the remaining oil. Brush the skewers liberally with the dressing. Place the skewers on the grill and cook until the bread and romaine are lightly charred and the shrimp is just cooked through, about 3 minutes, rotating the skewers as needed for even charring. If the shrimp is not cooked by the time the bread toasts, use tongs to touch the shrimp ends to the hot grill grate.
  • Transfer the grilled skewers on to a large platter and sprinkle with the remaining Parmesan. Serve immediately with the remaining dressing on the side.

GRILLED CHICKEN CAESAR SALAD

Grilled Chicken Caesar Salad image

Depending on your appetite, this variation on a classic Caesar salad with grilled chicken makes an excellent first-course or a full-on meal. Hitting the lettuce with a little fire is an unexpectedly brilliant trick; the green leaves char and crisp and the insides become slightly tender, but you still get the satisfying crunch everyone loves about romaine. If you're a pescatarian, try it with grilled tuna, salmon or scallops.

Provided by Florence Fabricant

Categories     dinner, lunch, salads and dressings, appetizer, side dish

Time 2h40m

Yield 6 servings

Number Of Ingredients 11

2/3 cup extra-virgin olive oil
4 salt-cured anchovies, rinsed and dried
1/2 cup lemon juice
3 tablespoons Worcestershire sauce
2 cloves garlic, minced
2 pounds skinless and boneless chicken breasts
2 hard-cooked eggs
1/4 cup Parmigiano-Reggiano
Salt and ground black pepper to taste
2 heads romaine lettuce
4 slices whole-grain bread, without crusts

Steps:

  • Place 2 tablespoons of olive oil in a small saucepan. Add anchovies and cook on low, stirring, until they fall apart and meld with the oil. Place in a small bowl. Add the lemon juice, Worcestershire sauce, garlic and remaining olive oil.
  • Place chicken in a bowl, add 1/4 cup of the olive oil dressing, turn to coat chicken breasts, cover and set aside to marinate 2 hours, longer if refrigerated.
  • Separate egg whites and yolks. Place yolks in a small dish, add a little of the dressing, blend until smooth and mix in with the rest of the dressing. Stir in cheese. Season with salt and pepper. Dice whites and keep them separate.
  • Light a grill. Remove any tired outer leaves from the romaine, then quarter each head vertically. Place on a large platter and drizzle cut sides with a little of the dressing. Grill romaine close to the heat source, turning clusters of leaves and any individual leaves so they wilt a little and become lightly charred. Remove. Place bread on grill and sear to toast. Remove. Place chicken on grill and cook, turning a few times and basting with the marinade until cooked through, about 15 minutes. It's best to grill chicken away from the source of heat so it does not char.
  • Coarsely shred romaine onto a large rimmed platter. Dice toasted bread and add it, along with the egg whites. Drizzle with about half the dressing. Slice the chicken about 1/2-inch thick, arrange it over the romaine and drizzle with the remaining dressing. Serve warm.

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb boneless skinless chicken breast, cut into 3/4- to 1-inch cubes
1 1/4 cups caesar salad dressing, store-bought or homemade to taste, divided use
4 ounces country bread, cut into 1- to 1 1/4-inch cubes
3 tablespoons garlic-flavored olive oil or 3 tablespoons olive oil
8 cups romaine lettuce, ribbons (1-2 heads) or 8 cups a similar quantity of crisp whole small inner romaine leaves (1-2 heads)
freshly cracked pepper
curls parmesan cheese (made by scraping a vegetable peeler over a chunk of cheese)
4 metal skewers, preferably 8 to 10 inches long

Steps:

  • At least 1 hour ahead, or up to several hours before you plan to grill chicken, place chicken in a zippered plastic bag. Pour enough dressing over chicken to cover it, about 3/4 cup. Seal bag, toss back and forth to coat the chicken, and refrigerate.
  • When ready to grill, drain chicken, discard dressing in bag, and let chicken sit uncovered at room temperature about 20 minutes.
  • Fire up the grill, bringing heat to medium. Brush bread cubes with garlic oil and skewer them more or less intermittently with chicken cubes.

  • Toss the romaine with enough dressing to moisten it thoroughly, then divide it among 4 plates.
  • Place a chicken Caesar skewer on each plate, sprinkle with pepper to taste and Parmesan curls, and serve immediately.
