Grilled Sun-Dried Tomato Stuffed Chicken Breasts image

4 skinless, boneless chicken breasts (about 8 ounces each)
1/4 cup chopped sun-dried tomatoes, plus 3 tablespoons oil from the jar
2 cloves garlic, thinly sliced
Kosher salt and freshly ground pepper
1 zucchini, thinly sliced
4 ounces smoked mozzarella, thinly sliced
12 large basil leaves
Vegetable oil, for the grill

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the garlic-tomato oil: Mix the sun-dried tomato oil and garlic in a bowl; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with half of the garlic-tomato oil; top with the zucchini, chopped sun-dried tomatoes, mozzarella and basil, leaving a 1-inch border around the edges. Roll up the chicken toward the pointy end; tie with 3 pieces of kitchen twine. Brush with the remaining garlic-tomato oil.
  • Brush the grill grates with vegetable oil. Grill the chicken breasts, turning, until cooked through, 18 to 20 minutes. Transfer to a cutting board and let rest 5 minutes, then remove the twine and slice.

Steps:

  • For the Fresh Tomato Salsa, mix first 7 ingredients in medium bowl. Cover. Refrigerate until ready to serve.
  • For the Chicken, mix, oil, lime juice and water in small bowl. Reserve 2 tablespoons marinade for brushing. Place chicken in large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well.
  • Refrigerate 15 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.

2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon canola oil

TOMATO-PINEAPPLE SALSA:
4 plum tomatoes, chopped

1 jalapeno pepper, seeded and finely chopped

Steps:

Such simplicity in this grilled chicken and sun dried tomatoes. It's a taste of Tuscany where I was when I first created this recipe!

Number Of Ingredients 7

2 large chicken breasts
1/4 cup extra virgin olive oil, divided
Sea Salt, to taste
Coarse Ground Pepper, to taste
1/2 cup sliced sun dried tomatoes in oil
2 tsp. Balsamic vinegar, divided
1 cup fresh arugula

Steps:

  • Over medium high heat in a grill pan, pour half the olive oil and one teaspoon of balsamic. Salt and pepper the chicken breasts well on both sides. Put in the hot oil and sear on each side about 3 minutes to each to get a golden brown and markings. Reduce heat to medium low and continue cooking about five minutes per side. When done (165 temperature), remove to a plate. Let rest. Deglaze the skillet with about 1/4 cup of water. Increase heat to medium high and add sun dried tomatoes with oil. Stir and cook about 7 minutes. Slice the chicken at an angle. Drizzle with remaining olive oil. Cover with sun-dried tomatoes, remaining balsamic vinegar and au jus from skillet. Serve immediately.

In the summer you just can't beat grilled chicken. This fresh salsa is a wonderful accompaniment and a perfect go with for those hot summer nights, when your garden is bursting to the seams with all those lovely tomatoes. Recipe is easily doubled or tripled for larger groups.

8 ounces small cherry tomatoes or 8 ounces yellow cherry tomatoes, halved or quartered,depending on size
2 tablespoons chopped drained sun-dried tomatoes packed in oil
2 teaspoons drained capers, roughly chopped if large
1/2 teaspoon minced garlic
1 tablespoon sherry wine vinegar
2 teaspoons lightly chjopped fresh thyme leaves, plus
fresh thyme sprig (to garnish) (optional)
3 tablespoons extra virgin olive oil, plus
2 teaspoons extra virgin olive oil
salt & freshly ground black pepper
2 (6 ounce) boneless skinless chicken breast halves, rinsed and patted dry,tenderloins removed,and butterflied

Steps:

  • In a small bowl, combine the cherry tomatoes, sun dried tomatoes, capers, garlic, sherry vinegar, 1 tsp of the thyme, 3 TBS of the olive oil, 1/4 tsp salt and a few grinds of pepper.
  • Set aside, stirring occasionally to let the flavours combine.
  • Heat a gas grill to high.
  • Put the chicken in a shallow pan or plate.
  • Rub the chicken all over with the salt (about 1/2 tsp per piece), a few grinds of pepper, and the remaining 1 tsp thyme.
  • Drizzle 1/2 teaspoons olive oil over each side of each pice of chicken and rub all over.
  • Lay the butterflied breasts on the hot grill grates and cook, covered until the chicken has grill marks,about1 1/2 minutes.
  • Flip the breasts and cook the second side in the same way for for a little less time, grilling for 1 minute in one direction, and 1 minute in another, until cooked through.
  • Transfer the breasts to two warm serving plates, stir the tomato mixture and spoon equal amounts over each piece of chicken, garnishing with a sprig of thyme if you like.

1/2 cup sun-dried tomato, chopped
1 cup chicken broth
1 cup fresh mushrooms, sliced
2 green onions, chopped
2 garlic cloves, minced
2 tablespoons chicken broth
1 teaspoon olive oil
4 skinless chicken breasts, pounded flat
2 garlic cloves, minced
1 teaspoon unflavored meat tenderizer
1/2 teaspoon pepper
2 cups skim milk
2 tablespoons cornstarch
2 teaspoons dried basil
1 lb pasta, cooked

Steps:

  • Soak sun dried tomatoes in 1 cup chicken broth for 30 minutes.
  • Cook the mushrooms, onion and 2 cloves of garlic in 2 Tbsp of chicken broth for 3 minutes. Set aside.
  • Cook chicken and other 2 cloves of garlic in olive oil over medium heat until brown on both sides, sprinkling with meat tenderizer and pepper. Add the tomato mixture and simmer over low heat for 10 minutes. Remove chicken from the skillet, slice into thin strips and keep warm.
  • Add pasta to boiling water so it will cook while the chicken is simmering.
  • Combine the milk, cornstarch and basil. Add to the tomato mixture. Boil and stir for one minute. Stir in the chicken and mushroom mixture.
  • Sauce can be served over the pasta, or stir the pasta right in with the sauce.

1/4 cup chopped dry-packed sun-dried tomatoes
1/2 cup sliced fresh mushrooms
1 green onion, thinly sliced

4 boneless skinless chicken breast halves (4 ounces each)
1 teaspoon olive oil
2 teaspoons cornstarch
1/2 teaspoon dried basil

Steps:

  • Bring 1/2 cup broth to a boil; remove from the heat. Stir in sun-dried tomatoes; let stand for 10 minutes. 1 teaspoon Italian seasoning
4 boneless skinless chicken breasts (about 1 lb)

1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In large reasealable food storage plastic bag, mix dressing and 1 teaspoon Italian seasoning.
