CHEESY BACON AND LEEK TOAST

- Cook the bacon in a medium nonstick skillet over medium-high heat, stirring occasionally, until crisp, 6 to 8 minutes. Set aside 1 1/2 teaspoons of the drippings. Add the leek to the skillet with the bacon and cook until softened, 3 minutes. Season with salt and pepper and set aside.
- Combine the milk, 1 tablespoon butter and the mustard powder in a medium saucepan over medium heat and stir until the butter melts. Gradually add the cheese; whisk until melted and smooth but do not boil. (The sauce may look separated.) Add the egg yolks and cook, whisking, until slightly thickened, 3 to 5 minutes. Remove from the heat and stir in the Worcestershire sauce; season with salt and pepper.
- Toast the bread and spread with the remaining 1 tablespoon butter; cut in half. Top with the bacon-leek mixture, then cover with the cheese sauce. Toss the watercress with the vinegar and the reserved drippings (rewarm if needed); season with salt and pepper. Serve with the toast.

GRILLED CHEESE LEEK TOAST

Steps:
- Heat the butter in a large non-stick frying pan over medium heat.
- Add the leek and cook for 5-8 minutes or until soft and brown. Set aside.
- Melt the extra butter in a saucepan over low heat. Add the flour and cook, stirring, for 3-5 minutes or until light golden.
- Gradually whisk in the milk and cook for 30 seconds or until thickened.
- Whisk in the ale, Worcestershire sauce, mustard, cheddar, egg yolks, salt and pepper and cook, stirring, for 3-5 minutes or until thickened slightly.
- Top half of the bread with half of the leeks, then the remaining bread and leeks and the cheese mixture.
- Grill (broil) under a preheated hot grill for 1-2 minutes or until golden.

- Trim and discard dark green portions of leeks. Brush leeks with oil; sprinkle with 1/4 teaspoon salt and pepper. Grill leeks, covered, over medium-high heat until lightly charred and tender, 8-10 minutes, turning occasionally. Cool slightly; chop leeks., In a small bowl, combine sour cream, Worcestershire sauce and remaining salt; stir in leeks. Refrigerate, covered, 2 hours before serving. Serve with vegetables.

Steps:
- Lay bread slices on counter.
- Divide mustard equally among slices; spread evenly with knife.
- Place 2 slices of cheese on 2 of the bread slices; cover with remaining slices of bread, mustard side down.
- Press together lightly.
- Break eggs into bowl; whisk until yolk and white are blended.
- Whisk in milk, salt and pepper.
- Lay 1 sandwich in egg mixture.
- Using both lifters, one under and one on top, turn sandwich to soak both sides.
- Place on sheet of waxed paper.
- Repeat with second sandwich, letting it soak up all the remaining egg mixture.
- Place skillet over medium heat; add butter and oil, swirling to coat surface.
- Lay sandwiches in skillet; cook for about 3 minutes or until golden brown underneath.
- Using both lifters, one under and one on top, turn each sandwich.
- Cook for about 3 minutes longer or until golden brown underneath and cheese is melted and oozy.

- Melt 1 tablespoon of the butter in a cast iron (or other heavy) skillet over medium heat. Sauté the leeks in the butter with a pinch of salt for about 1 minute, until starting to soften. Add 1/4 cup of water, stir, and allow to continue to cook for about 5 minutes, or until leeks are very soft and water has evaporated, with almost a melted texture, adding more water if necessary and stirring occasionally as they cook.
- Meanwhile, use the remaining 3 tablespoons of butter to spread on one side of each piece of bread. Place four of the slices butter-side-down on a cutting board or plate.
- In a small bowl, mix together the mayonnaise (1/4 cup) and the grated gruyere cheese (1.5 cups), along with the cooked leeks. Season to taste with salt and pepper.
