GARLIC MUSHROOM GRILLED CHEESE
Steps:
- Heat a large frying pan over medium-high heat. Add the butter to the pan then add the mushrooms.
- Allow the mushrooms to fry until golden brown then add the garlic, chilli and oregano. Allow to cook for another minute then season with salt, pepper and lemon juice. Remove from the heat and set aside.
- To assemble the sandwiches, mix the mozzarella with the cheddar. Divide the cheese between four slices of bread. Top with mushrooms and sandwich with the remaining slices of bread. Generously butter both sides of the sandwich .
- Preheat a non-stick pan over medium heat. Add the sandwiches and cook until the cheese has melted and the sandwiches are golden brown and crisp on both sides.
- Remove from the pan, slice and serve.

I'm a garlic fanatic. So one day I decided to make garlic bread, and make it into a cheese sandwich. Hence garlic grilled cheese! Really yummy!

Steps:
- Heat oven to broil.
- Spread butter on the slices of bread.
- Sprinkle garlic salt on the buttered bread slices.
- Places slices without a cookie sheet, in the oven, buttered side up.
- Check periodically after 2 minutes (these can burn easily), and when its toasted to your liking, flip the bread and place a slice of cheese on each slice of bread.
- Leave oven open so that you can see the cheese melt (this happens in a matter of seconds).
- Take out of oven, press two slices together and voila, garlicky grilled cheese! Enjoy with soup, or some pasta!

GARLIC GRILLED CHEESE
Ahhh... Gaaahlic! Who doesn't love it? I was making a variation of the Potato Chip Chicken recipe and melted a bit too much margarine. So I stuck it in the fridge and made this grilled cheese the next day. I'll never make plain grilled cheese again!

Steps:
- The measurements on the margarine are approximate since I made a large portion of the garlic margarine and keep it in the fridge.
- Put garlic salt and margarine in small saucepan or microwave-safe bowl and melt.
- Place in refrigerator to cool to a semi-solid state.
- Pour off any liquid that settles on the top.
- Use the garlic margarine mixture to butter one side of each slice of bread and place buttered side down on a griddle.
- Place cheese on top of one piece of bread.
- Cook until browned on bottom (bread is usually ready when the cheese is good and melted).
- Slap the two pieces together and Enjoy!

- Heat a flat skillet on the stove over medium heat. Spread butter on one side of each slice of bread. Divide the parmesan cheese evenly among the slices, patting into the buttered side of each slice of bread.
- Place two bread slices, buttered side down, on the hot skillet. Place 1-2 slices of each cheese on the bread slices and then place the remaining slices of buttered bread on top (the buttered side facing up). As the bottom side of the sandwich turns golden brown and cheese begins to melt (approximately 3-4 minutes) flip the sandwiches and cook until the next side is golden brown and cheese is completely melted. Serve immediately.
