Grilled shrimp tossed in Buffalo sauce are delish dipped in a blue cheese-ranch sauce made with Greek yogurt.

24 large/jumbo shrimp
deveined and tails-on
½ lemon
Salt and pepper
2 teaspoons pimenton or smoked paprika
2/3 palmful
2 tablespoons extra-virgin olive oil (EVOO)
4 large bay leaves
Metal skewers
Non-aerosol cooking spray
4 tablespoons butter
4 large cloves garlic
finely chopped or grated
½ cup cayenne pepper sauce (Rach's go-to is Frank's)
Celery sticks
for dipping
Carrot sticks
for dipping
Sweet red pepper strips
for dipping
1 cup Greek yogurt
1 clove garlic
grated or pasted
½ cup finely crumbled blue cheese
½ cup chopped chives
parsley and dill
½ lemon
juiced

Steps:

  • For the buffalo shrimp, preheat outdoor grill or a grill pan over medium-high heat
  • Combine shrimp with juice of ½ lemon, salt, pepper, pimenton and EVOO, then thread them onto 2 parallel skewers to secure them from spinning during the grill process
  • I skewer each shrimp near the tail-end with one skewer and then near the front of each shrimp on a parallel, separate rod or skewer
  • Thread bay leaves every few shrimp
  • About 12 shrimp should fit on each double-skewer set-up
  • For the dip, combine yogurt, garlic, cheese, herbs, and lemon juice in a small bowl
  • Transfer to a serving dish
  • Spray grill or grill pan and cook shrimp 6 minutes or until charred at edges and cooked through
  • Remove from grill or grill pan
  • Melt butter in large skillet over medium heat, add garlic and swirl a minute or 2, then add hot sauce
  • Add shrimp, sliding off skewers into pan and discarding bay leaves, then turn in sauce for a minute
  • Arrange on platter with cut celery, carrots and peppers
  • Serve dip alongside

2 Tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon freshly cracked black pepper
1/2 stick unsalted butter, melted
1/4 cup Frank's RedHot Sauce
Blue cheese dressing, for serving
Celery sticks, for serving

Steps:

  • Preheat the grill to medium, or alternately, preheat a grill pan over medium heat.
  • Toss the shrimp in a large bowl with the olive oil, salt and pepper.
  • Combine the melted butter and hot sauce in a separate large bowl. Set aside.
  • Grill the shrimp for 2-4 minutes on each side, depending on how large they are, and then transfer them immediately to the bowl containing the sauce. Toss to coat well.
  • Serve the shrimp with blue cheese dressing and celery sticks.

2 lbs large raw shrimp, devined and peeled with tails on
4 tablespoons dark brown sugar
4 tablespoons onions, chopped
6 tablespoons apple cider vinegar
4 tablespoons water
4 tablespoons ketchup
2 tablespoons Worcestershire sauce
4 -6 tablespoons hot sauce
1/2 teaspoon black pepper
2 garlic cloves, chopped

Steps:

  • Place shrimp in resealable plastic bag and refrigerate.
  • Combine next nine ingredients in blender. Blend until smooth.
  • Cook mixture over medium-low heat for 10 minutes. Allow to cool.
  • Pour into the resealable bag with shrimp and allow to marinate in refrigerator for at least 30 minutes turning shrimp occasionally.
  • Remove shrimp from marinade and reserve the marinade.
  • Coat grill topper or basket (basket makes it much easier to turn shrimp) with non-stick spray.
  • Grill for 3 minutes on high heat. Turn shrimp and baste with marinade. Cook an additional 3 minutes or until done.
  • Serve with Bleu Cheese or Ranch dressing.

3 cloves garlic, finely chopped

Steps:

  • Preheat a grill or grill pan to medium-high heat.
  • In a medium saucepan add the butter, hot sauce and chili powder over medium-high heat. Once the butter melts, add the garlic and vinegar, and saute until it sizzles and is fragrant, about 3 minutes. Remove from the heat. Reserve a few tablespoons of the sauce for a later use.
  • Stick 3 shrimp on each skewer. Sprinkle the shrimp with salt and pepper on both sides. Place the shrimp on the grill and cook for 3 to 4 minutes on each side, basting with the sauce the last few minutes of grilling.
  • Remove the shrimp to a platter and drizzle the reserved sauce over the skewers. Serve the shrimp skewers with carrots, celery sticks and creamy blue cheese dressing.

1 teaspoon grated lemon zest, from 1 large lemon
4 cloves garlic, smashed and coarsely chopped

Steps:

  • For the sauce: Heat a small saucepan over medium heat. Add the olive oil and shallots and saute for about two minutes. Add the cumin and smoked paprika and continue to cook, stirring, for one minute more. Add the cream and salt, reduce the heat to low, and simmer for about 5 minutes, until slightly thickened. Whisk in the goat cheese, a little at a time, until fully incorporated and smooth. Remove from the heat and let cool for 5 minutes before stirring in the chives and parsley.
  • For the shrimp: In a medium bowl, toss the shrimp with the 1/4 cup hot sauce and the olive oil, lemon zest and garlic. Cover with plastic wrap and let sit at room temperature for 15 minutes.
  • Preheat a grill or grill pan to medium-high heat. Sprinkle the shrimp with the salt and grill for 2 to 3 minutes per side, or until opaque at the center. Remove to a clean bowl and toss with the remaining 2 tablespoons hot sauce. Serve with the goat cheese dipping sauce.

Steps:

  • Grease 2 baking sheets with cooking spray.
  • Run a sharp knife along each shrimp's back and open slightly. Place shrimp in a large bowl of cold water.

2 tablespoons Creole-style seasoning
1 tablespoon garlic powder

1 teaspoon onion powder

1 pound large shrimp, peeled and deveined with tails attached
4 cups oil for frying
4 cloves garlic, minced
2 ½ tablespoons butter
6 ounces hot pepper sauce
1 teaspoon ground cayenne pepper

Steps:

  • In a large resealable plastic bag, combine the flour, Creole-style seasoning, garlic powder, ground cayenne pepper, onion powder, and ground black pepper. Seal the bag and shake a few times to combine the ingredients well.
  • Rinse the shrimp under cold water and place them in the plastic bag with the flour mixture. Seal the bag and shake to coat all of the shrimp well with the flour mixture.
  • Place the coated shrimp on a cookie sheet and place in the refrigerator for 15 to 20 minutes. Save remaining flour mixture in the bag.
  • In a mixing bowl, whisk together garlic, butter hot sauce and cayenne pepper; set aside. In a pot, heat the oil to 375 degrees F (190 degrees C).
  • Remove shrimp from refrigerator and shake a second time in flour mixture.
  • Place the shrimp in hot oil and fry until pink, about 2 to 3 minutes. Immediately coat with buffalo sauce.
