BRIE GRILLED CHEESE
This easy Brie grilled cheese sandwich is filled with sliced Brie and sweet jam, and makes a perfect companion for a bowl of tomato soup.Serving size is for 1/2 sandwich. Pair with tomato soup for lunch or dinner.

Steps:
- Pre-heat a small pan over medium heat. Melt half the butter in the pan.
- While the pan heats up, add the Brie and jam to a slice of bread, and top with the remaining slice.
- Set sandwich in the hot pan, and cook about 2 minutes. Flip, add the remaining butter, and cook until golden.
- Cut in half and serve immediately.

This grilled Brie and pear sandwich is dedicated to National Grilled Cheese Sandwich Day, which happens every April 12, thanks mostly to bored food bloggers and cheese-industry marketing cartels. I'm looking at you, Wisconsin.

Steps:
- Generously butter one side of each slice of bread.
- Heat a skillet over medium heat.
- Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
- Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
- Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.

- Butter all the bread slices on one side only. Put them all, buttered side down, on a cutting board. Spread four of the slices with a thin layer of jam (about 2 teaspoons per slice). Spread the cheese on the other four slices. Pair the jam slices with the cheese slices.
- Heat a large nonstick pan or griddle over medium-high heat for 2 minutes. Put as many sandwiches as will fit in the pan or on the-griddle without crowding, cover and cook until the cheese has just begun to melt and the bread is golden brown, about 2 minutes. Remove the lid and turn the sandwiches, pressing each one firmly with a spatula to flatten it slightly. Cook the sandwiches uncovered until the bottom is golden brown, about 1 minute. Turn them once more and press with the spatula again to recrisp the bread, about 30 seconds. Cut the sandwiches in halves or quarters and serve immediately.

GRILLED BRIE, FIG AND PROSCIUTTO SANDWICHES
This queen of grilled cheese sandwiches comes from the March 07 Every Day With Rachael Ray magazine. The gooey brie, salty prosciutto and sweet figs are the perfect combination! Rachael suggests serving these sandwiches with sweet potato fries.

Steps:
- Spread the fig preserves onto 4 slices of bread.
- Cut the Brie into 8 long, thin slices.
- Lay 2 slices of Brie over the preserves. (I have also used creme de brie since I don't really care for the rind of Brie. If you go this route you can just spread the creme de Brie over the other slices of bread.).
- Arrange the prosciutto over the Brie.
- Top with the remaining 4 slices of bread.
- Spread half of the butter over the tops of the sandwiches and invert onto a hot skillet or pan.
- Spread the remaining butter on the other side of the sandwiches.
- Cook on the stove or in the oven, turning the sandwiches over once or twice, until the bread is golden brown and the Brie is melted.
- Cut in half to serve.

- Assemble the sandwiches by layering the ham, brie cheese, apricot preserves, and mustard in equal amounts on two pieces of bread, topping with the remaining two slices of bread. Brush the top of each sandwich with olive oil.
- Heat a grill pan over medium heat. Once the pan is hot, lie the sandwiches, oiled side down, in the pan. Brush the top of each sandwich with oil. Cook each side until the bread is golden brown, about 3 minutes per side.
