POACHED APRICOT HALVES
Poaching apricots takes little time. If you continue to simmer apricots in their poaching liquid, you'll have the start of a very easy jam; it will set without additives because of the fruit's natural pectin. Use this recipe to fill hand pies, top cheesecake, or amp up panna cotta.

Steps:
- In a 4-to-5-quart pot over medium heat, combine 4 cups water with sugar, lemon peel, ginger, cardamom, and vanilla scrapings. Bring mixture to a boil. Cook until sugar dissolves, and then reduce the heat to low. Simmer, uncovered, until the liquid has thickened slightly, about 10 minutes.
- Add apricots to pan. Rinse a double thickness of cheesecloth under cold water, and drape it over apricots so all the fruit is covered by the cloth and submerged in liquid.
- Continue simmering until apricots soften slightly, 2 to 4 minutes. Remove from heat, and let cool completely. Use immediately, or transfer apricots and poaching liquid to a storage container. Make sure the apricots are completely submerged in liquid. Refrigerate until ready to use, up to 4 days.
GRILLED APRICOTS WITH GOAT CHEESE

Steps:
- Preheat a grill to 500 degrees F, or high heat.
- Lay the apricots cut-side-down on the grill. Grill until the apricots have solid grill marks and release themselves easily from the grill, 3 to 4 minutes. If you try to remove them and they stick - let them be - they will release in time.
- Transfer the apricots to a platter cut-side-up. Top the apricots with spoonfuls of the goat cheese, sprinkle with pepper and garnish with torn rosemary leaves if using. Drizzle with olive oil and sprinkle with salt if using.
GRILLED APRICOTS WITH BITTERSWEET CHOCOLATE AND ALMONDS
Steps:
- Heat grill to high. Brush apricots with oil and grill, cut side down, until golden brown, about 1 1/2 minutes. Turn over and continue grilling for 1 minute. Transfer to a serving plate and drizzle with melted chocolate and almonds.
STICKY GRILLED CHICKEN
Steps:
- Cook garlic, ginger, spices, and 1 tsp. kosher salt in oil in a small saucepan over medium heat, stirring, until fragrant, about 1 minute. Add pomegranate juice and boil until reduced to 1 cup, 12 to 19 minutes. Remove from heat, and then add jam and molasses and stir until jam has melted. Cool (it will thicken slightly). Transfer 3/4 cup sauce to a bowl and reserve for serving.
- Prepare grill for indirect heat cooking over medium hot charcoal (medium heat for gas).
- Pat chicken dry and season all over with 4 tsp. kosher salt. Oil grill rack, then grill chicken (in batches if necessary) skin side down first, directly over coals (covered only if using gas grill), turning once, until browned, 4 to 5 minutes. Move to area with no coals underneath (or over turned off burner for gas) and brush with some of sauce. Continue to grill, partially covered for charcoal (covered for gas), turning and brushing with sauce occasionally, until cooked through and well-glazed, 7 to 8 minutes for breasts, 15 to 20 minutes for dark meat.
GRILLED APRICOT & BURRATA BOARD RECIPE BY TASTY
Here's what you need: apricots, burrata, serrano (jambon) ham, swiss chard, apricot preserve, orange juice, white balsamic vinegar, extra virgin olive oil, salt and pepper, balsamic glaze

Steps:
- Brush apricots with 1 tbsp olive oil, and grill apricots on both sides for about 2-3 minutes per side, or until nice grill marks are achieved. Let apricots cool.
- Whisk together apricot preserves, orange juice, white balsamic, 2 tbsp olive oil, and salt and pepper to taste.
- In a bowl, gently toss swiss chard, grilled apricots and vinaigrette. Set aside any leftover vinaigrette on the bottom of the bowl.
- On a medium cutting board or serving platter, add dressed swiss chard and apricots.
- Pull apart burrata and serrano ham into large chunks and place pieces throughout the board.
- Drizzle any leftover vinaigrette on top of the board and finish with balsamic glaze.
- Serve.

Steps:
- Cut apricots in half and remove pits, place in large bowl.
- Mix oil and lime juice together and season with salt and pepper, pour over apricots and toss gently.
- Place apricot halves, cut-side-up, on cookie sheets.
- Cut blue cheese into small pieces and place in the centre of each apricot.
- No more than one hour before serving place under preheated broil for one to two minutes or just until cheese softens.
