Greek Tortellini Salad image

If big, bold salads centered around cheesy carbs are your thing, then this tortellini salad inspired by Greek flavors will become your new best friend. The salad can be served warm, at room temperature or chilled, and it's best when made a day (or even two) in advance so the flavors get a chance to really join forces. Ready to make it a meal? Fold in shredded rotisserie chicken and you'll have a guaranteed dinner winner.

One 20-ounce package refrigerated tortellini (any variety)
2 cups halved cherry tomatoes
1 cup crumbled feta cheese
1/2 cup diced red onion
2/3 cup diced cucumbers
2/3 cup diced green bell peppers
1/3 cup sliced pitted kalamata olives
1/2 cup red wine vinegar
2 teaspoons minced garlic
2 teaspoons dried oregano
1 1/2 teaspoons sugar
1/2 cup extra-virgin olive oil

Steps:

  • For the pasta salad: Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package directions until al dente. Drain and transfer to a large serving bowl.
  • Add the remaining salad ingredients and toss to combine. Set aside.
  • For the dressing: In a medium bowl, whisk together the vinegar, garlic, oregano and sugar. Drizzle in the olive oil while whisking continuously until the dressing is well blended.
  • Add the dressing to the pasta salad and toss to combine. Serve right away or refrigerate for up to 2 days and serve cold or at room temperature.

A simple tortellini salad with veggies and a vinaigrette dressing. Simple, and tastes great warm or cold! I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like! This is great as a meal in itself or as a side dish.

1 (8 ounce) package frozen cheese tortellini
1/2 white onions or 1/2 red onion
1/2 green bell pepper
1 (4 1/4 ounce) can black olives
1 -2 cup crumbled feta or 1 -2 cup shredded mozzarella cheese
1/4 cup olive oil
1/4 cup red wine vinegar
salt & pepper

Steps:

  • Start by defrosting/cooking the cheese tortellini in a pot of boiling water. The tortellini are ready when they float in the water and are heated through. Move them to a colander to drain, and set aside.
  • Drain and coarsely chop the black olives (you can use pre-chopped olives to save time). Peel the onion, de-seed the pepper, and coarsely chop them as well.
  • Place chopped vegetables and cheese tortellini in a large bowl. Sprinkle desired amount of cheese (feta or mozzarella) and the olive oil and red wine vinegar over the vegetables and tortellini, and then toss it all together. If you are using mozzarella cheese, it will probably melt a bit, which is fine.
  • Give the salad a taste, and add salt and pepper as desired. You may also want to add more olive oil or vinegar, depending on your preference. You can eat the salad right away, warm, or save it for later and eat it cold. The flavors will meld and (in my opinion) get better with time, so make sure you make enough for leftovers!

1 (16 ounce) package refrigerated cheese tortellini
4 ounces sliced pepperoni, quartered
2 green onions, sliced
1 (2.25 ounce) can sliced black olives
1 (6.5 ounce) jar marinated artichoke hearts, drained and chopped
6 ounces mozzarella cheese, diced
⅓ cup extra-virgin olive oil
1 ½ tablespoons balsamic vinegar
1 ½ tablespoons distilled white vinegar
1 teaspoon dried Italian herb seasoning
salt and black pepper to taste

Steps:

  • Cook the tortellini according to package instructions, drain in a colander set in the sink, and rinse with cold water.
  • Place the tortellini, pepperoni, green onions, olives, artichoke hearts, and mozzarella cheese in a large salad bowl.
  • Whisk together the olive oil, balsamic vinegar, white vinegar, Italian seasonings, and salt and pepper in a bowl, and pour over the salad ingredients. Gently stir to combine, and refrigerate to chill before serving. For even better flavor, let chill in refrigerator for at least 2 hours before serving.

16 to 18 ounces refrigerated or frozen cheese tortellini
1 medium sweet red pepper, julienned
1 medium green pepper, julienned
3/4 cup sliced red onion
1/4 cup sliced ripe olives
1/2 cup olive oil
1/2 cup white wine vinegar
3 tablespoons minced fresh mint or 1 tablespoon dried mint flakes
3 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1 teaspoon garlic powder
1/2 teaspoon pepper
1/8 to 1/4 teaspoon crushed red pepper flakes
1/2 cup crumbled feta cheese

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, peppers, onion and olives. , In a jar with a tight-fitting lid, combine the oil, vinegar, mint, lemon juice, seasoned salt, garlic powder, pepper and pepper flakes; shake well. Pour over salad and toss to coat. Cover and refrigerate for at least 4 hours. Just before serving, sprinkle with feta cheese.

1 (6 ounce) package salami

Cheese-filled tortellini serve as a soft, plush base for this comforting pasta salad, which is studded with sweet sugar-snap peas and sliced fennel. The herb-flecked green goddess dressing is creamy and rich, with a tartly pungent edge from garlic and lemon juice. Like all pasta salads, this benefits from being made a few hours ahead, so the pasta can absorb most flavor from the dressing. But don't add the vegetables until just before serving so they maintain their crunch.

Fine sea salt, as needed
2 (9- to 10-ounce) packages cheese tortellini
1 fennel bulb with fronds, tough outer layers removed (see Note)
1 cup sour cream or plain full-fat Greek yogurt
1 packed cup basil leaves
2 tablespoons coarsely chopped chives
2 packed tablespoons parsley leaves
2 garlic cloves, peeled
3 scallions, white and green parts
1 tablespoon fresh lemon juice, plus more to taste
1/4 teaspoon black pepper, plus more for serving
2 tablespoons extra-virgin olive oil, plus more for drizzling
2/3 cup sliced sugar-snap peas
1 cup baby arugula

Steps:

  • In a pot of heavily salted water, cook the tortellini according to the package directions.
  • Make the dressing: While the water comes to a boil, chop enough of the fennel fronds to equal 1/4 cup. Put the fronds in a blender. Thinly slice enough of the fennel bulb for 3/4 cup, and set it aside. (Reserve any remaining fennel for another use.)
  • Add sour cream, basil, chives, parsley, garlic, 1 scallion, lemon juice, 1/2 teaspoon fine sea salt and 1/4 teaspoon black pepper to the blender with the fronds and purée until smooth. With the blender running, slowly drizzle in olive oil. Taste and add more salt or lemon juice, or both, if needed.
  • As soon as the tortellini is done, drain it well and put it in a large mixing bowl. Immediately, while it's still hot, toss in enough of the dressing to coat. Let pasta cool in the dressing, at least 20 minutes and up to 4 hours.
  • Thinly slice remaining 2 scallions and add to bowl with tortellini. Toss in sliced fennel and sugar-snap peas. Drizzle with more dressing, tossing if needed.
  • To serve, transfer to a serving bowl, gently toss in arugula, drizzle with more olive oil and grind more fresh pepper over.

1/2 cup plain yogurt
1 tablespoon finely chopped fresh dill

1 small garlic clove, finely chopped

2 teaspoons salt, plus more, to taste
1 large carrot, peeled
9 ounces fresh cheese-filled tortellini (about 2 cups)
1/4 lb green beans, ends trimmed, cut into 1-inch pieces
2 tablespoons milk
fresh ground pepper, to taste

Steps:

  • Set a large pot of water on to boil according to package directions.
  • Next, make the dressing, in a small bowl, using a wooden spoon, mix together the cream cheese, yogurt, dill, chives and garlic until smooth. Season with salt and pepper. Set the dressing aside.
  • Next, add pasta to water when it is boiling and cook according to package directions.
  • Meanwhile, shred the carrot set the shredded carrot aside.
  • When pasta has about 3 minutes to go add the green beans to the pot.
  • When the pasta has about 1 minute to go add the carrot to the pot.
  • Drain and Rinse the pasta and vegetables with cold water and drain well again.
  • Dump the drained pasta and vegetables into a serving bowl. Add the dressing and the milk. Gently toss the salad with the wooden spoon until well blended. Season with salt and pepper. Serve warm or chilled.

1 lb cheese tortellini (fresh or dried)
1/2 cup pecans
2 garlic cloves, smashed and peeled
1/2 cup fresh basil leaf
1/2 cup fresh parsley leaves
1/2 cup fresh mint leaves
1 teaspoon crushed red pepper flakes
1/2 cup shredded parmesan cheese
1/2 lemon, juice and zest of
1/2 cup extra virgin olive oil

Steps:

  • Prepare a large pot of salted boiling water, and a large bowl of ice water.
  • Blanch the green beans in the boiling water, 1-2 minutes. Remove the beans with a spider or tongs, and shock them in the large bowl of ice water to stop the cooking. Add the tortellini to the same pot of boiling water and cook according to the package instructions. Drain well and let cool.
  • Combine the pecans and garlic in the bowl of a food processor and pulse until chopped. Add basil, parsley, mint, red pepper flakes, Parmesan, salt, pepper and the lemon juice and zest, and pulse again until finely chopped. Drizzle in the olive oil while the motor is running, and blend until thoroughly combined(this makes a pesto).
  • Combine the green beans and tortellini in a serving bowl, and toss wit the pesto. Serve at room temperature and enjoy!
