- Cook the ravioli in a large pot of boiling salted water until just cooked through, about 5 minutes. Drain and put on a platter.
- Meanwhile, cook the butter in a heavy medium frying pan over medium-high heat until pale golden, about 4 minutes. Add the basil leaves and cook until lightly fried, about 2 minutes. Add the pine nuts. Pour over the cooked ravioli. Grate 1/2 teaspoon of nutmeg directly over ravioli. Sprinkle Parmesan over dish and serve.

- Bring a large pot of salted water to a boil. Add the ravioli and cook as the label directs. Reserve 1/2 cup of the cooking water, then drain the ravioli.
- Combine the butter, cream and peas in a large skillet and bring to a simmer over medium heat; cook 1 minute. Add the ravioli, cheese, nutmeg and a splash of the reserved cooking water to the skillet and toss. Add more cooking water to thin the sauce, if needed. Season with salt and pepper. Divide among bowls and top with the parsley.

- Force peas through the fine disk of a food mill into a bowl to remove skins.
- Cook shallot in oil in a small skillet over moderately low heat, stirring occasionally, until softened. Remove from heat and stir into pea puree with cheese and crumbs. Season filling with salt and pepper.
- Fill ravioli with a level teaspoon of filling in each. Transfer to a baking sheet lined with a dry kitchen towel. Ravioli may be made up to this point 1 day ahead, covered and refrigerated or they can be frozen.
- To make the sauce: Simmer the vinegar and wine over medium heat and reduce until it forms a light syrup (watch carefully toward the end as it tends to burn). Add the cream and reduce heat to low. Whisk in butter pieces one at a time, until emulsified. Add truffle oil, if using. Salt to taste. Set aside and keep warm until ravioli are cooked.
- Cook ravioli in a large pot of boiling salted water until al dente, 2 to 3 minutes, then drain. Toss with sauce then serve immediately.

- Cook ravioli according to package directions. In a large heavy saucepan, melt butter over medium heat. Heat 5-7 minutes or until golden brown, stirring constantly. Immediately stir in sage and salt; remove from heat., Drain ravioli, reserving 2 tablespoons pasta water. Add ravioli, pasta water and lemon juice to butter mixture; gently toss to coat. GREEN PEA SAUCE FOR RAVIOLI AND PASTA (VEGAN)
I took this from a recipe I saw on the Zaar, but jazzed it up a little. I was intrigued at how few ingredients it had but looked so elegant! But I decided to jazz it up a little with the addition of lemon, parsley, and pepper. Green onions are preferable but a small white onion or a shallot will do in a pinch. This is very easy and whips up fast!

- Put all the ingredients into a pot together and bring to a boil.
- Cook uncovered for 3-5 minutes, until the peas have turned tender. Fresh peas won't take long; if you're using REALLY frozen ones like I did you might at least 6-7 minutes.
- Puree in a blender or food processor until totally smooth; it will be a thin sauce. Can be eaten right away or chilled for future use. Keeps for about a week, but freezes well.

GIANT RAVIOLI WITH TRUFFLE BUTTER

- 1 Prepare the pasta. Then, mix together the ricotta and grated cheese, nutmeg, and salt and pepper to taste. Scrape the filling into a pastry bag fitted with a 1/2-inch tip or a heavy-duty plastic bag, cutting off one corner to create a 1/2-inch opening. 2 Keeping the remaining pasta covered, lay out one strip on a countertop. Fold the strip in half crosswise, then unfold to crease the center. Leaving a 1/2-inch border all around, pipe a circle of the cheese mixture on the pasta to one side of the crease. Separate one egg, setting the white aside for another use. Carefully drop the yolk into the center of the circle. Lightly brush around the cheese with cool water. Fold the other half of the pasta over the filling. With a fork, press the edges of the pasta together to seal. Repeat with the remaining pasta and filling. 3 Bring at least 2 quarts of water to a boil. Lower the heat until the water is simmering. Add salt to taste. Carefully place the ravioli in the water and cook just until the pasta is tender, about 3 minutes. 4 Spoon a little of the butter into each of 4 warm serving dishes. Remove the ravioli one at a time with a slotted spoon. Place a raviolo in each dish and spoon on the remaining butter. RAVIOLI VERDI WITH BUTTER, PARMESAN AND PEPPER
For these stunning green-on-green ravioli, stuff a verdant, spinach-packed dough (a modification covered in this basic fresh pasta recipe) with a sweet chard and onion filling. Shaping the ravioli will take some time, so solicit help from friends and family and form an assembly line to speed up the process. Then, set the table and make sure everyone is ready to eat before you drop the pasta in the pot and start the sauce. - Make the filling: Strip leaves away from chard, and dice the stems into 1/2-inch pieces. Set a large frying pan over medium-high heat. Add 3 tablespoons olive oil. When oil shimmers, add the onion, diced chard stems, and a pinch of salt. Reduce heat to medium and cook, stirring occasionally, for 12 to 14 minutes, until onions are tender and lightly golden.
- In the meantime, slice the chard leaves into 1-inch pieces. When the onions are tender, add the chard leaves to the onions, and cook, using tongs to turn the chard until it wilts. Season with salt. Continue cooking, stirring occasionally, for 9 to 10 minutes, until the chard is tender and sweet. Remove pan from heat and allow to cool to room temperature.
- Scrape chard into the bowl of a food processor, and add ricotta, Parmesan and nutmeg. Pulse to combine, stopping to scrape the sides of the bowl with a rubber spatula, until the chard is evenly, finely chopped. Taste and adjust salt as needed. Cover and refrigerate until ready to use.
- Make the pasta: Set a large pot filled with 5 quarts of water over high heat, cover, and bring to a boil. Add 6 tablespoons fine sea salt or 1/2 cup Diamond Crystal kosher salt.
- Place a sheet of pasta on your workspace and dust off any excess flour. Fold the sheet in half lengthwise to create a crease and unfold. Spoon tablespoonfuls of filling horizontally along the center of the pasta sheet, about an inch and a half apart.
- Using a spray bottle or damp pastry brush, very lightly moisten the entire strip. Lift the top edge of the pasta sheet and fold it down to meet the bottom edge, letting it drape loosely over the filling.
- Starting on one end, squeeze out air bubbles by pressing the dough around the filling with dry fingers (but don't press on the filling itself). Work toward other end. Press on the edges to seal completely.
- Using a fluted pasta cutter or a knife, trim the unfolded edges of the pasta, then cut between the mounds of filling to form the ravioli.
- Toss lightly with semolina flour, then lay out in a single layer on the second prepared baking sheet. Cover with a piece of parchment paper.
- Drop 32 ravioli into water and stir, keeping an eye on them. They should cook in about 3 to 4 minutes.
- Make the sauce while the pasta cooks: Set a large frying pan with curved edges over medium-high heat and add 3 tablespoons pasta water. (The starch in the pasta water helps this emulsion stay together.)
- Bring to a simmer, then reduce heat to medium-low and add butter a piece or two at a time while continuously swirling the pan.
- Keep swirling the pan until the butter melts and the sauce begins to thicken. Remove from heat and add Parmesan, black pepper, and salt. Swirl to combine, then taste and adjust salt as needed.
