PARMESAN GREEN ONION BREAD

Parmesan Green Onion Bread image

This bread is great for get-togethers because you can put it together ahead of time and throw it in the oven a half hour before dinner. It's so good that I usually have to double the recipe because it gets eaten so fast. I got this recipe from a Family Circle magazine about 20 years ago.

GREEN ONION SPOONBREAD

Green Onion Spoonbread image

Provided by Emeril Lagasse

Categories     side-dish

Time 1h20m

Yield 8 to 10 servings

Number Of Ingredients 14

1 cup, plus 3 tablespoons stone-ground cornmeal
1 cup whole milk, more if needed
2/3 cup heavy cream
3 tablespoons unsalted butter
2/3 cup buttermilk
1 teaspoon salt
1 teaspoon freshly ground black pepper
4 ounces sharp Cheddar cheese, grated
4 eggs, separated
1/4 cup finely chopped green onions, green and white parts
1 teaspoon chopped fresh thyme leaves
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons sugar

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9 by 13-inch baking dish with 1 tablespoon butter. Add 3 tablespoons cornmeal to the dish and tilt the dish to coat the bottom and sides with the cornmeal. Set the baking dish aside.
  • Combine the milk, cream, buttermilk, salt, and pepper in a medium saucepan, and bring just to a boil. Whisk in the 1 cup cornmeal and cook, stirring constantly, until the mixture thickens and has the consistency of grits, 1 to 2 minutes. Remove the saucepan from the heat and immediately transfer the mixture to a heatproof bowl. Stir in the cheese, and set the bowl aside until the mixture is lukewarm, stirring often to prevent a skin from forming on the top, 10 to 15 minutes.
  • In a small bowl, lightly beat the egg yolks. Then stir the yolks, green onions, thyme, baking soda, and baking powder into the cornmeal mixture.
  • Combine the egg whites and the sugar in a mixing bowl, and beat until stiff peaks form. Fold 1/3 of the whites into the cornmeal mixture to lighten it. Then gently fold in the remaining whites, taking care not to deflate the whites.
  • Transfer the mixture to the prepared baking dish, and bake until the spoonbread is puffed and golden brown on top, and a knife inserted into the center comes out clean, about 30 minutes. Serve immediately.

GREEN ONION BREAD

Green Onion Bread image

This bread is really different. The first time I made it I was confused about what type of onion, so I used green onions. (I don't think this is what I was suppose to use) Anyway, what a wonderful flavorful bread. "This light, tender white bread with a fresh onion flavor. Time 2h20m

Number Of Ingredients 10

7 to 7 1/2 c all purpose flour
2 pkg active dry yeast or quick rise yeast
1/2 c finely chopped whole green onions (about 7)
1/3 c sugar
2 tsp salt
2 c water
1/3 c shortening, i use butter flavor or butter
2 eggs
1 egg, slightly beaten
1 Tbsp water

Steps:

  • 1. In a large mixer bowl, combine 3 cups flour, yeast, onion, sugar and salt, mix well. In a saucepan, heat 2 cups water and shortening until very warm (120-130 degrees; shortening does not need to melt). Add to flour mixture. Add 2 eggs. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand, gradually stir in enough remaining flour to make a firm dough.
  • 2. Knead on floured surface, 5 to 8 minutes. Place in greased bowl, turning to grease top. Cover and let rise in warm place about 30 minutes (15 minutes for QUICK-RISE yeast).
  • 3. Punch down dough. Divide into 2 equal parts. On lightly floured surface, roll or pat each half to a 14 x 7-inch rectangle. Starting with the short side, roll up tightly, pressing dough into roll with each turn. Pinch edges and ends to seal. Place in greased 9x5-inch bread pans. Cover; let rise in a warm place about 40 minutes (20 minutes for quick rise).
  • 4. Oven: 375 degrees Combine 1 egg and 1 tbs water; brush loaves. The egg wash will make a shinny, crispy crust. With sharp knife, carefully make a slash 1/2 inch deep lengthwise down center of each loaf. Bake at 375 degrees for 35 to 40 minutes until golden brown. My oven: 30 min. Remove from pans; cool. Makes great sandwiches or sliced thick and grill for Texas toast.

ONION BREAD

Onion Bread image

This recipe originally came from the booklet that accompanied my bread machine. I've modified it a bit and it's my family's favorite bread. We use it for sandwiches, toasted with parmesean cheese for dinner and even just toasted with butter for breakfast!

Provided by Brieness79

Categories     Yeast Breads

Time 3h5m

Yield 2 pound loaf

Number Of Ingredients 9

1 1/4 cups water
2/3 cup chopped onion
4 -5 garlic cloves, chopped as finely as you prefer (optional)
4 tablespoons butter
4 cups flour
2 tablespoons sugar
4 teaspoons dry milk
2 teaspoons salt
2 teaspoons yeast

Steps:

  • Measure and add liquid ingredients to the bread pan.
  • Measure and add dry ingredients (except yeast) to the bread pan.
  • Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour into the well.
  • Close up bread machine.
  • Choose the "basic" setting that most machines have - it's the three hour setting on mine.
  • I always use the "light" crust color because the bread comes out quite a bit softer.

3 cups all-purpose flour
1 cup hot water
½ cup cold water
1 cup chopped scallions, or to taste
salt and ground black pepper to taste
¼ cup butter, softened
1 ½ teaspoons vegetable oil, or as needed

Steps:

  • Place flour in a bowl. Add hot water slowly in a steady stream, mixing well after each addition. Add cold water; mix until no dry spots remain. Knead dough lightly by hand until a ball is formed. Place dough in an oiled resealable plastic bag; seal the bag and let dough rest for 30 minutes.
  • Place scallions in a bowl; season with salt and pepper.
  • Roll dough out onto a floured work surface into a thin rectangle using a rolling pin. Spread butter all over; sprinkle evenly with salt and pepper. Spread scallions over the dough, leaving top edge of the dough empty. • Heat a nonstick saucepan with oil; cook pancakes until golden brown, about 3 minutes per side. Crush 2 sides of the pancakes with spoons or ladles until flaky.

ONION BREAD

Onion Bread image

This coarsely textured bread has the delicate flavor of onion. This is not a soft bread. It is crusty and hearty and slightly dry. Sliced, it is perfect for building those famous Dagwood sandwiches. This bread is good eaten in crusty slabs either plain or buttered along side hot soup or cool, crisp salad. It's the bread of choice in my house.

  • In a stand mixer, add all the ingredients of the dough expect butter, knead on low speed for 5-7 minutes.
  • Add softened butter in; continue kneading for another 7 to 10 minutes until you get a smooth, elastic and soft dough. transfer the dough out to a slightly floured board after 5 minutes and smash it against the operating board, grab it up and smash again. Repeat this process for 2-3 minutes and shape into a round ball. This can help to strong the gluten. Place in a large bowl and cover with a plastic wrapper and set aside until it is doubled in size. If you need help for this process, check milk bread.
  • Knead the dough again to remove the air inside and then further divide into 12 portions. Take one out, press down and roll out to a larger wrapper. Spread a thin layer of sweet Mayonnaise and then place 1 tablespoon of pork sung in. Wrapper well and then re-shape into a ball. Place it in a lined baking tray. Repeat to finish all the others.
