GREEN OAT PANCAKES FOR ST. PATRICK'S DAY

Green Oat Pancakes for St. Patrick's Day image

Here is a wholesome breakfast alternative for your St. Patrick's Day celebration. They are a little less fluffy pancake and a little more hearty goodness. These are based on Taste of Home's Brown Sugar Oatmeal Pancakes. I made them a little healthier. And green. We served with applesauce, strawberry simple syrup, powdered sugar, or maple syrup. You could also try molasses. Originally posted on my blog.

Number Of Ingredients 12

4 cups buttermilk
2 ½ cups old-fashioned oats
2 cups all-purpose flour
2 cups whole wheat flour
1 ⅓ cups brown sugar
1 tablespoon wheat germ
2 teaspoons baking soda
1 teaspoon ground cinnamon

  • Combine flours, brown sugar, wheat germ, baking soda, cinnamon, and salt in a large bowl.
  • Whisk eggs, applesauce, and green food coloring into the oats mixture. Add more green food coloring if desired. Stir in flour mixture until batter is just moistened.
  • Preheat the oven to 200 degrees F (95 degrees C).
  • Heat a lightly oiled griddle to 350 degrees F (175 degrees C). Pour batter onto the griddle using a 1/3 cup measure. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes.

GREEN PANCAKES

Green Pancakes image

Start St. Patrick's morning off right with a stack of lucky green pancakes. Use cookie cutters to make a fun shamrock shape the kids will love.

Provided by Leah Maroney

Categories     Breakfast     Brunch

Time 20m

Number Of Ingredients 10

1 1/4 cups flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 beaten egg
1 1/4 cups milk
2 tablespoons butter (melted)
1/2 teaspoon vanilla extract
Green food coloring
Garnish: whipped cream, maple syrup, cereal

Steps:

  • Gather the ingredients.
  • Whisk together the flour, sugar, baking powder, and salt until combined.
  • In a separate bowl or cup, whisk together the egg, melted butter, milk, and vanilla extract. If you've melted the butter in a dish, make sure to wait until it has cooled slightly before whisking in the egg and milk. If it's too hot, it could cook the egg.
  • Combine the wet and dry ingredients in the dry ingredient bowl and whisk together.
  • Add the green food coloring and whisk until it is completely combined with the batter. You want to add more green food coloring than you think you need. It will lighten up when it's been cooked.
  • Heat your griddle on high heat. Place your shamrock cookie cutter on the griddle. Grease the griddle and the cookie cutter, including the inside walls of the cutter. Then turn the heat down to low. It's very important to cook the pancakes on low heat.
  • Add the batter to the cookie cutter. Add a small amount to each leaf and the stem. The batter will pool into the gaps. You don't want to add too much batter or else it will take too long to set or will pool out from under the cookie cutter. It's fine if it pools out a little. You can always cut off the excess after they are completely done.
  • Allow the pancake to cook until it is completely set, about 2 minutes. Makes sure to cook on low heat so that the pancakes don't over-brown. It's all about low and slow. Gently remove the cookie cutter with a pair of tongs. Flip, and continue to finish cooking on the other side, about 30 seconds to a minute.
  • Serve your pancakes with whipped cream, drizzled frosting, or Lucky Charms marshmallows.

GREEN OAT PANCAKES FOR ST. PATRICK'S DAY FROM THE MORE WITH LESS MOM

GREEN OAT PANCAKES FOR ST. PATRICK'S DAY FROM THE MORE WITH LESS MOM image

Categories     Bread     Breakfast     Kid-Friendly     St. Patrick's Day

Yield 40 pancakes

Number Of Ingredients 12

4 cups buttermilk (or milk and vinegar)
2 1/2 cups old fashioned oats
2 cups flour
2 cups wheat flour
2 teaspoons baking soda
2 teaspoons salt
1 teaspoon cinnamon (optional)
1 tablespoon wheat germ (optional)
1 1/3 cups brown sugar
4 eggs
1/2 cup applesauce
10 drops green food coloring

Steps:

  • If you do not have buttermilk you can measure out 4 Tbl vinegar, add enough milk to make 4 c, and let that sit 5 minute Then soak your old fashioned oats in the buttermilk. You can use quick cooking oats and skip the soaking. If you soak for 5 minutes the texture will be a little different from a regular pancake, but your kids won't know there are oats in there. If you soak for 2-3 min you will still have an oaty texture to your pancakes that I like. If you want to make a simple syrup topping: Combine 1 c water, 1 c sugar, stir to dissolve sugar. Add 2 c chopped/sliced fruit (blueberries, strawberries, apples). Simmer about 10 min, while you are making your pancakes. Combine flours, baking soda, salt, cinnamon (optional, modify amount to taste), wheat germ (also optional, modify amount to taste), and brown sugar. You should be able to decrease the sugar but I did not try it. In another bowl mix egg, applesauce, food coloring, and buttermilk/oat mixture. You can see in the pictures the green I got from 10 drops, you may want to add more color. Stir wet into dry just until moistened. Pour by 1/3 cupful onto a greased hot griddle at 350 degrees. Turn when bubbles form on top. I found with this recipe they were often done when the first bubble popped. Cook until the second side is golden brown. I put my pancakes on a cookie sheet in a warm oven until they are all done. We served with applesauce, strawberry simple syrup, powdered sugar, or maple syrup. You could also try molasses.
