2 slices whole wheat bread
3 thin slices of sharp white cheddar*
3 thin slices of medium cheddar*
1 Tbsp. onion, (finely chopped)
1 - 2 pods roasted, peeled, green chile pepper* - (chopped)
Cooked turkey or chicken* (chopped or thinnly sliced)
Cilantro, (minced)
1/2 avocado, (sliced)
butter

Steps:

  • Prep all of your ingredients for assembly.
  • Heat up a cast iron griddle or skillet over medium low heat.
  • Place a touch of butter on the hot griddle. It should sizzle and melt. Place one slice of bread on the griddle to soak up the butter. Repeat with the other slice of bread.
  • On top of one slice of bread place the sharp cheddar, onion, green chile, cilantro, and avocado. On the other slice place the mild cheddar and turkey. Top with the second slice of bread, buttered side out.
  • When the cheese starts to melt, place the bread with the turkey (buttered side out) on top of the other slice.
  • Turn the heat up to medium and grill the sandwich on both sides until the bread is toasted and cheese is melted.

This is an easy, cheesy light lunch or dinner recipe. I made this with Tillamook cheddar and used sourdough bread and it was great. Adapted from Taste of Home.

4 slices bread
2 -4 tablespoons butter, softened
4 slices cheddar cheese
1 (4 ounce) can green chilies, drained

Steps:

  • Butter one side of all 4 slices of bread.
  • Top unbuttered sides of 2 slices of bread with one slice of cheddar each.
  • Sprinkle both slices with the chilies, then lay the other 2 slices of cheese on top of the chilies.
  • Top with last 2 slices of bread, buttered side out.
  • In a large skillet over medium heat, cook sandwiches on both sides until golden brown and cheese is melted.

4 poblano or Anaheim chiles (or you may use canned whole green chiles)
1/4 cup white vinegar
1/2 red onion, thinly sliced
1/4 cup mayonnaise
1/4 cup Dijon mustard
8 slices rye bread
12 slices provolone
2 ripe tomatoes, sliced
8 slices Cheddar
1/2 cup (1 stick) butter, softened

Steps:

  • Begin by roasting the chiles over the flame on your stovetop (or under the broiler) until the skin is totally blackened (if using fresh). When the chiles are totally charred, throw them into a plastic bag. Seal and allow them to steam and cool.
  • Next, pour the white vinegar over the sliced red onion and let them sit awhile. This'll take away a little of the crazy onion flavor and leave them with a nice sweetness.
  • Finally, make the special sauce: equal amounts of mayonnaise and Dijon. It's the simple things in life!
  • When you're ready to make the sandwiches, scrape the blackened skin off the chiles. Scrape out the seeds, too, so you'll wind up with big pieces of roasted green chiles.
  • For each sandwich, generously spread 2 pieces of rye bread with the special sauce. Lay on 2 slices of provolone, 2 slices of tomato, 2 slices of Cheddar... a nice layer of roasted green chiles... a few red onion slices... and one more slice of provolone just to hold it all together.
  • Top with the other slice of bread and spread the outsides with a good amount of butter.
  • Toast the sandwich in a skillet over medium-low heat until the cheese is thoroughly melted inside. Be careful not to burn the bread!

1 (4 ounce) can chopped green chilies, drained
2 tablespoons mayonnaise (I used light and it was fine)
1 tablespoon Dijon mustard
10 slices rye bread
5 slices swiss cheese
10 slices cooked beef
2 tablespoons butter, softened
salsa (optional)

Steps:

  • In a small bowl, combine chilies, mayo and mustard. Spread about 1 tablespoon on each side of each slice of bread.
  • Top five slices of bread with 1 slice of cheese, and 2 slices of beef. Cover with remaining bread.
  • Butter the outsides of the bread. In a skillet over medium heat, toast sandwiches for 4-5 minutes on each side or until bread is slightly browned and cheese is melted.
  • Serve with salsa if desired.

Roast Beef Sandwich With Green Chilies and Cheese image

This is my original sandwich, and is still my favorite. It features sliced sour dough bread, sliced roast beef, whole Ortega chilies, med cheddar and pepper jack, and you must use very juicy ripe tomatoes.

2 slices sourdough bread
2 ounces roast beef
1 whole Ortega chile
1 slice cheddar cheese
4 slices ripe tomatoes
1 slice monterey jack pepper cheese
2 tablespoons butter

Steps:

  • Lightly toast sourdough in toaster. (This will keep the sandwich crisp).
  • Lay the two slices of sourdough on a bread board, side by side.
  • On one side, place cheddar cheese, Ortega chilies and roast beef.
  • On other side, place Jack cheese, and tomato slices.
  • Both sides are loaded from the bread up.
  • Close Sandwich and cook in 1T butter on each side. Cook very slowly, so all fillings are warm and cheese is melted.

My mother found this recipe in a magazine years ago. We have since lost the recipe and just been slapping them together without one.

4 ounces diced green chilies, drained
1/2 cup mayonnaise
1/2 lb deli roast beef, sliced
1/4 lb swiss cheese, sliced
8 slices sourdough bread
margarine

Steps:

  • Mix mayonnaise and green chilies. Set aside.
  • Heat non-stick skillet over medium heat.
  • Butter one side bread. Spread mayonnaise mixture on second side of bread. Place butter side of four slices of bread in pan. Add one slice of cheese to each and split meat between sandwiches. Add a second slice of cheese and the remaining bread, butter side out.
  • Grill until golden brown and cheese starts to melt. Flip and repeat.
