Diced chiles and a chipotle-spiked mayonnaise give these juicy burgers a mild kick. Experiment with using fresh roasted chiles when they're in season and adjusting the amount according to how much heat you like.

1 pound lean ground beef
1 (4.0-ounce) can mild diced green chiles, drained
1/2 cup shredded sharp cheddar cheese
1/4 teaspoon fine sea salt
1 teaspoon extra-virgin olive oil
1/3 cup light mayonnaise
2 teaspoons adobo sauce from a can of chipotles in adobo
4 leaves lettuce
1 tomato, sliced
4 hamburger buns

Steps:

  • Prepare a grill for medium heat cooking.
  • Combine beef, chiles, cheddar and salt in a large bowl and form into four (4-inch) patties.
  • Brush with oil and grill, flipping once, until cooked to your liking, 8 to 10 minutes.
  • Meanwhile, stir adobo sauce into mayonnaise until blended and set aside.
  • Serve burgers on buns with lettuce, tomato and chipotle mayonnaise.

3 whole green chiles, such as Anaheim or Hatch
2 pounds ground beef
1 teaspoon salt
1/2 teaspoon pepper
6 slices slices sharp cheddar cheese
6 hamburger buns, split and toasted
Optional toppings: Lettuce leaves, sliced tomato, sliced onion, bacon and mayonnaise

Steps:

  • Grill peppers, covered, over high heat until all sides are blistered and blackened, 8-10 minutes, turning as needed. Immediately place peppers in a small bowl; let stand, covered, 20 minutes. Reduce grill temperature to medium heat., Meanwhile, in a large bowl, combine beef, salt and pepper; mix lightly but thoroughly. Shape into six 3/4-in.-thick patties., Peel off and discard charred skin from peppers. Cut peppers lengthwise in half; carefully remove stems and seeds. Cut into slices or coarsely chop. , Grill burgers, covered, over medium heat until a thermometer reads 160°, 5-7 minutes on each side. Top with cheese and chiles; grill, covered, until cheese is melted, 1-2 minutes longer. Top bun bottoms with burgers. If desired, serve with lettuce, tomato, onion, bacon and mayonnaise.

1/2 cup fresh jalapeno pepper, sliced with seeds
1/4 cup fresh gingerroot, peeled
3 fresh garlic cloves, peeled
1 cup fresh cilantro, roughly chopped (leaves and stems)
2 teaspoons kosher salt
1/8 teaspoon fresh ground black pepper
1 teaspoon curry powder
2 tablespoons olive oil
2 lbs ground beef (chuck)
1/2 cup sweet onion, chopped
1 fresh garlic clove, peeled
1 large avocado
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1/2 cup fresh cilantro, leaves only
1 large sweet onion
1 large red ripe tomato
1 head green leaf lettuce
6 hamburger buns with sesame seeds
1/4 cup olive oil

Steps:

  • Combine all of hot green chile paste ingredients in food processor and mix to a coarse paste. Do not overprocess.
  • In a large mixing bowl, combine green chili paste and ground chuck. Carefully distribute paste into meat, but do not over handle. Cover with plastic wrap and refrigerate.
  • To prepare cool green avocado cilantro sauce, begin by chopping onion and garlic in food processor. Cut avocado in half, remove pit and scoop flesh into processor. Add salt, black pepper, mayonnaise, and lemon juice; combine until smooth. Add cilantro leaves and briefly pulse. Place finished sauce into plastic bowl with lid. Press plastic wrap directly onto sauce, cover with lid and refrigerate until ready to assemble the burgers.
  • Remove meat from refrigerator. Use food scale to divide meat into six equal portions. Form meat into patties to fit the size of the hamburger buns. Wrap each patty in an aluminum foil packet and refrigerate until grill is ready.
  • Preheat gas grill to medium high.
  • Prepare toppings by slicing the onion and tomato into 6 medium slices, one slice of each per burger. Wash and dry lettuce leaves. Select six large leaves and chill until burger assembly.
  • Split buns and lightly brush insides with olive oil.
  • Remove patties from refrigerator and unwrap. Lightly brush grill with oil to prevent sticking. Grill patties for 5 minutes on one side and 3-4 minutes on second side for medium doneness.
  • During last few minutes of grilling, place buns with oiled side down and lightly toast on the grill.
  • Assemble burgers by generously spreading avocado sauce on the toasted sides of each bun, then place lettuce leaf on bottom bun, followed by meat patty, onion slice, tomato slice and top bun. Serve burgers.

1 1/2 lbs beef, Ground
1/4 cup onion, Finely Chopped, 1 sm
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
3/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1/4 teaspoon red pepper sauce
6 slices cheddar cheese (Each slice should be 2 X 2-inches.)
2 tablespoons green chilies, Canned, Chopped
1 dash red cayenne pepper

Steps:

  • Mix all the ingredients together except the cheese slices and chiles.
  • Shape the mixture into 12 thin patties, each about 3 1/2-inches in diameter.
  • Place 1 cheese slice and 1 tsp of the chiles on each of 6 patties.
  • Top with the remaining 6 patties sealing the edges firmly.
  • Broil or grill the patties 4-inches from the heat, turning once, until the desired doneness is reached, about 10 to 15 minutes.

1 zucchini, shredded
1/3 cup breadcrumbs
1 teaspoon chili powder
1/2 teaspoon cumin, ground
1 (4 ounce) can green chilies, drained and diced
1/3 cup cheddar cheese, fat-free and shredded
1/4 red onion, sliced
1 tomatoes, sliced
4 sandwich thins whole wheat

Steps:

  • Combine first 5 ingredients (turkey - cumin) in a bowl and then shape into 4 patties.
  • Spray skillet with Pam and set over medium heat. Add patties to skillet and cook until browned (5 min/each side).
  • While burgers are cooking combine the chilies and cheddar in a small bowl.
  • Top burger with cheese mixture and then reduce heat to low and cover skillet and cook until cheese melts (3-5 minutes).
  • Serve burgers on sandwich thins topped with onion and tomato or condiments of your choice (keeping in mind point count if following the WW program).
