This is one of those dishes that tradition has snatched. Most everyone has a green bean dish on the menu for the holidays. The almonds are a nice detour from the usual ingredients.

2 pounds fresh green beans, washed and trimmed
2 slices bacon
¼ cup sliced almonds

Steps:

  • Remove both ends of beans, break in half, and wash thoroughly.
  • Place in a large pot and add water 3 to 4 inches from the top. Add bacon and cook until tender.
  • Remove bacon from cooking water and discard. Remove beans and place in a large bowl, add almonds and toss. Serve Hot.

  • Blanch the green beans in a large pot of salted water until crisp tender, about 5 minutes. Transfer to a large plate to cool.
  • In a dry skillet, toast the almonds until lightly browned, about 3 minutes.
  • Meanwhile, melt the butter over medium heat in a separate skillet. Add the garlic and allow to sizzle about 1 minute.

This green bean recipe will become your new favorite side dish. Inspired by a classic French recipe (haricots verts amandine), these green beans feature buttery toasted almonds, tender shallot and a squeeze of lemon. Recipe yields 4 generous side servings; you can double the recipe by cooking it in a large Dutch oven.

2 tablespoons unsalted butter, sliced into several pieces
1/2 cup sliced almonds
1/4 cup thinly sliced shallot (about 1 small)
1 pound haricots verts or slender green beans, trimmed
2 teaspoons lemon juice, to taste
1 tablespoon + ½ cup water, divided
½ teaspoon fine salt, to taste
Freshly ground black pepper, to taste

Steps:

  • In a large skillet over medium-low heat, melt the butter. Once it's completely melted, add the almonds. Cook, stirring constantly with a heatproof spatula or wooden spoon, until the butter has browned and the almonds are beginning to brown, about 7 to 8 minutes. (Your patience will pay off, I promise!)
  • Add the shallot and cook, while stirring constantly, for 1 minute. Stir in the lemon juice and 1 tablespoon water. While stirring, cook until the liquid thickens enough that your spatula leaves an open trail on the pan behind it, about 1 more minute.
  • Use your spatula to scoop all the mixture into a bowl, and set it aside for now. Return the empty skillet to the stovetop, and add the green beans, ½ cup water and ½ teaspoon salt. Cover and cook over medium heat, stirring occasionally, until the beans are nearly tender, about 9 to 10 minutes.
  • Remove the lid and cook over medium-high heat until the liquid evaporates, about 2 to 4 minutes.
  • Off the heat, add the reserved almond mixture to the skillet and toss to combine. Season with salt and pepper, to taste, and serve. Leftover green beans will keep the fridge, covered, for about 4 days.

This year I am going to make them this way for Thanksgiving side dish instead of my usual green bean casserole with the soup, etc. This recipe came from Ocean Spray believe it or not, and the pictue.

1 1/4 lb fresh green beans
1/4 c sliced almonds

Steps:

  • 1. Place 1" of water and beans in a 3 quart saucepan. Bring to boil on medium-high heat then reduce to medium. Cover, cook until beans are crisp-tender. Around 6-10 minutes. Drain
  • 2. Melt butter in heavy skillet over medium-high heat. Add almonds and cook and stir until almonds are golden brown around one to two minutes.

My husband loves green beans, and mushrooms, and toasted almonds, so I thought I'd try to combine all three! I've made this for a couple different family get-togethers, and it goes over very well! I don't know measured portions, as I just put as much as I want and season to taste!

frozen green beans (or you could use fresh)
fresh mushrooms
slivered almonds
garlic pepper seasoning
2 tablespoons butter, approx
other seasoning, to your liking (sometimes I add Tabasco for a kick)

Steps:

  • Melt 1/2 of the butter on stove, add slivered almonds and continuously stir to toast.
  • They are done when their color has changed slightly.
  • Remove the almonds.
  • Melt the rest of the butter, and saute mushrooms with garlic pepper and other seasonings as you wish.
  • Meanwhile, cook green beans (I use frozen, so I cook them in the microwave while I'm sauteing).
  • Once the mushrooms are done, turn them down to low until the green beans are done.
  • Mix together the green beans, mushrooms, and slivered almonds, reserving a tablespoon or so to sprinkle on the top before serving.

2 small shallots , very finely sliced
3 garlic cloves , thinly sliced
squeeze lemon
2 tbsp toasted flaked almonds

Steps:

  • Cook green beans in boiling salted water until tender, then drain and cool under running water. Set aside.
  • Put olive oil, shallots, garlic cloves and some salt in a frying pan, then cook gently for about 8 mins until soft but not brown. Tip in the beans and a grind of pepper, toss well, then warm through. Finish with a squeeze of lemon and toasted flaked almonds.

The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

2 teaspoons cider vinegar
1 -2 tablespoon finely chopped shallot (or to taste)
2 -3 tablespoons olive oil

1/2-3/4 cup blue cheese, crumbled (or to taste)

  • In a small bowl whisk together mustard, vinegar, shallot and oil.
  • Prepare a bowl with ice water.
  • In a saucepan with a small amount of water, blanch/steam the beans until JUST firm-tender (about 3-4 minutes); drain through a colander, then immediately transfer to the bowl of ice water just for a couple of minutes to cool and keep the colour.
  • Remove the beans to a bowl and dry well patting with paper towels.

1 lb. fresh green beans (trimmed)
1 shallot bulb (about 5-6 cloves, peeled and thinly sliced)
1 Tablespoon olive oil
1 teaspoon fresh lemon juice
sea salt (to taste)
fresh ground pepper (to taste)
3 Tablespoons chopped fresh parsley
2 Tablespoons toasted almond slices

Steps:

  • Heat a large dry skillet over medium heat, add almond slices and cook until toasted, about 5-6 minutes or until almonds are golden. Remove almonds from skillet and set aside.
  • In the same skillet, add olive oil and heat over high heat until melted. Add in shallot slices, turn heat down to medium-low. Cover the skillet with a lid and cook shallots until caramelized, stirring frequently throughout the cooking process. This should take about 15 minutes and the shallots should turn golden brown in color.
  • Meanwhile, cook the green beans by bringing a saucepan of water with a pinch of sea salt to a boil. Once water is boiling, add in green beans and cook for about 3-4 minutes or until the beans are bight green in color and tender crisp.
  • Drain and transfer the beans into the skillet with the caramelized shallots. Toss to combine.
  • The oil and shallots will coat the beans. Add in chopped parsley and lemon juice. Season with sea salt and pepper. Heat for another 3-4 minutes or until beans are warm. Transfer beans to a large dish or platter, top with toasted almonds and serve.

1/4 cup Almonds (sliced)
1 package Italian style Green beans. frozen

Steps:

  • Gather all your ingredients.
  • Melt half the butter in a saute pan on low heat. Add the garlic and let the garlic cook for a few moments, until it is translucent, on low heat.
  • Add the almonds and coat them thoroughly. Let them brown slightly, but watch the garlic carefully that it does not burn. You may have to remove the garlic before the almonds are toasted properly.
  • Set aside, preferably til the next day.
  • Put the remaining butter in a pan and add the frozen green beans. Cook on medium/low heat, stirring constantly until the green beans are hot.
  • Toss in the reserved almonds. Add more butter if necessary. Season to taste.
