Coarse salt and ground pepper
2 pounds green beans (stem ends removed), halved crosswise
4 tablespoons butter
1 pound button mushrooms, stems trimmed, halved
2 shallots, sliced into 1/4-inch-thick rings

Steps:

  • Fill a large skillet with 1/2 inch water; bring to a boil, and salt generously. Prepare a large bowl of ice water.
  • Add green beans to skillet; cover, and steam until crisp-tender, 5 to 10 minutes (time will depend on size and freshness of green beans). Transfer to ice water to cool; drain and pat dry (if making ahead, cover and refrigerate up to 1 day). Wipe skillet dry.
  • In same skillet, heat butter over medium-high. Add mushrooms and shallots; season with salt and pepper. Cover, and cook, stirring occasionally, until mushrooms release their liquid, 3 to 5 minutes. Uncover, and continue to cook, tossing occasionally, until browned, 8 to 12 minutes more.
  • Add green beans; cook just to heat through, 1 to 2 minutes.

Adding soy sauce and sesame oil gives this dish a little Asian flare. Green beans are most vibrant when served fresh, but they do reheat well. You can use either fresh or frozen green beans in this recipe.

1 lb Green beans (fresh or frozen (trim them or buy pre-trimmed if they are fresh))
1 Tbsp olive oil
1 Tbsp unsalted butter
8 oz fresh button mushrooms (cleaned and sliced)
1 small onion (about 4 Tbsp diced)
1 Tbsp soy sauce
1 tsp sesame oil
Salt and Pepper to taste (if needed)

Steps:

  • If using frozen green beans, follow the stovetop cooking instructions on the package. If using fresh green beans trim the ends on all the green beans (this can be tedious) Or you can just buy pre-trimmed beans which are a bit spendier. Fill a medium pot 2/3 with water and bring to a rapid boil. Add beans and boil 6 to 7 minutes, until crisp-tender.
  • Drain beans immediately and rinse them with cold water to stop the cooking process, set beans aside.
  • Heat a large skillet over med/high heat. Add 1 Tbsp olive oil and 1 Tbsp butter. Add mushrooms and onions and saute until tender (3-5 min).
  • Add cooked beans to the skillet and drizzle with 1 Tbsp soy sauce and 1 tsp sesame oil. Sprinkle with salt and pepper if needed, then stir everything to combine. Saute an extra minute, and it's done!

6 tablespoons canola oil
1 pound haricot verts, cleaned and blanched
Kosher salt and fresh cracked pepper
2 cups sliced button and oyster mushrooms
1 shallot, sliced
2 cloves garlic, sliced
1 teaspoon chopped fresh rosemary
1 teaspoon chili flakes
Splash sherry vinegar
1 tablespoon thinly sliced fresh mint

Steps:

  • In a large saute pan, heat 3 tablespoons of the oil over medium-high heat. Add the haricot verts and season with salt and pepper. When they begin to brown, about 5 minutes, remove from the pan and add the remaining 3 tablespoons oil with the mushrooms. Brown the mushrooms, about 8 minutes, and then add the shallots, garlic, rosemary and chili flakes and cook until softened, about 3 minutes. Season with salt and pepper.
  • Return the beans to the pan and add the sherry vinegar. Stir in the mint and cook until just fragrant. Season as needed.

2 carrots, cut into thick strips
¼ cup butter
1 onion, sliced
½ pound fresh mushrooms, sliced
1 teaspoon salt
½ teaspoon seasoned salt
¼ teaspoon garlic salt
¼ teaspoon white pepper

Steps:

  • Place green beans and carrots in 1 inch of boiling water. Cover, and cook until tender but still firm. Drain.
  • Melt butter in a large skillet over medium heat. Saute onions and mushrooms until almost tender. Reduce heat, cover, and simmer 3 minutes. Stir in green beans, carrots, salt, seasoned salt, garlic salt, and white pepper. Cover, and cook for 5 minutes over medium heat.

1 pound fresh green beans, trimmed and cut into 1 inch pieces
1 tablespoon water
2 tablespoons olive oil
1/3 cup sliced shallots (about 2 medium)
3/4 pound assorted fresh mushrooms, (ie: button, baby bella, shiitake, oyster, chanterelle), sliced
Salt and freshly ground black pepper

Steps:

  • Put green beans in a microwave-safe bowl with the water. Cover tightly and microwave on high for 4 minutes. Carefully remove the cover, drain in a colander, shaking off any excess water, and set aside.
  • While the beans are cooking, heat the oil over medium-high heat in a large nonstick skillet. Add the shallots and cook, stirring, until softened slightly, about 2 minutes. Add the mushrooms and cook, stirring occasionally, until the water they release has evaporated and they begin to brown, about 10 minutes. Add the green beans and stir to combine and rewarm. 2 pounds green beans, stem end removed
2 tablespoons extra-virgin olive oil
3 garlic cloves, finely chopped
1/4 pound pancetta thinly sliced
1 tablespoons unsalted butter
4 to 5 small white button mushrooms, wiped of grit and sliced
2 tablespoons sour cream

Steps:

  • Bring a large pot of water to a boil; add a big pinch of salt and add the green beans. Cook for about 5 minutes, the beans should still be crisp as they will be cooked more in the pan with the pancetta and mushrooms. Drain them and set aside.
  • Heat the oil up in a saute pan and add the garlic and pancetta and cook until slightly crispy. Remove the pancetta from the pan and set aside. Add the butter to the fat that has rendered from the pancetta and saute the mushrooms until golden and crispy. Season with salt and pepper. Return the pancetta to the pan and add the blanched beans. Finish with the sour cream and bring to a gentle simmer to reduce and thicken a little and allow the flavours to marry. Give it a final taste and season with salt and pepper, if necessary, before serving.

1/2 lb fresh green beans
8 ounces fresh mushrooms, white or 8 ounces brown button mushrooms
1 tablespoon butter
1/4 teaspoon granulated garlic
1/4 teaspoon ground black pepper
1/4 teaspoon salt

Steps:

  • Bring 2 quarts of water to a rolling boil.
  • Wash the green beans and trim the ends and any blemishes.
  • Cook the beans in the boiling water for 2 minutes, drain, and rinse to stop the cooking process, set aside. You may do this up to an hour before hand.
  • Brush off the mushrooms, trim any dry ends of the mushroom stems.
  • Melt the butter in a large sauté pan over medium heat.

4 tablespoons unsalted butter (divided)
½ cup thinly sliced shallots
Kosher salt and freshly ground pepper (to taste)
1 teaspoon minced fresh thyme leaves
1 pound oyster mushrooms (or other mushrooms, trimmed and thickly sliced (or 2 pounds; see recipe intro and Note))
¼ cup Madeira
1 pound green beans or haricot verts (trimmed and halved crosswise)
¼ cup less-sodium vegetable or chicken broth

Steps:

  • In a large deep skillet, melt 2 tablespoons of the butter over medium heat. Add the shallots, season with salt and pepper and sauté for about 5 minutes, until golden brown and tender. Add the thyme and mushrooms and season again with salt and pepper. Sauté until the mushrooms are golden brown and tender, and any liquid that the mushrooms released has evaporated, about 8 minutes. Pour in the Madeira and sauté for another 2 minutes, until the Madeira has evaporated. Turn the mixture into a large bowl.
  • Carefully wipe out the skillet. Add the remaining 2 tablespoons butter and melt over medium-high heat. Add the green beans, season with salt and pepper, and sauté for 1 minute, then add the broth, cover the pan, and allow the beans to cook for another 3 minutes for regular green beans, 2 minutes for thinner haricot verts. Remove the lid, return the mushrooms to the pan, and sauté until the liquid has all evaporated and the beans are just crisp tender and the mushrooms have heated up again, another minute or two. Serve hot.

1 pound green beans
2 teaspoons cornstarch
1 tablespoon vegetable oil
2 teaspoons minced garlic
1/2 teaspoon salt
1 tablespoon oyster sauce
1/2 cup chicken broth

Steps:

  • Rinse the mushrooms in cold water and drain. Remove and discard the stems. Cut the caps into 1-inch strips. Rinse the green beans in cold water and drain. Snap off the ends. In a small bowl, mix the cornstarch and 2 teaspoons cold water.
  • Heat a wok over high heat. Add the vegetable oil and rotate the wok to coat the sides. Add the garlic, green beans, and salt and stir-fry for 1 minute. Add the mushrooms and continue to stir-fry until mixed. Stir in the oyster sauce. Stir in the chicken broth and heat to boiling. Stir in the cornstarch mixture; cook and stir until thickened, about 30 seconds. Turn off the heat and remove the green beans with tongs. ½ pound bacon, chopped into 1-inch pieces
4 ounces cremini mushrooms, sliced
1 medium onion, sliced

1 cup Marsala wine

Steps:

  • Place green beans in a microwave-safe bowl and fill with enough water to cover the bottom of the bowl. Cover the bowl and steam in the microwave on high power for 2 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to a plate lined with paper towels, leaving drippings in the pan.
  • Place mushrooms and onion into the pan with the bacon drippings. Cook over medium heat until mushrooms are nice and brown and onion is soft and translucent, 5 to 8 minutes. Season with salt and add garlic; allow garlic to brown, 1 to 2 minutes. Toss in green beans; saute for about 3 minutes. Toss in green beans; saute for about 3 minutes.

8 White Mushrooms, Quartered
1/2 Cup Shallots, Minced
2 Tablespoons Olive Oil
1/2 Teaspoon Kosher Salt
1/4 Teaspoon Fresh Cracked Pepper
1/2 Teaspoon Balsamic Vinegar (or 1 teaspoon fresh lemon juice)
1/4 Cup Water

Steps:

  • Gather up all the ingredients and heat a heavy bottom pan large enough to fit everything over high heat.
  • When the pan is hot, add the mushrooms without any oil or salt. Let them cook for 3-4 minutes to brown.
  • Add in the bacon batons. Allow to cook, stirring frequently, for 4-5 minutes.
  • Add in the shallots. Cook for 2-3 minutes while stirring.
  • Remove the bacon and mushroom mixture from the pan and set aside.
  • Add in the green beans to the pan along with the salt, pepper and olive oil.
  • Sautee for 2 minutes over high heat.
  • Add the water, cover and simmer for 5 minutes or until the water has cooked off and the beans are tender.
  • Add the bacon and mushroom mixture and the balsamic vinegar. Stir to combine.
  • Serve hot.

6 slices thick-cut bacon
2 tablespoons butter
1 tablespoon olive oil
8 ounces mushrooms (sliced)
3 teaspoons minced garlic
1 ½ pounds fresh green beans (ends trimmed)
½ teaspoon salt (more to taste)
¼-½ teaspoon cracked black pepper ( to taste)

Steps:

  • In a large skillet, cook bacon strips til crisp. Use tongs to transfer bacon to a cutting board and allow to cool before chopping roughly.
  • Sop up the bacon grease with paper towels and discard and add butter and oil to the pan (alternately you can use the bacon grease from the pan instead of the butter and oil). Add garlic, mushrooms, and green beans.
  • Season generously with salt and pepper and saute beans for 10-12 minutes until they are fork-tender. Stir in the chopped bacon.
  • Taste, add more salt and pepper if needed, and serve.

Steps:

  • Combine dried porcini mushrooms and 1 cup boiling water in small bowl; let stand until porcini soften, about 30 minutes. Strain, reserving soaking liquid; coarsely chop porcini.
  • Melt 4 tablespoons butter in large nonstick skillet over medium-high heat. Add shallots and sauté until slightly softened, about 2 minutes. Add fresh mushrooms and porcini and sauté until juices form, about 10 minutes. Add porcini soaking liquid, leaving any sediment behind. Stir until mushrooms are tender and juices evaporate, about 2 minutes. Season mushrooms to taste with salt and pepper. Transfer mushrooms to bowl.

2 pounds green beans, divided
Kosher salt
5 tablespoons mushroom soy sauce or 3 tablespoons regular soy sauce
2 tablespoons black (Chinkiang) vinegar
2 tablespoons unseasoned rice vinegar
1 tablespoon sugar
2 tablespoons vegetable oil, divided
4 ounces king trumpet or maitake mushrooms, caps sliced, stalks coarsely chopped
4 ounces shiitake mushrooms, sliced
1/4 cup brandy
1 shallot, very thinly sliced
1 Fresno chile, thinly sliced
2 garlic cloves, thinly sliced
2 tablespoons small dried shrimp or a splash of fish sauce
4 scallions, green parts only, thinly sliced on a diagonal, divided
1 tablespoon chile oil

Steps:

  • Working in batches, cook three-quarters of green beans in a large pot of boiling salted water until crisp-tender, about 3 minutes per batch. Transfer to a bowl of ice water; let cool. Drain and pat dry; trim stem ends.
  • Combine mushroom soy sauce, black vinegar, rice vinegar, and sugar in a small bowl, stirring to dissolve sugar. Set mushroom XO sauce aside.
  • Trim stem ends of remaining uncooked green beans. Heat 1 Tbsp. oil in a large skillet over medium-high. Cook beans, tossing occasionally, until blistered in spots and crisp-tender, about 5 minutes. Transfer to a plate.
  • Add remaining 1 Tbsp. oil to same skillet and cook king trumpet and shiitake mushrooms, tossing occasionally, until browned and tender, about 5 minutes. Remove skillet from heat and carefully add brandy away from heat source. Return skillet to heat and tilt to ignite brandy. Once flames have subsided, add shallot, chile, garlic, dried shrimp, half of scallions, and reserved XO sauce. Cook, tossing occasionally, just until aromatics have softened, about 3 minutes (there should still be some liquid in the pan). Add chile oil and all of the green beans and toss well to combine. Serve topped with remaining scallions.
