GREEN BEANS IN SEASONED TOMATO SAUCE

ITALIAN FLAT GREEN BEANS WITH TOMATOES AND GARLIC
Another reason to celebrate long hot humid days of summer. This dish is reminiscent of an Italian method of cooking green beans with tomatoes for a long time, which was especially good for tenderizing tough, old beans. From the Miami Herald.

Steps:
- Bring a large pot of salted water to a boil over high heat. Add the green beans and cook for 5 to 7 minutes, until tender. Drain immediately.
- While the beans are cooking, heat the oil in a medium sauté pan or skillet over medium-high heat until the oil shimmers. Add the garlic slices, distributing them evenly. Cook for 4 to 5 minutes, until the slices become almost translucent and start to brown on the edges; be careful not to let the garlic burn.

- Add the cooked green beans and heat through for 1 to 2 minutes; mix well. Taste and adjust seasoning as needed.
- Transfer to a serving dish and top with the basil, if desired. Serve warm or at room temperature.

Steps:
- Use a Teflon coated 8" frying pan. Spray cooking spray in the pan and put on medium heat on stove.
- While pan heats up, cut up the raw bacon in ½" pieces and put it in the pan.
- Turn the bacon in the pan or stir until its crispy. Lower heat if the pans starts to smoke or it appears that the bacon is cooking too fast and burns. Do not drain fat.
- Add onions and fresh garlic and stir until they appear translucent (transparente). This should only take about 2-3 minutes. Do not let garlic burn it will taste AWFUL! If you use garlic powder add it together with the tomatoes.
- Add the tomatoes and stir altogether until all is heated.
- Add green beans from both cans with liquid from one can only. Stir altogether.
- When it starts to bubble or heat up, cover pan and turn heat to low to simmer for about 10 minutes.

- To make the process easier and faster work green beans in small batches.Line up each batch on one side on a cutting board and trim off the ends with a sharp knife.Flip the beans around, line up the tips again, trim off the other side.At this point you can cut trimmed beans in half or leave them as is (which I prefer).Repeat the process with remaining green beans.
- Bring a large pot of water to boil. Add salt and cook green beans just until slightly crunchy. THe should not be cooked to done as they will still continue to cook in tomato sauce.
- Cooking time for green beans until desired doneness depends on the variety of green beans, so just check on them after 5 minutes and adjust accordingly. As an alternative you can steam cook them. More often than not I’ll do just that.
