Steps:
- Toast 4 sliced garlic cloves and a pinch of cayenne pepper in a skillet with butter. Add 1 1/4 pounds green beans, season with salt and a pinch of sugar and cook 2 minutes. Add 1/4 cup water, cover and cook 6 minutes, then uncover and boil until the water evaporates. Season with salt and pepper and toss with chopped pecans.
GREEN BEANS HELLINIKA
A wonderful, easy way to cook green beans. This recipe was passed along to me when I attended a Greek Orthodox Church in Boston. Delicious!

Steps:
- Clean and de-stem green beans. Leave whole or cut to bite size pieces if you prefer.
- (If you prefer your green beans more on the crispy side, saute the onion and garlic in 2 Tbsp of the olive oil before the next step.).
- Put all ingredients into stock pot. Add only enough water or stock to keep beans from sticking. (I have made these with chicken stock as well).
- Cover and cook until tender, stirring frequently, about 20 minutes.

Steps:
- Wash and string the beans, but leave them whole.
- In a large, deep skillet, heat olive oil until hot.
- Add the onion and saute for about 5 minutes until it is tender, but not brown.
- Add the green beans.
- Cover the skillet.
- Cook for about 15 minutes or until the beans start to wilt.
- Coarsely chop two of the tomatoes (ONLY TWO).
- Add to the pan and cover again.
- Cook for another 15-20 minutes until the tomatoes have melted into a sauce.
- Taste and add salt and pepper as needed.
- If necessary add another one or two chopped tomatoes and continue cooking.
- You may need to add extra olive oil also as it contributes to the flavor.
- Cook until the beans are very tender.
- Trust me, crunchy does NOT work with this dish.
- Serve hot, cold, or at room temperature (the way Greeks do).
- If you can find good, creamy feta, crumble a good chunk into the beans before serving.

Steps:
- Blanch green beans in boiling salted water for 3 to 4 minutes.
- Using a spider strainer, transfer them to an ice bath; set aside for 5 minutes.
- Drain beans in a colander before placing them on a single layer on a cutting board lined with paper towels. Pat them dry using more paper towels; set aside.
- In a bowl, whisk together soy sauce, sesame oil, sambal oelek and brown sugar; set aside.
- In a wok or a large skillet over medium-high heat, add oil. When hot, add ginger and garlic; sauté for 30 seconds.
- Add blanched beans and toss constantly for 3 minutes.
- Pour in the soy sauce mixture and stir to coat; toss continuously for 1 minute.
- When the sauce starts simmering, season lightly with ground sea salt and freshly ground black pepper. Add sesame seeds and stir to combine.
- Remove from the heat and serve immediately.

- Put green beans in a baking dish. Mix butter, brown sugar, and garlic powder together in a bowl; pour over green beans. Arrange bacon strips atop the beans.
- Bake in preheated oven until the bacon is cooked and the green beans are tender, about 30 minutes.

- To prepare this traditional Greek green beans recipe, start by washing thoroughly the green beans. Drain them in a colander and set aside.
- Heat half the olive oil in a large skillet over medium heat. Add the chopped onions and sauté until transculent and tender. Stir in the garlic, the grated tomatoes, the rest of the olive oil and a pinch of sugar and bring to the boil. The traditional recipe for Greek green beans calls for fresh ripe tomatoes, but if you like you can substitute with canned chopped tomatoes, or Passata tomato juice.
- Add the green beans and blend well, so that the green beans are coated with the olive oil and the tomatoes. Turn the heat down, cover with the lid and simmer for 40- 45 minutes, until the beans are soft and most the juices have evaporated. During cooking, check out if the pan appears to be getting dry and add a little bit hot water if needed.
