Garlic Parmesan Green Bean Casserole is the most wonderfully flavorful holiday side dish! This homemade version is garlic, parmesan, and walnuts for crunch. It is not only delicious, but naturally gluten free and low carb as well.

32 oz green beans
6 oz cream cheese (softened)
4 cloves garlic (pressed)
1 tsp salt
1/2 tsp ground pepper
1/2 cup sour cream
2 tbsp heavy cream
3/4 cup parmesan cheese (shredded (divided))
8 oz mushrooms (chopped)
1/2 cup California Walnuts (chopped)

Steps:

  • Chop green beans in half and remove any hard ends.
  • In a large bowl, combine cream cheese, garlic, salt, pepper sour cream, heavy cream, 1/2 cup parmesan cheese, and chopped mushrooms and mix until combined.
  • Stir in the green beans and toss until coated with the mixture, then transfer to a large casserole dish.
  • Sprinkle remaining 1/4 cup parmesan cheese over the top of the casserole and then top with walnuts.
  • Bake covered with foil at 425˚F for 40 minutes. Remove the foil and cook for an additional 10-15 minutes, or until the nuts are toasted and the green beans are tender.
  • Let rest 10-15 minutes before serving for sauce to thicken.

olive oil cooking spray
¾ pound fresh green beans, trimmed
sea salt and freshly ground black pepper to taste
1 pinch garlic powder, or to taste
3 tablespoons shredded Parmesan cheese, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a baking dish with cooking spray.
  • Place trimmed green beans into the prepared baking dish. Season with sea salt, pepper, and garlic powder; toss to coat. Sprinkle Parmesan cheese on top.
  • Roast in the preheated oven until cheese melts and forms a crisp shell over beans, about 10 minutes. Serve immediately.

This is another great tasting family favorite, that my daughter Briana loves to make when ever she is home visiting. We love the addition of parmesan cheese. It is a great side dish any time of the year.

2 can(s) 15 1/2 oz. cut green beans or french style green beans, drained
1 can(s) cream of mushroom soup
1/2 c grated parmesan cheese, ( i like to use fresh grated)
1/8 tsp black pepper
1 tsp worcestershire sauce
3/4 c evaporated milk
1 1/2 c french fried onion rings

Steps:

  • 1. Combine soup, parmesan cheese, milk pepper and worcestershire sauce in a medium size bowl. Mix well. Add drained green beans to soup mixture, and 1 cup of onion rings and stir gently to mix.
  • 2. Pour into a 2 quart casserole dish. Bake in preheated 350 degree F. oven for 25 minutes. Then top with remaining onion rings and bake an additional 5 minutes.
  • 3. We make this casserole all year round, we don't wait just for the holidays.

This is a highly rated recipe from Paula Deen of the Food Channel and worth making! I have tweaked it slightly and doubled the complete amounts to suit our tastes --- Paula has a house seasoning blend mix which is 1/2 cup salt mixed with 2 tablespoons black pepper and 2 tablespoons garlic powder, she uses a small amount in this casserole, you have the option of omitting the fresh garlic and adding it in, store the remaining mix in an air tight container for up to 6 months, I strongly recommend using low-sodium cream of mushroom soup

1/4 cup butter
3 garlic cloves, minced
2 cups fresh sliced mushrooms (does not have to be exactly 2 cups)
6 cups fresh green beans (ends removed and cut in half, can use more or less if desired)
6 cups low sodium chicken broth
2 (10 3/4 ounce) cans low-sodium condensed cream of mushroom soup, undiluted
1/4 cup fresh grated parmesan cheese
1/2 teaspoon black pepper (or to taste)
salt (optional)
2 (2 7/8 ounce) cans French fried onion rings (such as Durkee)
1 cup grated old cheddar cheese (can use (to taste)

Steps:

  • Melt the butter in a large skillet over medium heat; add in mushrooms and garlic; cook stirring until mushrooms loose their moisture then set aside.
  • Place the green beans in a medium saucepan; cover with chicken broth and bring to a boil; cook for about 8-10 minutes or until just fork-tender drain but do not rinse.
  • Butter a 3-quart casserole dish (or a little larger).
  • Place the mushroom soup, onion/mushroom mixture, Parmesan cheese, black pepper and onion rings in a large bowl; mix well to combine, add in the cooked green beans; mix to combine.
  • Transfer to the prepared casserole dish.
  • Bake in a preheated 350 degrees F oven for 20 minutes.
  • Remove from oven and sprinkle the grated cheddar cheese on top; return to oven for about 5-7 minutes or until the cheese has melted.

  • Prepare the fried onion topping. Preheat the oven to 475F. Slice the onion thinly. Place onion in a small bowl. Add the remaining fried onion topping ingredients and toss to combine. Use as much milk as is necessary for it to just stick together.
  • Spread the dredged onion out on a silicone baking mat lined baking sheet. Bake until just golden brown, approximately 20-30 minutes. Toss the onions at least once during baking to toast all sides. When done, set aside.
  • While the onions are cooking, prepare the green beans. Bring a large pot of water to a boil over high heat. Trim the beans and cut into 1-2 inch long pieces. Add the green beans to the boiling water and cook until just blanched, 5 minutes. Remove the beans from the hot water. Immediately drain the beans and put them in a large bowl of ice water to stop the cooking process. Set aside.
  • Make the sauce. In a large skillet, melt the butter over medium high heat. Add the mushrooms, salt, and black pepper. Stir to combine and cook until the onions just start to release some liquid, approximately 3-5 minutes.
