- Place green beans in a small saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. Place the beans in a bowl; refrigerate until chilled. , Add the blue cheese, olives, oil, salt and pepper; toss gently to coat. Refrigerate until serving.

- For the salad: Bring a pot of water to a boil. Prepare an ice-water bath. Blanch the green beans until crisp-tender. Immediately transfer to the ice water to stop the cooking process. Repeat with the wax beans. Drain the blanched beans thoroughly.
- In a large bowl, combine the green beans, wax beans, blue cheese, cranberries, walnuts, chives and bacon.
- For the dressing: In a small bowl, whisk together the Dijon and vinegar until emulsified. Add the shallots. Whisk in the olive oil until emulsified. Season with salt and pepper.
- Add the dressing to the salad and toss to coat. Add a few turns of freshly ground black pepper, if desired.
GREEN BEAN AND TOMATO SALAD

- Drop beans into a saucepan with salted boiling water. Cook until crisp tender, about 3 to 5 minutes according to the size of the beans. Do not overcook. Drain and let cool.

- Start by blanching the green beans. Prepare an ice bath - fill a large bowl with ice and cold water.
- Bring a large pot of water to a boil. Once boiling, add the green beans and cook for 3 to 4 minutes. Use a strainer to immediately transfer the beans to the ice bath. Let them chill in the bath for 5 minutes. Pat the beans dry with a paper towel.
- Place the beans on the plate and give them a light sprinkle of salt and pepper. Drizzle on the dijon dressing. Top with the crumbled blue cheese and walnuts. Serve immediately. This is incredible cold - like leftovers right out of the fridge.
- In a bowl, whisk together the lemon juice and mustard. Whisk in the oil until the dressing is emulsified. Add a pinch of salt and pepper along with the herbs. Whisk to combine. Any extras of this stays great in the fridge for a few days - it just has to be whisked and stirred before using!
