1 1/2 tbsp Olive oil
1 Onion (chopped)
2 Garlic cloves (chopped)
500 g Potatoes (peeled, chopped small)
1 Stock cube (chicken or vegetable)
400 g Tinned tomatoes
Salt & Pepper (to taste)
1 Lemon (juice)
200 g French beans (any type of green beans)
1 Lemon (zest)
Parsley (chopped)
1 Pan (with lid)
1 Spoon
1 Knife
1 Zester/Grater

Steps:

  • In your pan add 1 1/2 tablespoons of olive oil and heat it on a low heat. Add 1 chopped onion and fry for 1 minute until soften. Then in with 2 garlic cloves and cook for another minute on a low heat
  • Add 500g of chopped potatoes give everything a stir and leave everything to cook for 3 minutes
  • Add in your stock cube and mash it all in. Stir it in well so all your potatoes are covered in it
  • Pour in 400g of tinned tomatoes, salt and pepper and the juice of 1 lemon, stir everything well and put a lid on your and simmer for 15 minutes

  • When your potatoes are soft add in 200g green beans, give them a stir, put the lid back on and simmer for 10 minutes
  • After 10 minutes have a check and if your stew is thick add a little water to loosen your sauce. Stir everything again, put the lid back on and simmer for 5 minutes
  • When you plate up grate over some lemon zest and sprinkle over some chopped parsley

Fasolakia are Greek green beans stewed with olive oil and tomato, with a few pieces of potato added for good measure. This is a main dish in Greece, not a side dish, and a prime example of plant-based eating! Good crusty bread is essential for mopping up the sauce and I always need to have a healthy chunk of feta on the side. Serve fasolakia warm or at room temperature for best flavor.

¼ cup olive oil
1 small onion, grated
1 ½ pounds fresh green beans, trimmed
4 tomatoes, pureed
2 yellow potatoes, peeled and cut into wedges
½ teaspoon salt, or to taste
ground black pepper to taste
1 pinch white sugar
water to cover

Steps:

  • Heat olive oil in a large saucepan over medium heat and stir in onion. Cook until onion has softened, about 5 minutes. Add green beans and stir to coat in the oil. Cook, stirring occasionally, 2 to 3 minutes. Add pureed tomato, potatoes, salt, pepper, and sugar. Stir well, then add water until beans are barely covered.
  • Bring to a simmer, partially cover with a lid, and cook gently over medium-low heat until green beans and potatoes are soft, 25 to 30 minutes. Uncover towards the end of cooking to reduce sauce if it is too watery.

1 lb. green beans, washed and trimmed
4 potatoes, cut into wedges
1 small onion finely chopped
1/2 cup olive oil
1 tbsp. tomato paste
1 cup warm water
Salt and pepper to taste

Steps:

  • 1. Heat the oil in the base of a pressure cooker over medium-high heat. Add the onion and saute until translucent, about 4 minutes. 2. Add the green beans and potatoes to the pot and toss together for a few minutes. 3. Dissolve the tomato paste in the water and add to the pot. Add the olive oil, and salt and pepper to taste. There should be enough liquid in the pot to come half way up the vegetables. If not, add more water. 4. Seal the pressure cooker lid and turn the heat up to high. Once the pressure cooker starts steaming, reduce the heat to medium and cook for 12 minutes. 5. Remove the pot from the heat and release the steam. Once the stew has cooled for a bit, it is ready to serve. Bread and feta cheese compliment this dish quite well.

2 lbs fresh green beans or 2 (16 ounce) packages frozen green beans
1 -1 1/2 lb lamb stew meat (or beef stew)
1 large chopped onion
3 -4 garlic cloves (crushed or minced fine)
2 cups water
1/4 cup olive oil or 1/4 cup vegetable oil
3 large ripe chopped fresh tomatoes or 1 (28 ounce) can diced tomatoes
3 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon allspice

Steps:

  • Wash green beans and trim off stems. Cut in half and rinse in cold water.
  • Saute lamb meat stew, onions, garlic, salt and spices in olive oil or vegetable oil(stirring occasionally) until meat is brown.
  • Add 2 cups of water, green beans, chopped tomatoes or 28 oz. can of diced tomatoes. and cook on medium heat for about 10 minutes. cover and simmer on low heat for around 45 minutes or until green beans are tender.
  • This meal is best when served hot with plain rice.

Fresh green beans and potatoes stew. I used to dislike this when I was a kid, but as the years past, it strangely became my favourite dish. It's my comfort food and I have to have it at least twice a month.

1 kg fresh green beans (alternatively use frozen French green beans)
450 g potatoes, cut in 1 1/2 inches pieces
450 g plum tomatoes (alternatively use 1 tin of tomatoes)
3 medium onions, finely chopped
4 garlic cloves, crushed
100 ml olive oil
1/2 teaspoon paprika (optional)
1/2 teaspoon cinnamon
salt & freshly ground black pepper
2 tablespoons parsley, finely chopped to garnish (optional)

Steps:

  • If using fresh beans cut off the tips on both ends and if necessary remove strings along the edges.
  • Heat the olive oil in a pan and fry the onions and garlic until softened.
  • Add the beans and fold gently a few times until beans soften up a bit.
  • Add the tomatoes, salt, pepper & paprika and 300 ml of boiling water, bring to the boil and simmer for half an hour.
  • Add potatoes and make sure they are just covered in the water. (Add more boiling water if necessary). Cover pan and simmer for 1-1½ hours or until potatoes are very soft.
  • Turn heat off and stir in the cinnamon. DO NOT ommit the cinnamon. This is what makes this dish really special.
  • Garnish with parsley (optional) and serve with fresh bread and feta cheese.
  • Can also be eaten cold.

1 -1 1/2 lb fresh green beans, washed and snapped
1 -1 1/2 lb new potato (if they aren't in season, use 3 large baking potatoes)
1/2 onion, diced
1 ham steak, fat removed and cut into bite sized pieces
1 quart low sodium chicken broth
1/4 teaspoon pepper (6 good grinds)
2 tablespoons cornstarch (optional)
1/2 cup water (optional)

Steps:

  • Clean and cut up all the ingredients.
  • Place in your soup pot.
  • Add the chicken stock and enough water so there is an inch of fluid above the vegetables.
  • Bring to the boil, then reduce the heat to medium and cook for 20 minutes.
  • Turn the heat down to low and simmer till the green beans are tender.
  • Add a little more broth or water if this gets too dry.
  • Add the cornstarch/water mixture if you want it a little thicker.
  • Serve with cornbread - Yummy!
  • Note: What I mean by ham steak is those one big slice of ham packages.
  • You won't need to add salt - the ham has enough for the dish.
  • This also works in the crockpot.
  • Boil the potatoes, then add everything to the crockpot 6 - 8 hours on low.
