1 1/2 cups Greek yogurt (I use 2%)
2 tablespoons honey
1 teaspoon vanilla
1 teaspoon ground cinnamon
1 medium crisp apple (I like honeycrisp, gala, or pink lady for these, cored and diced)
1/4 cup applesauce
Additional honey and cinnamon for topping (if desired)

Steps:

  • Have two sturdy glasses, mason jars, or mini trifle bowls ready.
  • To a medium bowl, add the yogurt, honey, vanilla, and cinnamon. Stir well to combine.
  • Grab 1/4 of the apples and sprinkle them at the bottom of the glasses. Add 1/3 of the yogurt, a few spoonfuls each. Depending on the size of your glass, you may need to spread the layers gently with the back of a spoon to distribute to the edge of the glass. Top with more apples (1/4), then more yogurt (1/3). Add all of the applesauce (2 tablespoons per glass), then more apples (1/4). Top with remaining yogurt and sprinkle with remaining apples. Drizzle with a little more honey and sprinkle with cinnamon if desired. Serve.

2 quarts 2% milk
1 cup powdered milk
½ cup honey
½ cup plain yogurt, at room temperature

Steps:

  • Heat 2 quarts milk in a saucepan over medium heat until a candy thermometer inserted in the liquid reads between 180 and 190 degrees F (82 to 88 degrees C), 8 to 12 minutes. Remove from heat.
  • Whisk powdered milk and honey into the warm milk. Let cool until the thermometer reads between 115 and 120 degrees F (46 to 49 degrees C), about 1 hour and 15 minutes.
  • Whisk a small portion of the warm milk mixture into the yogurt; stir mixture back into the saucepan. Transfer mixture into a warm slow cooker. Wrap slow cooker in a bath towel and tuck it away into a microwave or oven. Let sit until thickened into yogurt, 6 to 9 hours.
  • Line a colander with cheesecloth or coffee filters and set over a bowl. Pour the yogurt into the colander and refrigerate colander and bowl until desired consistency is reached, 4 to 8 hours.

6 fresh figs, cut into quarters (may also use dried)
6 dates, pitted and chopped
1/2 cup honey

1 lemon, juice of

4 mint leaves, for garnish

Steps:

  • Toast the nuts in a saute pan over medium heat until they become fragrant.
  • Put the nuts onto a plate and set aside; when cool enough to handle, chop them roughly.
  • In a small saucepan over medium heat, add the figs, dates, honey, water, lemon juice, and cinnamon stick.
  • Cook for about 10 minutes until fruit is soft.
  • Set aside and let it cool slightly; remove the cinnamon stick.
  • Place the yogurt in a big bowl.
  • Spoon the warm fruit onto the yogurt and gently swirl the fruit through the yogurt.
  • Sprinkle on the nuts and garnish with mint leaves.
  • Serve immediately.
