GREEK YOGURT PASTA SALAD



Greek Yogurt Pasta Salad image

Cold pasta salad with Greek yogurt for my dear friend who doesn't like vinegar.

Provided by Laura Miller

½ (8 ounce) package penne pasta
1 cup frozen peas
5 ounces sharp Cheddar cheese, cubed
6 slices cooked crispy bacon, minced
½ bell pepper, chopped
¼ onion, minced
1 (6 ounce) container plain Greek yogurt

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta and transfer to a large bowl. Mix in frozen peas (which will thaw and cool the pasta at the same time).
  • Add Cheddar cheese, bacon, bell pepper, and onion; mix well. Stir in Greek yogurt. Serve immediately or refrigerate for later.

High protein pasta (Barilla Plus) and Greek yogurt provide plenty of protein, making this a good lunch dish or even supper on a hot day. It would also be a nice side or potluck dish. So easy to make, and a little different from the usual pasta salad.

8 ounces farfalle pasta (bowties)
8 ounces Greek yogurt
2 tablespoons white wine vinegar
2 tablespoons olive oil
1/3 cup red onion, chopped
1/2 sweet red pepper, diced
1/3 cup green olives, with pimento sliced
1 cup cucumber, peeled and cubed (remove seeds if juicy)
3 tablespoons fresh dill, finely chopped
3/4 teaspoon kosher salt
1/2 teaspoon pepper, freshly ground

Steps:

  • Cook pasta and drain it.
  • In large bowl, mix pasta with the oil and vinegar and mix gently.
  • When it has cooled a bit, add all the other ingredients.
  • Mix gently.
  • Taste and adjust seasonings if needed.
  • Chill and serve.

300g fusilli pasta spirals - or you can use farfalle (butterflies) or penne (quill tubes)
225g bag prepared fresh baby spinach
250g punnet cherry tomatoes , halved
100g black olive (we bought kalamata from the deli counter)
200g feta cheese , broken into rough chunks
3 tbsp olive oil

Steps:

  • Tip the fusilli into a large pan of boiling salted water and boil for 10 minutes. Throw in the spinach, stir well and boil for another 2 minutes. Drain into a colander or sieve and leave to drip-dry.
  • Tip the tomatoes, olives and feta into a big bowl, grind lots of black pepper over and then drizzle with the olive oil.
  • Toss in the drained pasta and spinach, and let everyone help themselves.

  • Bring a pot of water to a boil. Boil the pasta according to package directions. Drain it well, toss it with the olive oil, and spread it in an even layer on a baking sheet. Chill the pasta in the refrigerator for at least 20-30 minutes.
  • Mix the yogurt, mayonnaise, lemon juice, dill, parsley, chives and salt in a medium bowl. Cover and place in the refrigerator to all the flavors to develop.
  • When ready to serve, mix the pasta, dressing, cucumber, bell pepper, and feta cheese together in a large bowl. Transfer to a serving bowl and serve.

  • Prepare the dressing first so the flavors have time to blend. Use a zester or small-holed cheese grater to remove the zest from the lemon. In a small bowl, stir together the Greek yogurt, mayonnaise, garlic, 1 Tbsp of the lemon juice, 1/2 tsp of the lemon zest, salt, dill, and some freshly cracked pepper (about 10-15 cranks of a pepper mill). Refrigerate the dressing until ready to use.
  • Cook the pasta, in lightly salted water, according to the package directions. Drain the pasta and rinse briefly with cool water to bring the temperature down. Let the pasta drain until it's slightly dry and tacky on the surface.
  • While the pasta is cooking, slice the cucumber, then cut the slices into quarter rounds. Slice the grape tomatoes in half. Finely dice the red onion. Drain the artichoke hearts, then roughly chop them. Crumble the feta cheese.
  • Once the pasta is cooled and drained, Place it in a large bowl and combine with the cucumber, tomatoes, red onion, artichoke hearts, feta, and creamy lemon dill dressing. Stir to coat. Serve immediately or refrigerate until ready to eat.

  • When the pasta is done cooking, drain and run cold water over the pasta. Drain completely and drizzle with olive oil. Toss until pasta is well coated. Pour the pasta into the large bowl with the Greek yogurt mixture. Add the tomatoes, cucumber, olives, red onion, and feta cheese. Stir gently until ingredients are well coated. Season with salt and black pepper, to taste. You can add a little extra dill and lemon juice, if desired. Serve.
