HONEY WHITE BREAD

Honey White Bread image

Provided by Ina Garten

Time 3h15m

Yield 2 loaves

Number Of Ingredients 10

1/2 cup warm water (110 degrees)
2 packages dry yeast
1 teaspoon sugar
1 1/2 cups warm whole milk (110 degrees)
6 tablespoons (3/4 stick) unsalted butter, melted and cooled
1 1/2 tablespoons honey
2 extra-large egg yolks
5 to 6 cups all-purpose flour
1 tablespoon kosher salt
1 egg white, lightly beaten

Steps:

  • Place the water in the bowl of an electric mixer fitted with a dough hook attachment. If the bowl is cold, be sure the water temperature doesn't drop below 110 degrees F. Add the yeast and sugar; stir and allow them to dissolve for 5 minutes.
  • Add the milk, butter, and honey. Mix on medium speed until blended. Add the egg yolks, 3 cups of the flour, and the salt. Mix on low speed for about 5 minutes. With the mixer still on low speed, add 2 more cups of flour. Raise the speed to medium and slowly add just enough of the remaining flour so the dough doesn't stick to the bowl. Add the flour slowly; you can always add more but you can't take it out. Knead on medium speed for about 8 minutes, adding flour as necessary.
  • Dump the dough out onto a floured surface and knead by hand for a minute, until the dough is smooth and elastic. Grease a bowl with butter, put the dough in the bowl, then turn it over so the top is lightly buttered. Cover the bowl with a damp towel and allow it to rise for one hour, until doubled in volume.
  • Grease two 9 x 5-inch loaf pans with butter. Divide the dough in half, roll each half into a loaf shape and place each in a prepared pan. Cover again with the damp towel, and allow to rise again for an hour, until doubled in volume.
  • Meanwhile, preheat the oven to 350 degrees F. When the dough is ready, brush the tops with the egg white and bake the breads for 40 to 45 minutes, until they sound hollow when tapped. Turn them out of the pans and cool completely on a wire rack before slicing.

HONEY WHEAT OATMEAL BREAD - ALL WHOLE GRAIN VERSION

Honey Wheat Oatmeal Bread - All Whole Grain Version image

This is now our daily bread -- my daughter makes it several times a week in our bread machine. This has replaced the earlier version that I have posted because we've tried to eliminate white flour from our diets wherever possible. The vital wheat gluten is what makes it possible for the bread to rise nicely. Gluten is the protein part of the wheat kernel, and you can buy a powdered form of it at most health food or whole food stores -- that's what you need for this recipe to work. Without the gluten, it'll be a brick. So, get the gluten unless you want to build a bread wall. Cooking time is for the white bread cycle on our machine. Your time may vary.

Categories     Yeast Breads

Time 3h10m

Yield 1 loaf

Number Of Ingredients 8

10 fluid ounces warm water
1 tablespoon olive oil
1/3 cup honey
1 teaspoon salt (we use Real Salt)
1 cup rolled oats (freshly rolled by DangerBoy at our house)
3 cups whole wheat flour (freshly ground, if possible)
2 tablespoons vital wheat gluten
2 teaspoons instant yeast

Steps:

  • Put ingredients into bread pan in the order suggested by the manufacturer of the bread machine.
  • If you're going to use a timer, it is vital to keep the yeast away from both the liquids AND the salt.
  • I make this on the white bread cycle and it comes out great, but you may wish to use the whole wheat cycle.
  • I never noticed any difference except that the whole wheat cycle took a lot longer.
  • Your machine may yield different results, tho.
  • If you like crusty bread, just let the finished bread set on a rack to cool.
  • If you want a softer crust, slip the hot bread into a plastic bag so that the crust will get steamed and be nice& soft- and good for sandwiches.

1 (12 fluid ounce) can evaporated milk
¼ cup water
¼ cup melted shortening
¼ cup honey

GREAT HARVEST HONEY WHOLE WHEAT BREAD COPYCAT

Great Harvest Honey Whole Wheat Bread Copycat image

Provided by Six Sisters Stuff

Yield 16

Number Of Ingredients 5

4 cups very warm water (see note below)
3 Tablespoons fast active-dry yeast
3/4 cup honey
1 Tablespoon salt
10-11 cups whole wheat flour (freshly ground if possible)

Steps:

  • In a large bowl, add water, yeast, honey and salt. Let it rest for 5 minutes (or until the yeast foams).
  • Add in flour 1 cup at a time, kneading it between each cup of flour added if you are making it by hand. If you are making it with a mixer (like a Bosch or Kitchen Aid), use a paddle attachment and just let it mix while you add the flour.
  • Knead bread for about 5 minutes. If the dough is sticky, add only enough flour so that the dough barely pulls away from the bowl. Every time I make bread, the amount of flour I use varies - humidity and elevation will make a big difference too. I usually use between 10-11 cups.
  • Preheat oven to 170 degrees; turn the oven off, and let dough rise inside the oven for 15 minutes.
  • Carefully remove bowl from oven. Spray the back of your hand with cooking spray and punch down the dough. Form into a log and cut in half, forming two larger-sized loaves. Put into 2 greased loaf pans.
  • Again, preheat oven (if it?s not warm anymore) to 170 degrees and let the dough in the pans rise in the oven for 20-30 minutes, or until the dough doubles in size.
  • Remove dough from oven and set oven temperature to 350 degrees. Once oven is pre-heated, place the loaves back in the oven and bake for 30 minutes.
  • Remove from pans immediately and let cool completely on a cooling rack.

GREAT HONEY WHEAT OR WHITE BREAD

Great Honey Wheat or White Bread image

I got this recipe from my neighbor who makes this bread twice a week (8 loaves!). One batch is the wheat and the other she uses all white flour. I halved the recipe yesterday and made the wheat version. I also didn't use as much salt as called for, on accident. I did add Vital Wheat Gluten to my wheat flour, I hear it helps with the texture. I also used glass pans, I am not sure if that makes a difference as this is my first time ever attempting loaves of bread! Active work time does not include rise time, as different types of yeast rise at their own rate! The servings are also a guess. I didn't count the slices of the loaf we ate last night. I am guessing the full recipe will make about 18 sandwiches, it all depends how thick you cut the slices.

Time 45m

Yield 4 Large Loaves, 18-24 serving(s)

Number Of Ingredients 7

5 cups warm water
2 tablespoons yeast
2 tablespoons salt
1/2 cup oil
3/4 cup honey
5 cups white flour
8 cups whole wheat flour

Steps:

  • Mix water, yeast and salt until yeast and salt are dissolved.
  • Add oil and honey and mix well.
  • Mix in white flour and blend well.
  • Add wheat flour by the cup full until dough clears side of bowl.
  • Knead until dough is elastic and smooth.
  • Let rise until double. (I put mine in a separate bowl that was oiled. Just roll the dough in the bowl so it doesn't dry out on top while rising).
  • Punch down and divide into four loaves.
  • Place into well greased bread pans.
  • Place in a 200°F oven for 20 minutes.
  • Increase heat to 350°F and bake for an additional 25-30 minutes.
