GREAT-GRANDMA'S GINGER CAKE

Steps:
- In a small bowl, cream shortening and sugar until light and fluffy. Add molasses and egg; mix well. Combine the flour, baking soda, ginger, cinnamon, salt and cloves. Add to the creamed mixture alternately with water, beating well after each addition., Pour into a greased 9-in. square baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Garnish with whipped topping.

GREAT GRANDMA PEARL'S ANGEL FOOD CAKE WITH PEACHES AND CREAM
My great-grandmother Pearl was famous for her angel food cake. She would enter baking contests with this recipe and always took home the blue ribbon. Among her bounty of prizes? A KitchenAid stand mixer (which came in very handy for this recipe, considering she used to beat the egg whites by hand) and a new stove! Not to mention a mighty fine sash and a ribbon proclaiming her the queen of cakes.

Steps:
- Preheat the oven to 325 degrees F.
- In a standing electric mixer, beat the egg whites at medium speed until foamy. Add the cream of tartar and salt and beat until stiff peaks form. Beat in the sugar, a few tablespoons at a time, until smooth and glossy, about 4 minutes.
- Transfer the egg whites to a large, wide bowl. Using a fine sieve, gradually sift the flour over the egg whites, gently folding in the flour with a spatula. Fold in the vanilla and almond extracts.
- Scrape the batter into a 10-inch angel food cake pan. Using a table knife, slice through the cake batter several times to release any large air bubbles. Tap the cake pan once or twice on a flat surface. Bake in the center of the oven for 20 minutes. Increase the oven temperature to 350 degrees F and bake for about 35 minutes longer, until a toothpick inserted in the center comes out clean. Invert the pan onto the neck of a wine bottle and let cool completely.
- To loosen the cake, run a thin-bladed knife around the side and tube of the pan. Unmold the cake and transfer to a platter. Cut the cake into wedges and drizzle with some of the reserved syrup. Serve with the sliced peaches and whipped cream.
GREAT GRANDMA'S GUMDROP CAKE
As the title suggests, this recipe has been in the family for over 100 years! Gumdrop Cake is like a light fruit cake that kids love. It makes a great gift.

- Boil the raisins for 5 minutes, strain & cool.
- In a large bowl cream butter & sugar. Add well beaten eggs.
- Add 1 cup flour then applesauce & raisins, mix.
- Add the rest of the flour (2 cups), baking powder, salt & gumdrops, mix.
- Bake for 2 1/2 hours @ 300F in pan(s) double lined with foil (I recommend having a pan of water on the bottom shelf of the oven while cooking).
- DO NOT cut for at least 7 - 10 days.

GRANDMA BROWN'S GINGERBREAD
Grandma Brown was my great-grandmother on my father's side. I never got to meet her, but I remember my grandma making her gingerbread. Last Christmas, I made a bunch of it up and gave it to my family. Now, I give it to you. Enjoy! Due to feedback, I am adding another comment here...old-fashioned gingerbread is a dense cake. If that is not what you expect from gingerbread, then this recipe is probably not for you.

Steps:
- Grease well either a 9 x 13 baking pan or two 9-inch round pans.
- Cut a piece of parchment or waxed paper to fit bottom of pan.
- Cream sugar and shortening together.
- Mix dry ingredients together.
- Add the molasses and boiling water to the sugar and shortening mixture, then slowly add dry ingredients to this mixture; mixing well between each addition.
- Beat eggs well.
- Add into mixture last.
- Pour into prepared pan (s).
- Bake at 350° or until toothpick inserted in center comes out clean (it should take 20 minutes, but can take as long as 35 minutes).
- Best when served warm with fresh whipped cream, but delicious any time.
GRANDMOTHER'S SOFT GINGERBREAD CAKE
Of all the sublime dishes that chef Nancy Oakes prepared during the 1997 Workshop, it is her warm gingerbread cake that has entrenched itself at Cakebread Cellars. The San Francisco chef says that the basic recipe is her grandmother's, although Chef Oakes sometimes dresses it up with a ginger syrup. Brian serves it often in the fall, sometimes with a scoop of honey ice cream or just a dollop of softly whipped cream. As dark as milk chocolate, this fabulous cake is moist, spicy, and not overly sweet. Don't worry if it sinks a bit in the center as it cools. Once it is cut, no one will notice.

- Preheat the oven to 350°F. Butter and lightly flour a 9-inch-round springform baking pan.
- In a bowl, whisk together the flour, soda, salt, cloves, ginger, and cinnamon.
- In a mixing bowl with electric beaters or by hand with a whisk, beat together the sugar, molasses, oil, and eggs until well blended and smooth, 1 to 2 minutes. Add the dry ingredients and mix just until blended, scraping the bowl once or twice. Add the boiling water and beat just until smooth. Don't overmix or the cake will be tough. The batter will be thin.
- Pour the batter into the prepared pan and place on a baking sheet to catch any drips. Bake in the center of the oven until a toothpick inserted in the center comes out clean, 50 to 55 minutes. Let cool on a rack for at least 15 minutes before removing the pan sides.
- For the whipped cream In a mixing bowl with electric beaters or by hand with a whisk, whip together the cream, sugar, and vanilla to soft peaks.
- To serve, cut the cake into 12 to 16 wedges. Transfer to dessert plates and put a dollop of whipped cream and a few sprinkles of nutmeg on top.
