2 cups all-purpose flour
1 teaspoon kosher salt
2/3 cup all-vegetable shortening
5-7 tablespoons cold water
2 cups water
1 cup granulated sugar
3 tablespoons unsalted butter
1/4 teaspoon cinnamon
6-8 medium sized tart apples
1/2 cup sugar
1-1/2 teaspoons cinnamon
6-8 tablespoons unsalted butter

Steps:

  • Pastry: In a large mixing bowl, sift flour and salt together. Cut in shortening with a pastry cutter or two knives in opposite directions until pieces are the size of small peas. Sprinkle a few tablespoons of water over mixture and gently toss with a fork. Repeat with more water until mixture is all moistened. Form into a ball. Flatten pastry dough on a lightly floured surface. Roll out to a little less than 1/8-inch thick and cut into 7-inch squares.
  • Syrup: Prepare the syrup by bringing 2 cups water, 1 cup sugar, 3 tablespoons butter and 1/4 teaspoon cinnamon to a rolling boil over medium-high heat. Reduce to medium-low heat and let simmer until reduced to a thick enough syrup to lightly coat the back of a spoon.
  • Preheat oven to 425°F. Butter a large rimmed baking dish and set aside.
  • Apples: Peel and core an apple for each pastry square you have. In a small bowl, whisk together 1/2 cup sugar and 1-1/2 teaspoons cinnamon.
  • Place an apple in the middle of one of the square pastries. Fill the core cavity of the apple with some of the cinnamon sugar mixture and dot with a tablespoon of butter. Bring opposite points of pastry up over the apple. Overlap, moisten with water and seal. Carefully lift the pastry-wrapped apple and place it in the prepared baking dish. Repeat with remaining apples, pastry squares, cinnamon sugar mixture and butter.
  • Pour hot syrup evenly over the tops and around the dumplings.
  • Bake for 40-45 minutes or until the crust on each dumpling is golden brown and apples are cooked all the way through. You can test the apples by poking them with a fork or skewer.
  • Serve warm with the hot syrup that's in the bottom of the baking dish and ice cream or whipped cream, if desired.

1 1/2 cups flour
3/4 cup granulated sugar

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.
  • Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
  • To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples.
  • Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm.

1 lemon
1 cup sugar
1/2 cup (1 stick) butter
1/4 teaspoon vanilla extract
8 canned buttermilk biscuits
4 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F. Peel, core and slice the apples vertically into 8 slices each. Squeeze the lemon into a bowl of water and add the apple slices to keep from turning brown. In a medium saucepan, mix 1 cup water, 3/4 cup of the sugar, the butter and vanilla. Bring the sugar mixture to a boil over medium heat. Separate each biscuit into 2 layers. Wrap a biscuit layer around a slice of apple, stretching the biscuit slightly to overlap, and seal on the bottom. Place the wrapped slices, sealed-side down, in a 9- by 12- by 2-inch casserole dish. Pour the hot sugar mixture over the apple slices. Mix the remaining 1/4 cup sugar with the cinnamon and sprinkle the mixture over the tops of the wrapped apples. Bake until golden brown, 35 minutes.

⅔ cup shortening

Steps:

She will only make it during the fall, but I have a hard time sticking to the seasonal stipulation because they are so darn good! Grandma swears that Jonathan apples are the only decent apples to use in this recipe, but any other tart apple would work just as well. Enjoy!

1 cup shortening (such as Crisco)
1 teaspoon salt
1/2 cup ice cold water
8 johnathan apples, peeled and cored
sugar

cinnamon
1 cup sugar
2 cups water
4 tablespoons butter

Steps:

  • Creating the pie dough:.
  • Blend flour, salt, and shortening together using a pastry cutter until the mixture is about the texture of corn meal.
  • Add 1/2 cup of ice cold water and mix the dough (I find using my hands for this is easiest). If dough is too dry, add a bit more water but sparingly.
  • Roll dough out on a lightly floured surface to 1/8 inch thickness. Cut into eight squares.
  • Filling the dumplings:.
  • Place one apple on a square of pie dough. Fill the apple with sugar, sprinkle with cinnamon, and dot with butter.
  • Bring corners of pie dough to top of apple and pinch shut.
  • Place finished dumplings in a 9x13 greased pan.
  • Syrup:.
  • Bring to boil sugar, water, and butter in a sauce pan. Boil for two minutes.
  • Pour syrup mixture around the dumplings.

1 recipe prepared pie crust dough

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.

Grandma would always make these for us when we were under the weather. She would cook a chicken in a pot with water, carrots, onions, and celery until it was done. Then she would pull all the chicken meat of the bone, and put it back into the broth (she would taste it after the meat was added and then add salt, pepper, and a little parsley). I always sat on the counter and watched her throw everything in a pan without measuring, and they were AMAZING. Finally, I asked her to write it down for me, and I'm glad I did. Posting on here so I never lose this recipe! She always rolled them out thin and used a knife to cut them into pieces. They were never the same shape, but that's how we knew when Grandma made them :) NOTE: Grandma learned how to make these from her mother, so this is the OLD school recipe for dumplings. I am writing it like she gave it to me. Scant teaspoon means a little under the measurement: not quite to the top but not 1/4 less.

  • Drop them one at a time into simmering chicken/broth. She would always drop a few then wait a bit, then drop a few more. She said this kept them from sticking together in the end. After they are all added, give a gentle stir (once or twice around the pot, then leave it alone).
  • Let the dumplings simmer in the chicken/broth mixture until they float to the top (about 15 minutes or so). I have let them simmer a longer, and that's fine. She would taste the broth one last time after the dumplings were done for seasoning before we got to eat them!

6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce.   • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.
