POTATOES AU GRATIN
Made simply with sliced potatoes, heavy cream, and grated cheese, potatoes au gratin is the ultimate comfort food.

Steps:
- Preheat the oven to 350°F and set an oven rack in the middle position. Grease an 8-inch (or 2-quart) baking dish with butter.
- In a large mixing bowl, toss the potatoes with the salt and pepper until evenly coated.
- Arrange some of the potato slices, edges overlapping, in a single layer on the bottom of the prepared baking dish. Sprinkle a quarter of the cheese over the potatoes, and then pour a quarter of the cream over the cheese. Repeat with the remaining potatoes, cheese, and cream, forming 4 layers. Pour any leftover cream over top.
- Place in the oven and bake, uncovered, for 60 to 75 minutes, or until the potatoes are tender when pierced with a knife and golden brown on top. Let the dish settle on the counter for about ten minutes. Sprinkle with fresh thyme, if using, and then serve.
- Make Ahead: This dish can be assembled a day ahead; cover tightly with plastic wrap (pressing the wrap directly against the potatoes so they don't discolor), store in the refrigerator, and bake before serving. The potatoes on top will still discolor a bit in the fridge, but it shouldn't be noticeable after baking.

GARLIC POTATOES GRATIN
An unbelievable rich twist on au gratin potatoes, this casserole develops a caramelized, cheesy, roasted-garlic crust as it bakes. However, this dish does not save well (leftovers tend to separate and become oily), so eat up! Wonderful with a ham dinner.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
- In the prepared dish layer 1/2 of the potatoes, 1/2 of the cheese, then the remaining potatoes.
- Melt the butter in a small skillet over medium heat. Saute garlic until fragrant and golden brown; pour over potatoes.
- Combine cream, salt and pepper; pour evenly over potatoes and sprinkle with remaining cheese.
- Bake in preheated oven for 75 minutes. Serve immediately.

These cubed, unpeeled red potatoes make an attractive side dish for any Christmas feast. Tarragon, onion and garlic give them terrific flavor.

- In a small bowl, dissolve bouillon in water. Stir in the vinegar, oil, tarragon, garlic and pepper. Place the potatoes in a greased 11x7-in. baking dish. Add tarragon mixture and stir to coat. Sprinkle with onion., Bake, uncovered, at 350° for 1-1/4 to 1-1/2 hours or until tender.

GARLIC POTATO GRATIN

- Preheat the oven to 425 degrees F. Heat 2 tablespoons olive oil in a large ovenproof skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 3 minutes. Add the garlic, chopped thyme, 1 teaspoon salt, and pepper to taste and continue cooking, stirring occasionally, until the garlic and onion are slightly golden, about 5 minutes. Add the wine and cook until mostly evaporated, about 2 minutes.
- Meanwhile, combine the breadcrumbs or matzo meal, parsley, chives, the remaining 1 tablespoon olive oil, and salt and pepper to taste in a bowl; reserve 2 tablespoons for topping.
- Arrange one-third of the potatoes over the onion in the skillet. Sprinkle with half of the remaining crumb mixture; top with another layer of potatoes. Repeat with another layer of the crumb mixture and potatoes. Pour the broth on top. Cover, bring to a boil and cook, undisturbed, 5 minutes.
- Uncover, sprinkle with the reserved crumb mixture, drizzle with olive oil and season with salt. Transfer the skillet to the oven; bake until the potatoes are golden brown and crisp on top, about 45 minutes. Let rest 5 to 10 minutes before serving.
GRATIN OF POTATOES WITH WHITE CHEDDAR AND TARRAGON

- Preheat oven to 400°F. Butter 13x9x2-inch glass baking dish. Layer 1/3 of potatoes in prepared dish, overlapping slightly. Sprinkle with 1/3 of salt and 1/3 of pepper. Sprinkle with 1/3 of tarragon, then with 1/3 of cheese. Repeat layering twice more with remaining potatoes, salt, pepper, tarragon, and cheese.
- Whisk cream and wine in medium bowl to blend. Pour over potatoes. Bake uncovered until potatoes are tender when pierced with knife and top is golden, about 1 hour. Let gratin stand 5 minutes before serving.
GRATIN OF POTATOES WITH GARLIC AND TARRAGON
This recipe I first cut out of Bon Appetit a yearor so ago. I have changed a couple of items due to taste and unavailability of certain items here in Holland. This is a wonderful dish to be served aside any grilled beef or chicken. The smell coming from the oven will drive everyone at home mad! The recipe may easily be doubled. It is best if you use a glass baking dish.

- Grease a glass baking dish. Layer 1/3 of potatoes on bottom of dish, slightly overlapping.
- Sprinkle with 1/2 of garlic, 1/3 of salt, 1/3 of pepper, 1/3 of tarragon, 1/3 of parsley and 1/3 of cheese. Repeat layers 3 times. (garlic will only go into 2 layers).
- In a bowl combine cream and wine. Wisk well. Pour all over baking dish.
- Bake at 400, uncovered, for 1 hour. Remove from oven and let set for 5 minutes.
- Serve.

- Butter 8x8x2-inch glass baking dish.
- Combine potatoes, cream, milk, tarragon and nutmeg in heavy large saucepan.
- Season generously with salt and pepper.
- Bring to boil over medium heat.
- Reduce heat; simmer 4 minutes.
- Using slotted spoon, transfer potatoes to prepared dish.
- Pour cream mixture over.
- Bake until top is golden brown, potatoes are tender and cream mixture thickens, about 1 hour.
- Let stand 10 minutes.
- Sprinkle with parsley and serve.
