MANGO MARGARITAS

2 limes
2 tablespoons coarse sugar (see Cook's Note)
Two 20-ounce jars mango chunks, drained
Ice, for blending
1 1/2 cups tequila
1 1/2 cups triple sec
1/2 cup granulated sugar

Steps:

  • Begin by zesting the limes. Pour the coarse sugar over the lime zest and toss with your fingers to combine. Set aside.
  • Throw the mango chunks into a blender. Top off the blender with ice. Pour in the tequila and triple sec. Add the granulated sugar and squeeze in the juice of the limes. Blend until completely smooth, adding more ice if necessary to get the consistency you want. Use a piece of one of the limes to moisten the rims of the glasses. Dip the rims in the lime sugar. Pour the drinks and serve immediately.

Steps:

  • Rub the rim of 4 rocks glasses with lime; dip in coarse salt. Fill three-quarters of the way with ice. Combine 1 cup tequila, 2/3 cup fresh lime juice, 1/3 cup orange-flavored liqueur and 2 teaspoons superfine sugar in a cocktail shaker. Shake well, then pour into the glasses. Garnish with lime.

Blackberry Margaritas image

2 pints fresh blackberries
1/4 cup sugar
Juice of 1/2 lime
2 cups sugar
Zest of 3 limes
1 lime wedge
2 cups tequila
1/2 cup triple sec
1/2 cup sugar
2 limes
Ice

Steps:

  • For the puree: Add the blackberries to a medium saucepan with the sugar and lime juice. Cook over low heat, covered, 20 to 25 minutes. Strain using a fine mesh strainer, pressing the berries to extract as much juice/puree as possible. Place in the fridge to cool completely.
  • For the lime sugar: Mix together the sugar and lime zest. Use a piece of lime to moisten the rim of each margarita glass, and then dip in the lime sugar.
  • For the margaritas: In a blender, add 1 cup of the tequila, 1/4 cup of the triple sec, 1/4 cup of the sugar, and the juice of 1 lime. Fill the blender with ice and blend until smooth. Then add as much blackberry puree as desired, 1/3 to 1/2 cup. Pour into 4 rimmed glasses and serve immediately. Repeat with the rest of the ingredients for the other 4 glasses.

While attending my grandfather's funeral in Oceanside California, I learned he had developed quite a reputation for making really awesome margaritas for parties he hosted or attended in the trailer park he lived in. I remember him best for the home made sausages he used to make for us when we visited. This is my little tribute to a great guy whom I will miss dearly. His original recipe made about 5 gallons. So, this is a simple math variation to scale it down to a serviceable dose of heaven in a glass.

4 1/2 ounces Cuervo tequila (Gold or 1800)
3 ounces Cointreau liqueur
1 1/2 ounces triple sec (Combier works best)
4 cups ice cubes (crushed)
4 -5 limes (fresh)

Steps:

  • Combine tequila, Cointreau, and Triple Sec in a medium pitcher with ice.
  • Before cutting limes, roll them on the counter under a cutting board or something flat and heavy, which will enable you to break apart the juice cells inside.
  • Cut 2 limes in half and squeeze juice into pitcher (minus any seeds). Add additional limes to suit you taste. Some limes are not a juicy as others, so you may need to play with this some.
  • Once you have a combination your happy with, poor into salted glasses, serve, enjoy!
