MOM'S HOMEMADE GRANOLA

Nonstick cooking spray
2 cups old-fashioned oats
1/2 cup dried cranberries
1 cup sliced almonds
1 teaspoon ground cinnamon
1/4 teaspoon salt
4 tablespoons (1/2 stick) unsalted butter
1/4 cup lightly packed brown sugar
1/4 cup honey, plus more for serving
1 teaspoon pure vanilla extract
Mixed berries, for serving
1 (2-pound) container nonfat plain yogurt

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a 9-inch square baking sheet with foil, allowing the foil to extend over the sides. Spray with nonstick cooking spray.
  • Mix the oats, cranberries, almonds, cinnamon and salt in a medium bowl.
  • Combine the butter, sugar and honey in a medium saucepan over medium heat, stirring until the butter melts and the mixture begins to boil. Add the vanilla and stir. Remove from the heat.
  • Pour the butter over the oats, mixing until well coated. Transfer to the prepared pan and, using a spatula, press the oats evenly into the pan.
  • Bake until the top is crisp and golden brown, 15 to 20 minutes. Transfer to a rack and cool. Using the foil as aid, lift out of the pan and place on a work surface. Crumble into pieces. Serve with berries, plain yogurt and drizzle with additional honey.

CHERRY, ALMOND AND CINNAMON GRANOLA

4 cups old-fashioned rolled oats
2 cups sweetened, shredded coconut
2 cups sliced almonds
1 1/2 cups dried cherries, chopped
1/2 cup vegetable oil
1/3 cup good honey
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon, and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.
  • Remove the granola from the oven and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.

We created this simple but universally likeable recipe that's flavored with vanilla and a blend of brown sugar and maple syrup. We love its pure flavors and balance of salty and sweet. It is the perfect canvas for personalization, so we've included some ideas for mix-ins at the end of the recipe.

3 cups regular rolled oats (not quick-cooking)
1 cup slivered almonds
1 cup large unsweetened coconut flakes
1 tablespoon kosher salt
1/2 cup packed light brown sugar
1/3 cup pure maple syrup
1/3 cup vegetable oil
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 300 degrees F. Lightly spray a rimmed baking sheet with nonstick cooking spray.
  • Combine the oats, almonds, coconut chips and salt in a large bowl and stir to combine.
  • Combine the brown sugar, syrup and oil in a medium saucepan over medium-high heat and cook, stirring often, until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the vanilla extract.
  • Pour the sugar mixture over the oats and stir until well combined, then spread the granola mixture in an even layer on the prepared baking sheet. Bake, stirring occasionally (see Cook's Note) until toasted and golden brown, 60 to 70 minutes. Remove to a wire rack to cool completely and store in an airtight container for up to 1 week.

1/4 cup vegetable or canola oil
4 tablespoons butter, melted, plus more for greasing the baking sheet
1 teaspoon kosher salt
1 cup brown sugar
1/2 cup honey
1/4 cup apple juice
1/4 cup molasses
1 tablespoon vanilla extract
1 1/2 cups crispy rice cereal, such as Rice Krispies
1 cup wheat germ
1/2 cup finely chopped pecans
1/2 cup shelled sunflower seeds
1/4 cup roughly chopped almonds
1/4 cup flax seeds

Steps:

  • Preheat the oven to 350 degrees F.
  • In a bowl, toss the oats with the oil, melted butter and salt. Spread the mixture out on 2 baking sheets and toast in the oven for 12 minutes, shaking the pans twice during the cooking time and making sure the oats don't burn. Set aside to cool a bit.
  • Reduce the oven temperature to 325 degrees F.
  • In a medium saucepan, combine the brown sugar, honey, apple juice and molasses. Stir the mixture until combined, then heat over medium heat, stirring, until barely bubbling. Stir in the vanilla extract.
  • Toss together the toasted oats, rice cereal, wheat germ, pecans, sunflower seeds, almonds and flax seeds. Pour in the sugar mixture, stirring as you pour. Toss to combine; it will be sticky!
  • Thoroughly grease a baking sheet or line it with greased foil. Tip the mixture onto the baking sheet, spread out and bake until golden, about 30 minutes. Let cool, then use a fork to make clusters. Store in a jar until ready to use.

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
  • Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.

1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
