1 pound spaghetti
Salt, for pasta water
1 1/4 pounds ground sirloin
2 teaspoons Worcestershire sauce, eyeball it
1 egg, beaten
1/2 cup Italian bread crumbs, a couple of handfuls
1/4 cup grated Parmesan, Parmigiano-Reggiano or Romano cheese
2 cloves garlic, chopped
Salt and pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1/2 teaspoon crushed red pepper flakes
4 cloves garlic, crushed or chopped
1 small onion, finely chopped
1 cup beef stock, available on soup aisle in market in small paper boxes
1 (28-ounce) can crushed tomatoes
A handful chopped flat-leaf parsley
10 leaves fresh basil leaves, torn or thinly sliced
Grated cheese, such as Parmigiano-Reggiano or Romano, for passing at table
Crusty bread or garlic bread, for passing at the table

Steps:

  • Preheat oven to 425 degrees F.
  • Place a large pot of water on to boil for spaghetti. When it boils, add salt and pasta and cook to al dente.
  • Mix beef and Worcestershire, egg, bread crumbs, cheese, garlic, salt and pepper. Roll meat into 1 1/2 inch medium-sized meatballs and place on nonstick cookie sheet or a cookie sheet greased with extra-virgin olive oil. Bake balls 10 to 12 minutes, until no longer pink.
  • Heat a deep skillet or medium pot over moderate heat. Add oil, crushed pepper, garlic and finely chopped onion. Saute 5 to 7 minutes, until onion bits are soft. Add beef stock, crushed tomatoes, and herbs. Bring to a simmer and cook for about 10 minutes.
  • Toss hot, drained pasta with a few ladles of the sauce and grated cheese. Turn meatballs in remaining sauce. Place pasta on dinner plates and top with meatballs and sauce and extra grated cheese. Serve with bread or garlic bread (and some good chianti!)

2 tablespoons, plus 1 cup pure olive oil
4 cloves garlic, finely chopped
2 large eggs
1/4 cup finely chopped fresh flat leaf parsley
1/3 pound ground chuck
1/2 pound ground veal
1/2 pound ground pork butt
1/2 cup freshly grated Parmesan
1/4 cup dried bread crumbs (made from fresh white bread)
Salt and freshly ground black pepper
1/4 cup pure olive oil
2 medium Spanish onions, finely chopped
4 to 6 cloves garlic, rubbed to paste
1 teaspoon red chili flakes
1/4 cup tablespoons tomato paste
4 (28-ounce) cans plum tomatoes and their juice, mashed up with a whisk
2 small Cubano peppers, whole, with some knife slits
16 sprigs fresh flat-leaf parsley
1 pound (number 8 or 9) spaghetti, cooked al dente
3 tablespoons freshly chopped basil leaves
Wedge Parmigiano-Reggiano
Fresh parsley sprigs, for garnish

Steps:

  • For the meatballs:
  • Heat 2 tablespoons of the oil in a small saute pan over medium heat. Add the garlic and cook until soft, about 1 1/2 minutes.
  • Whisk together the eggs and parsley in a large bowl. Add the browned garlic, meats and cheese and gently mix together until combined. Begin adding bread crumbs 1 tablespoon at a time until the mixture just holds together. Season with salt and pepper, to taste. Cover and refrigerate for at least 30 minutes. Form the meat into 1 1/2-inch balls.
  • Heat the remaining 1 cup of oil in a large saute pan over high heat. Add the meatballs and fry until golden brown on all sides. Carefully remove to a baking sheet lined with paper towels.
  • Heat the oil in a medium saucepan over medium-high heat. Add the onion, garlic and chili flakes and cook until the onion is soft. Add the tomato paste and cook for 30 seconds.
  • Stir in the tomatoes and let simmer, uncovered, for about 10 minutes. Add the peppers and parsley sprigs, season with salt and pepper, to taste, bring to a boil and cook for 10 minutes, stirring occasionally. Add the meatballs, reduce the heat to medium and continue cooking until the meatballs have cooked through and the sauce has thickened, about 30 minutes longer.
  • Drain the spaghetti and return to the pot. Add some of the sauce and toss to coat for about 30 seconds. Stir the chopped basil into the tomato sauce and ladle some of the sauce over the spaghetti and meatballs. Grate lots of Parmesan over the top and garnish with fresh parsley sprigs.

1/2 pound ground veal
1/2 pound ground pork
1 pound ground beef
1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil
1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds spaghetti, cooked according to package directions
Freshly grated Parmesan

Steps:

  • Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
  • Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
  • For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.
  • Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

2 lb ground beef
3/4 c oatmeal, uncooked
3/4 c milk
2 large eggs
1/2 large onion diced
1 tsp salt
1/2 tsp pepper
1 c flour
SPAGHETTI SAUCE
6-8 slice bacon
1/2 large onion diced **note i use one large onion for the entire recipe, and use half in meatballs, and the other half in my sauce**
4 can(s) 10.75 oz of tomato soup
3 c water
2 tsp salt
1 tsp pepper
8 Tbsp sugar
8 Tbsp worcestershire sauce
1 tsp ground oregano
AND 16-18 OZ OF SPAGHETTI NOODLES-BOILED

Steps:

  • 1. Meat balls..... In a Large bowl, add all ingredients together MINUS the flour. Start cooking your bacon, on a stove top, med. heat untill bacon is crispy, save grease, you will need this to cook your meatballs in. **I use my hands to mix the ingredients evenly,and roll into balls, the size of golf balls, and roll in flour. ** Add to bacon grease and cook till brown on all sides.
  • 2. While cooking meatballs, start your sauce. In a large boiling pan, bring All ingredients together, adding cooked bacon as well **chop up bacon into chunks** and add to the sauce. Simmer on low-med for about 45 to an hour, stirring continuously.Add meatballs to sauce once all browned. the meatballs with soak in all the juices.
  • 3. Boil 16-18oz of spaghetti noodles. follow package directions. drain noodles once done,plate and serve. I hope you will find my grandmother Anderson's Spaghetti and meatballs your new favorite spaghetti from here on out. ** Double the sauce if you like more sauce than meatballs**, Always better to have more sauce than not enough, incase you really love it. My kids LOVE this recipe, they wont eat any other kind of spaghetti, When I made this for the first time for my husband, I was so neverous, but, he took one bite, and got up from the table and came over and gave me a big kiss, and said, " it is different, but i like it, it kinda taste's like a sweet BBQ sauce" and he's been hooked ever since. Like I said, it does taste alittle different at first, but DON'T give up on it, Its even better the next day :) Enjoy~ and P.S. Don't forget the garlic bread :D

Easy spaghetti recipe passed on to me from my Granny in Oklahoma, which I have revised! She makes spaghetti & meatballs, but my husband and son like it this way!

1 (8 ounce) package spaghetti (or 16 oz.)
1 (1 lb) package ground beef
1 small onion, chopped
1 small green bell pepper, seeded and diced
1 (11 1/2 ounce) can tomato juice (or can use 2 small cans)
1 (6 ounce) can tomato paste
1/2-1 cup water
salt and pepper

Steps:

  • Cook spaghetti according to package directions.
  • I like to add the chopped onion and green bell pepper to the ground beef while browning the meat.
  • Drain fat.
  • Combine the tomato juice, tomato paste, and water with meat.
  • Simmer for 15-20 minutes.
  • *Can use V-8 juice instead of tomato juice, if you would like!

  • In a small bowl, soak the bread in the milk until the milk is absorbed, about 5 minutes. In a large bowl, gently mix the ground meats with the soaked bread, 2 tablespoons Parmigiano-Reggiano, 1/2 tablespoon of the garlic, 2 teaspoons salt, 1/4 teaspoon pepper, 1 tablespoon of the chopped basil and the oregano. Form the meat mixture into golf ball–size meatballs and transfer to a baking sheet. Cover and refrigerate until chilled, about 30 minutes.
  • Meanwhile, in a food processor, pulse the tomatoes with their juices until finely chopped. In a large saucepan, heat 2 tablespoons of the olive oil. Add the remaining 1 tablespoon minced garlic and cook over moderate heat until light golden, about 3 minutes. Add the crushed red pepper, chopped tomatoes and the basil sprig. Bring to a simmer and cook over moderately low heat until the sauce is slightly thickened, about 25 minutes. Discard the basil sprig and season the sauce with salt and pepper.
  • In a large skillet, heat the remaining 2 tablespoons of olive oil. Brown the meatballs in batches, about 3 minutes per side. Transfer the meatballs to the tomato sauce and simmer until cooked through, about 10 minutes. Discard the fat from the skillet. Add 1/4 cup of water and cook over moderately high heat, scraping up the brown bits from the bottom of the pan, about 2 minutes. Pour the water into the tomato sauce.
  • In a large pot of salted boiling water, cook the spaghetti until al dente. Drain and return the pasta to the pot. Pour in 2 cups of the tomato sauce and toss until the pasta is well coated, about 1 minute. Transfer the pasta to large shallow bowls. Spoon the meatballs and remaining tomato sauce over the spaghetti. Sprinkle with the remaining 2 tablespoons chopped basil. Serve at once, passing grated cheese at the table.
