GRANDMA'S CHICKEN CASSEROLE
From Grandma Smith. From this recipe, I make one large casserole and one 8-inch round casserole. I think the recipe could be halved easily, but when making for myself, I freeze one casserole for later use. Freezes well.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Place chicken breasts in a large pot; cover with water. Season with salt and pepper and bring to a boil; reduce heat, cover, and simmer until chicken is no longer pink in the center, about 15 minutes. Drain and let cool, 5 to 10 minutes. Chop into small pieces.
- Mix chicken, canned vegetables, chicken soup, sour cream, water chestnuts, onion, and Cheddar cheese in a large bowl. Pour into a large baking dish. Sprinkle crushed crackers over the top and dot with butter.
- Bake in the preheated oven until the filling starts to bubble and the topping browns, about 30 minutes.

GRANNY'S CHEROKEE CASSEROLE
My Granny always made this for Thanksgiving and Christmas dinner.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place ground beef and onions in a large, deep skillet. Cook over medium high heat until beef is evenly brown. Drain any excess fat.
- Add the soup, rice, tomatoes, garlic powder, thyme, oregano and sugar. Mix well and cook over medium heat for 10 minutes. Place in a 9x13 inch casserole dish.
- Top with cheese slices and bake for 15 to 20 minutes or until cheese is bubbling and browning.

GRANDMA'S CHICKEN AND RICE CASSEROLE
Steps:
- In a skillet over medium heat, cook onion and celery in the butter until tender; do not brown.
- Once the onion and celery are cooked, mix all ingredients together except cornflakes. Be sure to use cooked chicken and cooked rice!
- Pour into a 2-quart baking dish that has been sprayed with non-stick cooking spray.
- Sprinkle crushed cornflakes over top.
- Bake at 375 degrees F for 30 minutes.

Steps:
- Place chicken broth, squash and onions in saucepan.
- Simmer until veggies are tender, about 15 minutes.
- Add remaining ingredients except ½ of stuffing mix.
- Pour into 2 or 3 quart greased casserole dish.
- Top with remaining stuffing mix.
- Bake at 350 degrees for 30-40 minutes until bubbly and light brown.

Steps:
- Melt butter in a large skillet. Add celery, onion, and bell pepper; saute' until softened.
- Combine with remaining ingredients, mixing well. Add salt and pepper, to taste.
- Dump into 13x9" dish. Top with additional cheese, if desired.
- Bake at 350* for 35-45 minutes.
GRANNY'S APPLE SCALLOPED POTATOES
Steps:
- Preheat oven to 350°. In a small bowl, combine apple slices, sugar and lemon juice; toss to coat. Set aside. In an 8- or 9-in. cast-iron or other ovenproof skillet, heat butter over medium heat. Add onion; cook and stir until crisp-tender, about 3 minutes. Remove from the heat.
- Alternately arrange potato and apple slices in a single layer in same skillet. Combine 3/4 cup Parmesan cheese, cream, thyme, salt and pepper; pour over top.
- Bake, uncovered, 50 minutes. Top with bacon and remaining 2 tablespoons Parmesan cheese. Bake until potatoes are tender and top is lightly browned, 5-10 minutes longer. Let stand 10 minutes before serving. If desired, sprinkle with parsley.

- In a skillet on the stove over medium heat, allow the oil and pan to come to temperature. Preheat the oven to 350. Spray a 2 quart oven safe dish with cooking spray and set aside.
- Put the chicken into the skillet all at once and cook over medium heat until the chicken is cooked nearly through (when you see very little to no pink left in the chicken). Sprinkle the chicken with salt and pepper while it is cooking.
- In a medium sized bowl, mix together the garlic powder, onion powder, thyme, sour cream and cream of soup. Set aside.
