2 large firm, tart apples (granny smiths work great)
11/2 c all purpose flour
1/4 c granulated sugar (plus a little for dusting)
1/2 Tbsp baking powder
1/2 tsp salt
6 Tbsp cold butter (not margarine) , diced
1/2 c shredded cheddar (i use mild cheddar but sharp works well for more flavor)
1/4 c heavy cream
2 large eggs (1 for batter & 1 for wash)
(if desired, cinnamon and sugar mixture to sprinkle on after egg wash instead of plain sugar.)

Steps:

  • 1. Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
  • 2. Peel, core and slice apples into sixteenths. Place them in a single on prepared baking sheet. Bake in preheated oven for about 20 minutes or until the slices are dry to the touch and slightly colored. Allow to cool completely.
  • 3. Meanwhile, in a separate bowl, sift together flour, sugar, baking powder and salt. Set aside.
  • 4. In a separate bowl, blend together butter, cheese, cream and one egg.
  • 5. Coarsely chop cooled apple slices and stir into butter mixture.
  • 6. Mix butter mixture into flour mixture just until it begin to come together. (I mix with my hands so I am sure to not over mix.) It's ok to have large chunks of butter as this will add moisture to the scone as it bakes.
  • 7. Turn dough onto a lightly floured surface, and mold into a disc shape. Flour your rolling pin (or press it out with your fingers) and roll to about 1/2 inch in thickness. Cut into 6 triangular pieces.
  • 8. Line your baking sheet with parchment paper again. Place each scone on prepared pan leaving roughly 2 inches between the scones.
  • 9. Beat remaining egg in a bowl and brush on each scone and sprinkle each scone with sugar or cinnamon and sugar, if you prefer. Bake @ 375 degrees F. for about 20-30 minutes until firm and golden brown. Cool on wire rack.
  • 10. These freeze well prior to baking. To prepare from frozen, brush with egg wash, sprinkle with sugar and bake as above but for perhaps a little longer.

1 2/3 cups all-purpose flour, plus more for rolling
1 1/3 cups old-fashioned rolled oats, plus more for topping
1/4 cup plus 2 tablespoons light-brown sugar

1/2 teaspoon freshly grated nutmeg
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into pieces
1 1/2 cups diced Granny Smith apple (2 apples cut into generous 1/4-inch cubes)
2/3 cup cold buttermilk, plus more for brushing
Raw turbinado sugar, for sprinkling

Steps:

  • Preheat oven to 400 degrees. Whisk together flour, oats, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. Cut in butter with a pastry blender or rub in with your fingers. (The largest pieces should be the size of small peas.) With your fingertips, flatten butter pieces into small disks. Add apples and buttermilk, stirring until dough just comes together.
  • Turn out dough onto a lightly floured work surface. Pat dough into a 6-by-8-inch rectangle, and cut into twelve 2-by-2-inch squares with a floured knife. Place about 2 inches apart on parchment-lined baking sheets. Brush tops with buttermilk, and sprinkle with raw turbinado sugar and oats. Bake until golden brown, 20 to 22 minutes, rotating sheets halfway through. Let cool on sheets for 15 minutes. Serve warm or at room temperature.

Number Of Ingredients 12

3 cups all-purpose flour
6 tablespoons sugar
1 tablespoon baking powder
Pinch kosher salt
1 1/2 sticks very cold butter, cut into pea-size pieces
2 cups Irish Cheddar, grated
1 cup heavy cream
2 teaspoons malt vinegar
2 Granny Smith apples, julienned
1/4 cup creme fraiche
4 scallions, greens only, cut on a bias
1 pound corned beef, sliced

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the flour, sugar, baking powder and salt in the bowl of a food processor and pulse once. Sprinkle the butter evenly on top. Pulse, pulse, pulse - in 1-second bursts - until the mixture looks like grated Parmesan cheese.
  • Add 1 1/2 cups of the Cheddar and pulse, pulse, pulse, while slowly drizzling in the cream, until the dough starts to come together.
  • Form the dough into a disk, and transfer to a floured work space. Gently roll the dough with a rolling pin into a 1-inch-thick rectangle. Cut out 35 pieces of dough, using a 1-inch-diameter ring mold, and transfer to a parchment-paper-lined sheet pan.
  • Bake, turning the pan halfway through, until golden brown and cooked through, 14 to 15 minutes. Let cool.
  • Meanwhile, combine the malt vinegar and apples in a medium mixing bowl. Stir in the creme fraiche, scallions and remaining Cheddar, and mix well.
  • When the scones are cool enough to handle, halve them equatorially. Place 1 slice of the corned beef on the bottom half of the scone, and top with the apple, cheese and scallions, followed by the top half of the scone. Repeat until all of the scones are filled.

In place of the canned apples you can use six Granny Smith apples, peeled, diced and stewed in ½ cup water for 15 minutes. I had 4 ounces cream cheese left over from a cheesecake so I substituted in this for ½ cup of the Cheddar cheese. Yum!

2 cups granny smith apples, chopped
1/3 cup sugar
6 tablespoons butter
1 tablespoon baking powder
2 tablespoons coarse sugar
1/4 teaspoon salt
1/2 cup whipping cream

Steps:

  • Preheat oven to 400 degrees.
  • Mix flour, 1/3 cup sugar, baking powder and salt.
  • Cut in 4 tbsp butter til mixture resembles to coarse crumbs.
  • Place 2 tbsp butter in a saucepan and cook apples until tender and liquid is reduced.
  • Stir often and let cool, then mix the whipping cream in.
  • Add apple mixture into flour mixture and stir until dough clings together.
  • On a lightly floured board, knead 6 times.
  • On an ungreased baking sheet, pat dough down into an 8 inch circle.
  • Bake for 25 minutes or until done.
  • Let cool for a little bit then separate.
  • Top with coarse sugar.
  • Cut into 12 wedges, slightly separating.
  • Serve warm.
