GRANDMA DALY'S TUNA AND TATER CASSEROLE

This tuna casserole is an updated version of a recipe handed down from my grandmother, Elizabeth Kelleher Daly so of course it uses potatoes as its starch. She actually called it California Chicken. I guess to a native Yankee, the joke was that in California, tuna is chicken.

2 potatoes, peeled and cubed
4 carrots, peeled and cubed
¼ cup butter
½ small onion, chopped
2 cloves garlic, crushed
3 tablespoons all-purpose flour
3 cups milk
2 (5 ounce) cans tuna, drained
½ cup frozen peas
¼ cup butter, melted
1 sleeve buttery round crackers, crushed

Steps:

  • Place the potatoes and carrots into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 15 minutes. Drain vegetables, then cover to keep warm.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
  • Melt 1/4 cup butter in a large skillet over medium heat. Stir in onion and garlic; cook and stir until the onion is softened, about 3 minutes.
  • Sprinkle in the flour and and reduce heat to medium-low. Continue to cook and stir for about 1 minute, whisking out any lumps.
  • Whisk in the milk until the mixture thickens, 5 to 7 minutes.
  • Flake the tuna, then stir it into the white sauce along with the potatoes, carrots, and peas. Season with salt and black pepper.
  • Transfer the tuna mixture to the prepared baking dish.
  • Mix 1/4 cup of melted butter with the crackers together in a bowl.
  • Sprinkle the cracker mixture over the tuna and potatoes.
  • Bake in the preheated oven until the sauce is bubbly, about 30 minutes.

8 ounces fresh mushrooms (sliced)
1 tablespoon unsalted butter
2 cups chicken broth
¼ cup heavy cream
½ teaspoon xanthan gum
salt and pepper (to taste)
Homemade Pasta Dough (Pressed into fettuccine noodles)
11 ounces tuna in water (I used the family size pouch)
8 ounces frozen broccoli flowerets

Steps:

  • Saute the mushrooms in butter, add chicken broth allow to simmer for about 5 minutes. Stir in heavy cream/ Sprinkle the xanthum across the top of liquids while wising to combine. heat on low until thickened slightly. Set aside
  • Prepare pasta dough and form into noodles.
  • :Put your noodles in your casserole dish. Pour soup mixture over the pasta and stir in tuna and broccoli florets. Sprinkle top with Bake & Fry mix.
  • Bake at 350 for 30 - 40 minutes.

One night when I went to visit my dad, my grandma had made this tuna casserole for dinner. I had never had tuna casserole before and after tasting it, I fell in love. My sister and I asked for the recipe so we can make it ourselves at home. When we made it, it came out just as good as hers.

1 (10 3/4 ounce) can cream of chicken soup
1 (12 ounce) can solid white tuna (StarKist is what we used)
1 cup diced celery
1/4 cup finely chopped onion
1/2 cup Kraft mayonnaise
1/4 teaspoon pepper
4 hard-boiled eggs
1 cup crushed potato chips (Lays work best)
1/2 teaspoon salt (optional)

Steps:

  • Preheat oven to 400°F.
  • Biol eggs first (approx. 10 min) - let cool. Peel egg shells and slice.
  • Drain the tuna juice and break up with a fork in a bowl.
  • Mix cream of chicken soup, tuna, celery, onions, mayo, salt and pepper.
  • Add eggs and fold.
  • Place mixture in casserole dish.
  • Sprinkle the top with crushed potato chips.
  • Place in oven and bake for 20 minutes. If you are unsure if it is done, the chips should have a light brown crisp to them. Not all the chips will be brown, but a few should be.

2 Tbsp flour
1 tsp salt
1 cup milk
1 cup shredded cheddar cheese
2 cans (6 oz. each) tuna
1 can (15 oz.) peas
Plain potato chips for topping

Steps:

  • 1. Preheat oven to 350°F. Cook noodles as directed on package.
  • 2. In a medium saucepan combine butter, flour and salt over medium heat until melted. Add milk and whisk just to a low boil and begins to get thick. Add the cheese and stir until melted.
  • 3. Combine tuna, peas, noodles, and cheese sauce in a 2 qt baking dish. Stir until well mixed.
  • 4. Bake at 350°F for 30 minutes or until light brown on top. Add crushed potato chips to the top and serve!

2 (6 ounce) cans canned tuna, drained
2 (10 1/2 ounce) cans cream of mushroom soup
1 cup sour cream
1 cup mayonnaise
1 cup cheddar cheese, grated
4 -5 cups macaroni, cooked and hot
1 cup carrot, coarsely grated
1 cup celery, thinly sliced
1/4 cup green onion, thinly sliced
2 cups frozen peas
salt and pepper
crushed potato chips, for topping (optional)

  • Combine all ingredients except potato chips in a large bowl in order written.
  • Then put in a 9x13-inch baking dish and top with crushed potato chips if desired. (We like the topping).

1 1/2 cups uncooked elbow macaroni
1 egg (beaten)
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
1 cup small curd cottage cheese
1/3 cup sour cream
1/3 cup milk
1 cup shredded cheddar cheese
1 (6 3/4 ounce) can chunk tuna, drained
1 cup green peas (partially thawed)

Steps:

  • Preheat oven to 350 degrees.
  • Cook macaroni in lightly salted boiling water about 5-7 minute or until macaroni is aldente.
  • While macaroni is cooking, beat egg with salt, mustard in pepper in a medium bowl. Stir in cottage cheese, sour cream, milk and 1/2 of cheddar cheese. Save remaining cheese to sprinkle on top. Refrigerate.
  • Drain macaroni well and rinse with hot water. Place into 2 quart casserole and keep warm.
  • Stir egg mixture into cooked macaroni. Break tuna into chunks, carefully stir tuna into macaroni mixture. Sprinkle cheese on top. Cover with foil.
  • Bake in preheated oven 45 minute Remove cover and bake 10 minute longer or until lightly browned. Serve hot in casserole or spoon onto 6 plates.
  • This recipe is good doubled and can be frozen and re-heated in the microwave!

I know it sounds crazy, but trust me, this tuna casserole is one of the yummiest things ever. Comfort food madness! Before this, Grandma had never written out this recipe. She doesn't measure anything when cooking this, but it must be tasted throughout.

12 ounces egg noodles
1 (5 ounce) can tuna, drained and flaked, or more to taste
½ cup sour cream
½ cup milk, divided
1 (1 ounce) package dry onion soup mix (such as Lipton®)
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder, or to taste
⅛ teaspoon seasoned salt (such as LAWRY'S®), or more to taste
salt and ground black pepper to taste
2 tablespoons butter, cut into small pieces, divided
8 ounces ridged potato chips (such as Ruffles®)
2 cups shredded mozzarella cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Mix cooked noodles with tuna, sour cream, 1/4 cup milk, onion soup mix, Worcestershire sauce, garlic powder, seasoned salt, salt, and pepper. Taste and adjust seasonings as desired.
  • Lay 1/2 of the butter across the bottom of a 2-quart, microwave-safe casserole dish. Crush potato chips, then sprinkle 1/4 of the crushed chips over the bottom and press to flatten.

1/2 cup baby frozen peas, thawed

3/4 cup finely chopped onion

Steps:

  • Cook box of noodles per instructions and when ready, rinse in cold water. In the mean time, preheat oven temperature to 400 degrees F. Drain cans of tuna. Quick thaw frozen peas in warm water. Prepare chopped vegetables.
  • Butter bottom and sides of glass casserole dish (2-3 quart size.) with 1/4 stick of butter
  • In separate bowl, place mushroom soup, chopped veggies, drained tuna, salt, pepper and mix together lightly. Add chilled noodles to blend equally. Pat remaining butter on top to crisp it while baking.
  • Bake in middle of oven for 30 to 45 minutes depending on desire for topping crispness. Sprinkle over Kraft Shredded Cheddar Cheese once taken out of oven to cool.

vegetable cooking spray
2 Tbsp olive oil
1 Tbsp butter, unsalted
1 small onion, chopped
12 oz bag frozen artichokes
1 1/2 c non-dairy heavy cream substitute
1/2 c vegetable broth
1 lb tuna steaks/pieces
salt and pepper to taste
capers
2 tsp cumin or curry
red pepper flakes

Steps:

  • 1. Spray a large pan (12 inch, if you have one) with cooking spray and heat at med-high.
  • 2. Add butter and evenly distribute it throughout the pan.
  • 3. Place each piece of tuna flat on the pan and let cook for about 3 minutes per side (slightly longer if not fully thawed).
  • 4. When tuna is finished, place on a plate and set aside.
  • 5. Add the other tablespoon of butter and add the onion. Sauté until clear to golden.
  • 6. Add artichokes to the pan and cook for about 5 minutes, or until slightly tender. Be sure to stir often.
  • 7. Next is where you would add capers to your liking. If you do not like capers, it is a trivial part to the dish that could be omitted to the cook's taste.
  • 8. Add vegetable broth and lower heat to medium. Let simmer until broth has gone down slightly (about 5 minutes).
  • 9. Next add the tuna back into the pan and add the spices, being sure to cover both sides of the tuna.
  • 10. Add the heavy cream substitute and let simmer for another 5 minutes, or until the liquid evaporates a little and leaves a thick cream.
  • 11. Serve alone or over pasta cooked in 5 parts water and 1 part vegetable broth.
