SWEET ZUCCHINI RELISH



Sweet Zucchini Relish image

My mother's sweet zucchini relish is a family favorite. It's delicious on hamburgers and hot dogs.

12 cups shredded unpeeled zucchini
4 cups chopped onion
5 tablespoons canning salt
1 red bell pepper, chopped
1 green bell pepper, chopped
6 cups white sugar
2 ½ cups white vinegar
1 tablespoon cornstarch
¾ teaspoon ground nutmeg
¾ teaspoon ground turmeric
1 ½ teaspoons celery seed
½ teaspoon ground black pepper

Steps:

  • Place the zucchini and onion in a large, non-metallic bowl, and sprinkle the salt overtop. Use your hands to evenly mix the salt throughout the zucchini. Cover, and refrigerate overnight.
  • The following day, drain the zucchini in a colander, and rinse well with cool water. Squeeze out excess water and set aside. Place the red and green bell pepper, sugar, vinegar, and cornstarch into a large pot. Add the nutmeg, turmeric, celery seed and pepper. Stir to combine, then add the drained zucchini. Bring to a boil over medium-high heat, then reduce the heat to medium-low, and simmer 30 minutes.
  • Meanwhile, sterilize 7 one-pint jars and lids to hold relish. Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all).

Easy Zucchini Relish image

This is a delicious relish that can be used in any way you use regular pickle relish. This recipe makes about 14 jelly-size jars.

12 cups shredded zucchini
4 cups chopped onion
5 tablespoons salt
1 tablespoon dry mustard
1 ½ teaspoons celery seed
¾ teaspoon ground nutmeg
½ teaspoon ground black pepper
2 ½ cups apple cider vinegar
5 cups white sugar
1 red bell pepper, chopped
14 half pint canning jars with lids and rings

Steps:

  • Toss zucchini and onion with salt in a large bowl. Refrigerate overnight to drain. Rinse vegetables with cold water and drain well.
  • Mix dry mustard, celery seed, nutmeg, and black pepper in a bowl.
  • Heat vinegar, sugar, spice mix, zucchini mixture, and red bell pepper in a large pot over medium heat. Simmer until vegetables are tender, about 25 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the vegetables into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 25 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all).

This has been in my family for generations. We use it for burgers, hotdogs, sandwiches, and also on the holidays as a condiment to go with the meat.

6 large pickling cucumbers
1 1/2 lb green bell peppers
1 1/2 lb red bell peppers
3 large onions
2 c celery
1/2 c kosher salt
4 c sugar
1 c flour
2 Tbsp dry mustard
2 Tbsp turmeric, ground
2 Tbsp celery seed
2 c apple cider vinegar
2 c water

Steps:

  • 1. using a food processor or food mill, chop the vegetables to a medium-fine texture.
  • 2. Place the vegetables in a bowl with the salt and enough water to cover. Stir the mixture, and place a plate or a piece of plastic wrap over the bowl and let stand for 1 1/2 hours.
  • 3. Drain all the liquid from the vegetables and put them in a large pan.
  • 4. In a large bowl, combine sugar, flour and spices. mix well. Add vinegar and 2 cups of water then whisk till smooth. Pour over vegetables. combine well.
  • 5. Heat to boiling, reduce heat and cook stirring constantly until relish becomes very thick (approximately 30 to 35 minutes).
  • 6. Fill clean hot jars, leaving 1/2 inch space below rim. Wipe the rims clean and seal.
  • 7. Place jars upside down for 10 minutes. Return to upright position and cool.
  • 8. Check the bottles to ensure they have sealed. Label and store in a dry place. Relish is good for 1 year.

1 teaspoon turmeric
3 cups apple cider vinegar
1 teaspoon dry mustard
1 teaspoon coarse black pepper
1 teaspoon celery seed

Steps:

  • Grate zucchini, onions and peppers in a food processor. Place in a large bowl and add salt. Mix well. Cover and let stand at room temperature 8-10 hours.
  • Rinse thoroughly in a large strainer and drain well. Use the back of the spoon to push mixture against strainer to release as much water as you can.
  • Place zucchini mixture in a large stockpot and add remaining ingredients.
  • Mix well and bring to a boil. Keep at a low boil for 30 minutes, stirring occasionally.
  • Place in sterilized pint jars and process in a hot water bath for 15 minutes (adjust for altitude).

10 cups fresh zucchini, unpeeled and ground (about 4 large)
4 cups ground onions
5 tablespoons salt
2 1/4 cups white vinegar
4 1/2 cups sugar

1 green pepper, finely chopped

Steps:

  • Mix first 3 listed ingredients together well and let stand overnight.
  • In morning, drain; rinse in cold water and drain again.
  • In large kettle mix the next 8 ingredients and bring to a boil.
  • After a boil is reached, add the zucchini mix along with the green and red sweet pepper.
  • Bring to a boil again.
  • Simmer uncovered, stirring occasionally, for 30 minutes.
  • Pour into hot jars and process in hot water bath for 5 minutes, to seal.

I'll be honest-I never tried this relish when my grandma served it because I wasn't too keen on the look of it. This year I "inherited" 15 zucchini and have been told I'll be "inheriting" more. Out of desperation, I decided to make a batch of her relish. I reasoned that everyone else in the family loves it-I'll give it to them. Now that I've actually eaten it-I'm not sharing. This is not only a great way to use up a bumper crop of zucchini it's a great condiment!

3 large zucchini, peeled and seeded
1/2 cup table salt
5 large cooking onions, sliced fine
5 cups sugar
6 cups vinegar
2 tablespoons vinegar
4 tablespoons mustard seeds
2 teaspoons turmeric
6 tablespoons flour

Steps:

  • Slice zucchini as thinly as possible (food processor is a big help to do this).
  • Sprinkle with the salt.
  • Let sit overnight.
  • Wash and drain the zucchini.
  • Put in a large pot, add onions to the zucchini and mix well.
  • Add sugar and 6 cups vinegar.
  • Cook on a medium-high heat, stirring often-It will easily scorch because of the sugar content.
  • In the meantime, in a separate dish mix together the mustard seed, turmeric and flour well. Add the 2 tbsp of vinegar to make a runny paste-You may need to add more vinegar.
  • Add mixture to pot and stir constantly.
  • Continue to cook mixture until it thickens (approx. 1 - 1 1/2 hour).
  • Scoop into sterilized jars and seal.

1 red bell pepper, stemmed and seeded
4 onions, peeled
3 tablespoons salt

2 ¼ cups vinegar
1 teaspoon celery seed
1 teaspoon ground turmeric
¼ cup cornstarch
12 half pint canning jars with lids and rings

Steps:

  • Run zucchini, red bell pepper, and onions through a meat grinder. Transfer ground zucchini mixture to a large bowl; sprinkle with salt. Refrigerate zucchini mixture, overnight or at least 10 hours.
  • Pour zucchini mixture into a large pot; add sugar, vinegar, celery seed, and turmeric. Bring to a boil, stirring constantly, for 15 to 20 minutes. Stir cornstarch into mixture; continue boiling until thickened, about 5 more minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. This is scrumptious. It is my Grandma Florence's, and she called it "Hamburger Relish". Simple and easy, I can it in pints and give it for Christmas. I've never found any as good.

4 quarts ground cucumbers
1 quart ground onion
4 cups ice cubes
5 tablespoons sea salt
6 cups vinegar
6 cups sugar
2 teaspoons turmeric
1 1/2 teaspoons celery seeds
3/4 teaspoon ground cloves
2 tablespoons mustard seeds

Steps:

  • Combine cukes, onions, ice and salt.
  • Let stand for 2 hours,.
  • then drain.
  • Mix the next 6 ingredients in a large pot.
  • Bring to a boil, add ground cuke mixture, and cook for 20 minutes, or until it begins to thicken.
  • While still hot, seal in sterilized jars.
  • As far as preparation time, I use Grandma's old hand grinder, so I'm sure it would be much faster with a motorized food grinder.

Zucchini relish that gives a sweet and spicy flavor that is perfect to use as a condiment or for ingredients in deviled eggs, tuna salad, and much more!

2 1/2 pounds zucchini, 8-10 small-medium zucchini
3 large sweet onions
1 red sweet pepper
1 yellow sweet pepper
2-3 jalapeno peppers
3 Tablespoons Kosher salt
5 cups apple cider vinegar
2 cups sugar
1 teaspoon turmeric
1 teaspoon nutmeg
1 teaspoon dry mustard
1 teaspoon arrowroot or cornstarch powder

Steps:

  • Place sliced zucchini in a food processor and pulse several times until they become small pieces. Pour zucchini into a large colander in the sink to drain.
  • Cut onions and peppers into slices. Place them into the food processor, in batches if needed, and pulse until they become the same size as the zucchini. Place onions and peppers into the colander with the zucchini.
  • Add 1 tablespoon of salt to the vegetables and stir well to coat. Let the vegetables drain for at least 30 minutes.
  • With about 10 minutes left of draining, in a large stockpot, mix together the remaining ingredients. Bring to a boil.
  • Rinse the vegetables to remove some of the salt and then add them to the pot and return to a boil. Reduce heat and simmer for 30-45 minutes.
  • Remove pot from heat, and let cool to room temperature.
  • When liquid is cool, using a slotted spoon pour relish into an air tight container or sterilized mason jars. Add some of the liquid to barely cover the top of the relish.
  • Refrigerate for at least 24 hours before eating.

I usually end up giving a jar of this to everyone who tries it. Prep time is approximate and does not include sitting overnight. I cut my prep time by using a food processor to grate the veggies.

10 c. shredded unpeeled zucchini
4 c. chopped onion
5 T. pickling salt
1 lg. red bell pepper (chopped)
1 lg. green bell pepper (chopped)
6 c. granulated sugar
2 1/2 c. cider vinegar
1 T. cornstarch
1 T. dry mustard
1 T. ground turmeric
2 tsp. celery seed
1 tsp. mustard seeds
1/2 tsp. ground black pepper
7 pint glass preserving jars (with lids and bands)

Steps:

  • Combine shredded zucchini and chopped onion in a large, non-metal bowl, and sprinkle with pickling salt. Cover, and refrigerate overnight.
  • The following day, prepare the boiling water canner. Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
  • Drain the zucchini in a colander, and rinse well with cool water. Squeeze out excess water and set aside.
  • In a large pot over medium-high heat, add the red and green bell peppers, sugar, vinegar, cornstarch, dry mustard, turmeric, celery seed, mustard seed and pepper. Stir to combine, then add the drained zucchini. Bring to a boil, then reduce the heat to medium-low, and simmer 30 minutes.
  • Immediately pack the relish into hot jars leaving 1/4-inch headspace. Remove air bubbles and wipe the rims. Center lids on jars. Apply bands and adjust to fingertip tight.
  • Process jars in a boiling water canner for 10 minutes (start timing when the water returns to boil) adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

A family recipe, great with pork, fish, and really many things.

4 cups green tomatoes cored and chopped
4 cups red tomatoes cored and chopped
1 cup onion finely chopped
2 bell peppers finely chopped
2 ribs celery finely chopped
1/6 cup pickling salt
1/2 tsp celery seed
1 tsp ground mustard
1 clove garlic minced
1 tbsp allspice
1 tbsp cloves
1 tbsp broken cinnamon bark
2 cups apple cider vinegar
2/3 cup packed light brown sugar
1 cayenne chili finely chopped (optinal, this is a new generation addition)

Steps:

  • 1. Combine chopped vegetables and salt in a large non-reactive pan. Cover and let stand in a cool place (65-70ºF) for 10-12 hours. 2. Pour vegetables into a colander over the sink and let drain. Rinse with cool water and squeeze out any excess liquids. 3. Tie the pickling spice mix in a cheese cloth bag. 4. In a large stainless steel pan, combine vinegar, spice bag, chopped garlic and the vinegar. Pout the vinegar mixture over high heat and bring to a boil, stirring until sugar is dissolved. 5. Add the drained vegetable mixture and bring to a boil. Reduce heat to med-low and boil gently, stirring often, for 1 hour. If you are using the cayenne chili, I usually add it at the end of the boil to only half the recipe so I have some that is hot and some that is not. 6. Fill hot jars and process for 10 minutes. Makes 4 half-pint jars.
