GRANDMA CAROL'S SOUTHERN SWEET POTATO CASSEROLE
The best sweet potato casserole ever! This recipe was handed down to me by my mother-in-law. I get so many compliments on this dish and so many requests for this recipe. This really makes me look forward to Thanksgiving! You can use whatever chopped nuts you prefer.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir mashed sweet potatoes, white sugar, 1/2 cup butter, milk, eggs, cinnamon, and vanilla together in a large bowl until smooth; transfer to a casserole dish.
- Mix brown sugar, pecans, coconut, and 1/2 cup butter in a bowl; spread atop the filling.
- Bake casserole in preheated oven until topping is golden brown, about 30 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 1 1/2-quart casserole dish.
- Mix mashed sweet potatoes, white sugar, milk, butter, eggs, vanilla extract, and salt together; transfer potato mixture to the prepared baking dish.
- Mix brown sugar and flour for topping together in a large bowl. Add pecans, coconut, and butter; mix until well combined. Sprinkle over the casserole.
- Bake in the preheated oven until topping is golden brown, about 25 minutes.

- Mix the mixture ingredients together in a bowl; pour mixture into a greased 8" x 8" glass pan.
- Mix the topping ingredients into a loose mixture; this is best done by melting the butter and slowly stirring it into the brown sugar and flour mixture. Once it is mixed completely, sprinkle it on top of the mixture in the glass pan.
- Cook for 35 minutes at 350 degrees, uncovered.

This is an EASY recipe that my grandmother used to make. This is one of my favorites of hers. I don't like sweet potatoes, but I love these. I got the recipe from a friend of hers (she has passed) and decided to share. It's delicious and a sweet treat.

- Boil sweet potatoes until fork tender. Allow to cool. Peel the sweet potatoes and slice into 1" slices.
- In a bowl, stir together karo syrup, sugar, cinnamon, nutmeg, and vanilla.
- Arrange sweet potato slices in 11"x14" casserole dish.
- Pour mixture over potatoes.
- Slice margarine into slices and arrange on the top.
- Bake uncovered at 350 degrees for 20 minutes. Remove and mix the slices around. Put back in oven for 10-20 minute Serve hot.

I don't really know where this recipe came from, but my husband brought it home one day from a lady he used to work with. It was two very old looking recipe cards photo-copied. I'm putting it here for reference; I always lose it and am rummaging through my cookbooks and pantry every year at Thanksgiving. I'm not a fan of sweet potatoes, but my husband and everyone else just loves it! It's pretty east to throw together, too!
