2 cups flour (perfect)
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 (8 ounce) package cream cheese
1/2 cup butter
2 -3 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Beat oil, sugar, pumpkin and eggs until blended.
  • Add remaining dry ingredients gradually.
  • Prepare 9x13 pan.
  • Spread batter in pan and bake in 350° oven for 25-30 minutes.
  • Cool.
  • For frosting, cream all ingredients together until well blended--smooth and creamy.
  • Frost bars.

This recipe is from the 1940's, from my Grandma's collection. I make them every year for Halloween and Thanksgiving. Wonderful moist texture and frosting, makes a large cookie sheet. May decorate with candy corn for Halloween!

1 cup vegetable oil
4 eggs (beaten)
1 (15 ounce) can pumpkin
2 cups flour
2 teaspoons baking powder

1/2 cup raisins (optional)
candy corn (optional)
frosting
5 tablespoons butter (softened)
4 ounces cream cheese (softened)
1 teaspoon vanilla
1 tablespoon milk
1/8 teaspoon salt
2 1/2 cups powdered sugar

Steps:

  • Bars.
  • Use electric mixer.
  • Mix sugar and oil, add eggs and pumpkin.
  • Add dry ingredients, mix well, pour into greased jelly roll pan. Bake at 350 for 30 minutes. Cool.
  • Frosting.
  • Beat with mixer, spread on cooled bars.
  • Oh so yummy!

You may want to halve the recipe unless you are making for a crowd or to give away. It makes a lot. It is without a doubt the best pumpkin roll I've ever had!

3 eggs, beaten
1 cup white sugar
⅔ cup pumpkin puree
¾ cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves

1 (8 ounce) package cream cheese, softened
2 tablespoons butter
1 (16 ounce) package confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
2 teaspoons confectioners' sugar for dusting, or as needed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 12x17-inch jelly roll pan and line with parchment paper; butter the parchment paper. Generously dust a kitchen towel with confectioners' sugar.
  • Beat eggs, white sugar, and pumpkin together in a bowl until creamy.
  • Sift flour, baking soda, cinnamon, cloves, and nutmeg together in a separate bowl; gradually stir into egg mixture. Stir to combine. Spread batter evenly into the prepared pan.
  • Bake in the preheated oven for exactly 10 minutes.
  • Immediately turn cake onto the prepared kitchen towel. Starting at a long end, roll up pumpkin cake and towel. Let rolled cake rest for 10 minutes.
  • Beat cream cheese, butter, 16-ounce package confectioners' sugar, and vanilla extract together in a bowl until smooth; fold in pecans.

2 cups pumpkin puree

2 teaspoons ground cinnamon
1 teaspoon salt
2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.

1-2/3 cups sugar
1 cup canola oil
1 can (15 ounces) pumpkin
2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
ICING:
6 ounces cream cheese, softened
2 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a bowl, beat the eggs, sugar, oil and pumpkin until well blended. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until set. 1 cup evaporated milk
1 cup milk
2 pie crusts, unbaked
12 ounces Cool Whip

Steps:

  • Combine pumpkin, brown sugar and white sugar together in large bowl. Add flour, and all spices. Stir in eggs until well blended. Stir in evaporated milk and regular milk. Pour into 2 unbaked pie shells. Sprinkle with more cinnamon. Bake 350 for 50-55 minute.
  • Makes 2 pies.

Steps:

  • Preheat oven to 350ºF (180ºC).
  • Line a standard sized loaf pan with tin foil.
  • Combine the pumpkin, eggs, oil, and vanilla. Add the sugar and mix well.
  • Combine the flour, salt, baking soda, baking powder, and spices. Add to the wet ingredients and mix just until combined.
  • Pour into the loaf pan and bake for about 45 minutes or until a toothpick comes out clean. Allow to cool before removing from pan. The tin foil will peel right off.
