These make a wonderful healthy treat! Use chopped nuts in place of or with the dried fruit if you like.

¼ cup peanut butter
⅓ (12 ounce) jar honey
¼ cup brown sugar
1 cup granola
1 cup quick cooking oats
1 cup puffed rice cereal
½ cup chocolate chips
½ cup chopped dried mixed fruit

Steps:

  • Melt peanut butter and honey together in a saucepan over medium heat. Dissolve brown sugar into the peanut butter mixture; bring to a simmer for 2 minutes.
  • Mix granola, oats, rice cereal, chocolate chips, and fruit together in a large bowl; pour peanut butter mixture over the granola mixture and fold to coat.
  • Grease a cake pan. Pour the granola mixture into the prepared pan and press into a flat layer. Cool at room temperature until set, about 15 minutes before cutting into bars.

My grandmother and I created this homemade granola recipe one day, and it is currently loved and requested by the rest of my family, including my other grandma who used to be anti-granola! My favorite ways to serve it are in coconut Greek yogurt or just in a bowl with milk. Simple and awesome.

nonstick cooking spray
4 cups old-fashioned oats
1 ½ cups chopped pecans
1 ½ cups slivered almonds
1 cup coconut flakes
½ cup vegetable oil
⅓ cup packed brown sugar
⅓ cup honey
¼ cup maple syrup
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
¾ teaspoon salt
2 cups dried cranberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
  • Mix oats, pecans, almonds, and coconut flakes together in a large bowl. Set aside.
  • Combine vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt in a medium saucepan over medium heat. Stir gently until it begins to boil; remove from heat. Pour over oat mixture and fold together until dry ingredients are well coated. Spread granola onto the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes. Stir and continue to bake on the top rack until golden, about 5 minutes more.
  • Remove from the oven and let cool, 20 to 30 minutes. Toss with cranberries. Store in an airtight container.

If you're tired of the commercial granola bars, give this one a try. The manager at the gym I go to recommended this recipe and a friend was kind enough to make a batch for me. Delicious. (Original source appears to be a magazine, though I don't know which one.)

1 large egg white
1/2 teaspoon ground cinnamon
3 tablespoons vegetable oil
1/2 cup light brown sugar
1/2 cup natural-style peanut butter
1/4 teaspoon salt
1/2 cup sliced almonds
1/2 cup dried cranberries
1/2 cup old fashioned oats
1 tablespoon water

Steps:

  • Preheat oven to 300 degrees.
  • Line an 8 inch square baking pan with two criss-crossed rectangles of parchment paper, leaving a 2-inch overhang at opposite ends.
  • In a large bowl, combine oats, almonds and cranberries.
  • In a small saucepan, whisk together oil, brown sugar, peanut butter, cinnamon, salt and water over low heat until the sugar has dissolved, about 5 minutes.
  • Let cool slightly; whisk in egg white.
  • Pour over oat mixture; stir until moistened.
  • Spread evenly in bottom of pan; smooth top.
  • Bake until top is firm, about 30 minutes. Note: The firm top is your best indicator that it's ready - if it's too soft the granola will be crumbly, if it's too hard it will be too brittle.
  • Let cool 10 minutes.
  • Lift out of pan, using paper as handles.
  • Let cool completely, cut into bars with a serrated knife.

Vegetable cooking spray
1 egg white
1/2 cup chunky peanut butter
1/3 cup brown sugar
1/4 cup honey
1/2 cup (1-stick) unsalted butter, melted
2 cups old fashioned oats
1/4 cup slivered almonds, toasted, *see Cook's Note
1/3 cup miniature chocolate chips

Steps:

  • Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
  • Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
  • In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
  • Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.
  • *Cook's Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly browned, about 8 to 10 minutes.

8 oz semi-sweet chocolate chips or roughly chopped couverture
3/4 cup heavy cream
1 cup light Karo Syrup
1 cup sugar
1 cup peanut butter, any kind
6 cups granola, with or without raisins, low fat okay

Steps:

  • Bring the heavy cream to a boil in a small saucepan. Turn off the heat and add the chocolate. Set aside. (Do not stir at this time!) In another small saucepan, combine the Karo syrup and the sugar and bring to a boil. Lower the heat and stir constantly until the sugar dissolves. Remove from the fire and add the peanut butter and stir until melted. Pour over granola, stir to mix and press evenly into a greased 13"x9" glass pan. By now, the chocolate should be mostly melted in the heavy cream. Using a rubber spatula, stir the mixture until all the chocolate is melted. Pour evenly over the granola mixture and let set at room temperature. Cut into bars and serve.

  • Stir the peanut butter, honey and coconut oil together in a medium saucepan. Cook over medium heat, stirring occasionally, until the mixture reaches a simmer. Continue to simmer for 1 minute, stirring often so that the bottom of the mixture does not burn. Remove from the heat.
  • Add the vanilla and salt, and stir until combined. Add in the oats and almonds, and stir until completely combined. (Optional step: If you would like the chocolate chips not to melt, I recommend chilling transferring the granola to the refrigerator at this point for about 15 minutes, or until it reaches room temperature.) Then stir in the chocolate chips until combined.
  • Press the granola firmly and evenly into the bottom of the prepared pan. (I use the bottom of a measuring cup to help press it down so that it’s nice and flat.) Sprinkle a few extra chocolate chips on top if you would like. Then cover and refrigerate the granola bars for about an hour or so, or until they are chilled.
