1 1/2 cups flour, sifted
1 teaspoon baking soda
1 teaspoon salt
3/4 cup brown sugar, firmly packed
3/4 cup granulated sugar
1 cup shortening
2 eggs
1 teaspoon water, hot
1 cup nuts, chopped (optional)
1 teaspoon vanilla or 1 teaspoon artificial vanilla flavoring
1 -2 package chocolate chips (not chocolate flavored)
2 cups oatmeal

Steps:

  • Preheat oven to 375 degrees
  • In large mixing bowl add the sugar, eggs and shortening. Blend together.
  • Slowly add the flour, salt and baking soda and mix well.
  • Add the water, vanilla and chocolate chips and mix.
  • Add oatmeal and mix until all ingredients are blended together.
  • Using a spoon, drop dough onto cookie sheet. Bake for 8-10 minutes or until cookies appear a golden brown. Repeat until all dough is used.
  • The size of the spoon will determine the size of the cookie.

1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened (2 sticks, 1/2 pound)
3/4 cup granulated sugar (white)
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels (12-ounce package)
1 cup chopped nuts

Steps:

  • COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
  • BAKE in preheated 375-degree [Fahrenheit] oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.
  • PAN COOKIE VARIATION: PREPARE dough as above. Spread into greased 15"x10" jelly-roll pan. Bake in preheated 375-degree [Fahrenheit] oven for 20 to 25 minutes or until golden brown. Cool in pan on wire rack.
  • FOR HIGH ALTITUDE BAKING (>5,200 feet): INCREASE flour to 2 1/2 cups; add 2 teaspoonfuls water with flour; reduce both granulated sugar and brown sugar to 2/3 cup each. Bake at 375 degrees Fahrenheit, drop cookies for 8 to 10 minutes and pan cookies for 17 to 19 minutes.

1 cup raisins
1 teaspoon vanilla extract
1 cup butter flavored shortening
1 cup packed brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
2 teaspoons baking soda

1 teaspoon ground cinnamon
2 cups quick cooking oats
½ cup chopped walnuts

Steps:

  • Beat eggs, and stir in raisins and vanilla. Refrigerate for at least an hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together shortening, brown sugar, and white sugar until light and fluffy. Combine flour, baking soda, salt, and cinnamon; stir into the sugar mixture. Mix in raisins and eggs, then stir in oats and walnuts. Roll dough into walnut sized balls, and place 2 inches apart on ungreased cookie sheets.
  • Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Cool on wire racks.

1-1/2 cups shortening
2 cups sugar
4 large eggs, room temperature
4 teaspoons water
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
4 cups quick-cooking oats
2 cups chopped raisins
1 cup chopped walnuts
Additional sugar or colored sugar

Steps:

  • Preheat oven to 350°. Cream shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in water. In another bowl, whisk together flour, baking soda, cinnamon and salt; add to creamed mixture, and mix well. Stir in oats, raisins and walnuts. , On a surface sprinkled with additional sugar, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter in desired shapes. Place 2 in. apart on greased baking sheets. Bake until set, 12-15 minutes. Remove to wire racks to cool.

This was the first cookie recipe I made outside Home Ec class. I was in high school. We had a tiny, tiny kitchen with an apartment sized stove. My mom wasn't into cooking at all and didn't have baking sheets, so cookies got baked in a couple of pie tins, four at a time. I clipped this from the Nestle chocolate chip wrapper so many years ago. The recipe now is different.

1/2 teaspoon salt
1/2 cup softened margarine
6 tablespoons granulated sugar

1 large egg
6 ounces nestle semisweet chocolate morsels (1 cup)
1/2 cup coarsely chopped nuts
