GRANDMA'S OLD FASHIONED OATMEAL

This isn't my Grandmother's recipe. I have had it over 10 years and don't remember where I got the recipe. I am guessing at the time it takes to make this.

2 1/2 cups water
1/8 teaspoon salt
2 cups dry oatmeal
2 tablespoons sugar
1/2 teaspoon cinnamon
1 (5 ounce) can evaporated milk
3 tablespoons butter
2 tablespoons brown sugar, to taste

Steps:

  • Bring the 2 1/2 cups water to a boil.
  • Then add the salt.
  • While stirring constantly, gradually add the oatmeal.
  • Continue to stir the oatmeal and add the sugar and cinnamon.
  • Cook 1 minute and add the evaporated milk.
  • After adding the evaporated milk reheat to boiling.
  • Pour oatmeal in a serving dish and top with the butter and brown sugar.

I could always count on finding these authentic Italian cookies in Grandma's freezer, and her house always smelled yummy! They're great dipped in milk. Grandpa was a blacksmith and actually made their waffle iron, which I still have, although I use my modern electric pizzelle maker when making these.

6 eggs
2 ½ cups white sugar
½ cup vegetable oil
½ cup butter, melted and cooled
1 teaspoon anise oil, or more to taste
5 cups all-purpose flour, or as needed
3 teaspoons baking powder
1 teaspoon salt

Steps:

  • Combine eggs, sugar, vegetable oil, butter, and anise oil in the bowl of a stand mixer fitted with a paddle attachment. Beat until creamy and well combined. Mix in 1 cup flour, baking powder, and salt until combined. Slowly add remaining flour, 1 cup at a time, mixing on low speed until mixture resembles a thick pancake batter.
  • Preheat a pizzelle cooking iron according to manufacturer's instructions. Drop a teaspoon of dough onto each plate of the cooking iron and close the lid. Cook just until steaming slows, 10 to 20 seconds. Repeat with remaining batches of batter.

Number Of Ingredients 9

2 cups boiling water
1 cup quick-cooking oats
1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup molasses
1 tablespoon canola oil
1 teaspoon salt
6 to 6-1/2 cups all-purpose flour
1 teaspoon butter, melted

Steps:

  • In a bowl, pour boiling water over oats. Let stand until mixture cools to 110° to 115°, stirring occasionally. , In a bowl, dissolve yeast in warm water. Add the molasses, oil, salt, oat mixture and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cove rand let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two 9x5-in. loaf pans coated with cooking spray. Cover and let rise until doubled, about 1 hour., Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to cool on wire racks. Brush with melted butter.

1 pound pitted dates, quartered
1-1/2 cups water
1/2 cup sugar
1-1/2 cups all-purpose flour
1-1/2 cups old-fashioned oats
1 cup packed brown sugar
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon almond extract
3/4 cup shortening
Whipped cream, optional

Steps:

  • Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes. Remove from heat., In a large bowl, combine flour, oats, brown sugar, vanilla, baking soda, salt and almond extract. Cut in shortening until crumbly. Press half onto bottom of a greased 13x9-in. baking dish. Carefully spread with date mixture. , Sprinkle remaining crumb mixture over filling; press down gently. Bake until lightly browned, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, serve with whipped cream.

This was my grandma's favorite waffle recipe. It has become a family favorite enjoyed on special occasions not only by her grandchildren but great-great grandchildren as well. The clipping is yellow with age clipped I suspect from the local daily paper many many years ago.

2 cups sifted all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups sour milk (note below) or 2 cups buttermilk (note below)
4 eggs, well beaten
3/4 cup melted margarine (I use margarine or butter) or 3/4 cup salad oil (I use margarine or butter)

Steps:

  • note: if you do not have sour milk or buttermilk measure 2 tablespoons vinegar into your 2-cup measuring cup and fill to the two-cup mark with sweet milk and let it stand while you prepare other ingredients.
  • Sift together: 2 cups all-purpose flour 3 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt.
  • Combine: 2 cups sour milk or butter milk 4 eggs well beaten Add the milk and eggs to dry ingredients,beat until smooth with a hand mixer or electric mixer on high speed.
  • Stir in 3/4 cup melted margarine or salad oil.
  • Bake in preheated waffle iron until crisp and golden. For large maker 2 cups for small maker 1 cup batter.
  • Serve with your favorite toppings.
