This recipe is my grandmother's. Originally, Gram even made the tomato juice in it from scratch! Gram had this soup cooking on the stove every time I visited her. She enjoyed making this tomato soup and other favorite dishes for family and friends, and she made everything with love. -Gerri Sysun, Narragansett, Rhode Island

2 tablespoons butter
1 tablespoon all-purpose flour
2 cups tomato juice
1/2 cup water
2 tablespoons sugar
1/8 teaspoon salt
3/4 cup cooked wide egg noodles
Chopped fresh parsley, optional

Steps:

  • In a saucepan over medium heat, melt butter. Add flour; stir to form a smooth paste. Gradually add tomato juice and water, stirring constantly; bring to a boil. Cook and stir until thickened, about 2 minutes. Add sugar and salt. Stir in egg noodles and heat through. If desired, sprinkle with parsley.

GRANDMA'S EASY ONE POT MACARONI DINNER



Grandma's easy one pot macaroni dinner image

This recipe was handed down from my Mom's Mother. It really didn't have a name but it is the best tasting easy dish ever!

Number Of Ingredients 7

1 1/2 lb barilla elbow macaroni, cooked and drained
6 can(s) (10 3/4 oz) tomato soup
2 medium sweet onions, chopped
1 lb good smoked bacon, fried and crumbled
5 can(s) water (use empty soup cans)
1 Tbsp dried parsley
salt & pepper

Steps:

  • 1. In 6 Qt. pot, sauté bacon until crispy. Remove, let cool a bit, crumble and set aside leaving bacon grease in pot. Add chopped onion to pot and sauté until transparent. Remove onions and drain excess grease from pot.
  • 2. Combine in pot, onions, crumbled bacon, cooked macaroni, tomato soup, water, salt & pepper & parsley. Stir and simmer on medium heat for 30 minutes or until the macaroni starts to absorb the soup. Remove from heat and let stand for 15-20 minutes to thicken a bit.

A great old-fashioned soup recipe;true comfort food. You can make this in your slow cooker in the morning, leave it on Low, but add the macaroni the last 1/2 hour only. Sprinkle on freshly grated parmesan cheese and enjoy a taste of yesterday.

1 teaspoon oil
1 teaspoon butter
2 onions, chopped
2 celery ribs, chopped
1/2 cup celery leaves, chopped
1 carrot, chopped
1 (28 ounce) can tomatoes, cubed
8 cups beef broth
2 teaspoons onion soup mix
1/2 teaspoon Worcestershire sauce
1/2 cup macaroni, uncooked
salt and pepper

Steps:

  • Heat oil and butter.
  • Add onion,carrots, celery and celery leaves and sauté until softened.
  • Add tomatoes, Worcestershire sauce, onion soup mix and beef broth.
  • Simmer for 45 minutes; add macaroni and cook on Low until pasta is cooked(app 30 minutes.).
  • Taste and add salt and pepper.

My Mother and Father were children of the Great Depression. Sometimes my Mom would pull these crazy recipes out but we as a family loved them! This is one that my children and I have to have still sometimes. Eat it hot because it does not rewarm very well. IMHO, Campbells soup works best in this, but feel free to use whatever tomato soup you would like. This sounds wierd but it is REALLY GOOD.

1 (16 ounce) package elbow macaroni
2 (10 ounce) cans tomato soup

Steps:

  • In lightly salted water, cook macaroni according to package directions, drain.
  • In pan you cooked macaroni in, empty soup into pan and slightly warm. You don't need to bring the soup to a boil (and do not add any water!).
  • Add macaroni back to pan and stir thoroughly mixing macaroni with soup.
  • Salt and pepper if you would like. Eat warm and enjoy.

I got this recipe from my Grandma. She would fix this for a quick Saturday dinner. I'm not sure where it originated. It's good old comfort food! I am guessing at the number of servings --- I have really big eaters at my house so you may get more servings than I estimate.

1 (8 ounce) box macaroni
6 slices bacon, diced
1 lb ground beef
1/2 medium onion
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can condensed tomato soup
3/4 cup shredded cheese (I use sharp cheddar)

Steps:

  • Cook the macaroni as directed on package.
  • Cook bacon until crisp.
  • Add onion and ground beef to skillet & cook until meat is browned. Drain fat.
  • Add cooked ground beef, cream of mushroom soup, & tomato soup to macaroni. Mix well.
  • Place mixture in 3 1/2 quart casserole dish.
  • Top with shredded cheese.
  • Bake at 350 degrees for 30 to 45 minutes.

This is a wonderfully rich and creamy tomato soup with a hint of sweetness to it. It tastes just like grandma used to make when things were truly homemade and from scratch. The chunks of tomatoes can either be left alone or pureed into the soup if you prefer a smooth texture.

4 diced tomatoes
4 cups tomato juice
1 1/2 cups heavy cream
1/2 cup butter
salt and pepper

Steps:

  • Place tomatoes and juice in a stockpot over medium heat.
  • Simmer for 30 minutes.
  • Puree the tomato mixture at this point if you don't want it chunky. I usually puree part but still leave a fair amount of chunks.
  • Place the pot over medium heat and stir in the heavy cream and butter. Season with salt and pepper.
  • Heat, stirring until butter is melted. Do NOT boil.
  • Serve with croutons or stir-ins of your choice.

I believe my husband's grandmother came up with this soup, and it was the first recipe I got from my mother in law. I had to have it! This is an easy soup to make, and is very filling. I make a pone of cornbread to serve with it and it's a complete meal.

1 (8 ounce) box macaroni and cheese mix (with the powdered cheese)
1 (15 ounce) can diced tomatoes
2 cups milk
1/2 cup butter or 1 cup margarine
salt and pepper
1 small onion (diced)
water, as desired

Steps:

  • Cook onion and tomatoes together until onion is tender (add water if need to finish cooking process).
  • Cook macaroni noodles until tender (as directed on box).
  • Drain and mix with tomato and onion.
  • Add milk and cheese packet.
  • Add butter/margarine and salt and pepper.
  • Add water to achieve desired thickness (this cooks up real thick, so I usually add a couple of cups).
  • Heat until boiling, then turn off the heat and let sit for a bit before serving.
