OMA'S RHUBARB CAKE
Oma always makes this for her grand kids after she picks through her garden. Probably not good for the thighs but Oma's cooking is always good for the taste buds.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish.
- In a large bowl, stir together 1 1/4 cups sugar, baking soda, salt and 2 cups flour. Stir in the eggs and sour cream until smooth, then fold in the rhubarb. Pour into the prepared dish and spread evenly. In a smaller bowl, stir together the remaining 1 cup sugar and butter until smooth. Stir in 1/4 cup flour until the mixture is crumbly. Sprinkle the mixture on top of the cake then dust lightly with cinnamon.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.

GRANNY'S RHUBARB CAKE
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Spread rhubarb out into the bottom of a cake pan; sprinkle 1/4 cup white sugar over the top.
- Beat brown sugar, sour cream, butter, egg, and vanilla extract together in a bowl with an electric mixer until smooth and creamy. Add flour and baking soda; mix until batter is just combined. Pour batter over rhubarb; top with 1 tablespoon white sugar and nutmeg.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour.

- Preheat oven to 350°. In a bowl, cream butter and 1 cup sugar. Add egg; beat well. - Preheat oven to 400 degrees.
- Mix 1/2 cup sugar, 1 tablespoon cinnamon, and 1/2 cup rhubarb in small bowl for topping. Set aside.
- Mix butter, sugar, sour milk and egg.
- Add dry ingredients.
- Mix in rhubarb.
- Pour into a greased and floured 9" x 13" pan. Sprinkle on topping.
- Bake at 400 for 10 - 15 minutes.

GRANDMA'S RHUBARB BARS
Even if rhubarb season is over, but you happened to freeze some, this recipe is worth using it in! It came from my Grandma Mickey, ranch cook extraordinaire!

Steps:
- 1. Preheat oven to 350*. Have ready a 9 x 13 inch pan.
- 2. For Crust: Mix sugar and flour. Cut in butter, until mixture is crumbly. (a food processor works well here) Pat into pan. Bake 10 minutes.
- 3. While crust is baking, prepare the filling: Beat egg yolks, salt, sugar, flour, cream, and vanilla. Add rhubarb. Pour over crust. Bake 25 minutes. Lower oven temp. to 300*, bake 20 minutes more. Remove from oven.
- 4. Raise oven temp. back to 350*
- 5. While your bars are baking, prepare the topping: Beat ingredients intil stiff peaks form. Spread over hot filling. Bake for 15 minutes, or until meringue is nicely browned.
- 6. Cool and cut into bars.
