GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

Steps:
- Add boiling water to gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Add enough cold water to reserved pineapple liquid to measure 1-1/4 cups. Stir into gelatin.
- Refrigerate 1 hour or until slightly thickened.
- Stir in pineapple chunks; pour into 1-1/2-qt. mold sprayed with cooking spray. Refrigerate 4 hours or until firm. Unmold before serving.

- In mixing bowl, combing jello and boiling water; stir until dissolved. Add cranberry sauce to hot mixture; stir until melted. Allow to cool slightly . Transfer jello mixture to desired dish (mold, rectanglar pyrex, etc.) Add pineapple, celery and nuts over top. Place in refridgerator until set. YUM!

- Dissolve Knox gelatin in 1 c. pineapple juice. Dissolve Jell-O and sugar in 1 c. hot water. Grind cranberry and seeded orange with peel together in food. Grease the mold with vegetable oil or Pam. Use waxed paper to wipe it out. Mix ingredients together and pour into 12 c. jello mold. Refrigerate overnight.
CHRISTMAS JELL-O/GRANDMA'S CHRISTMAS JELL-O
Steps:
- In the same size glass cooking pans, you will chill each color of Jell-O then at the end you'll put then on top of each other to make a wonderful Christmas Jell-O with all the Christmas colors.
- In the green Jell-O dish add the hot water to make the Jell-O as needed on the box of Jell-O then the cold. Once the cold is added then add the can of pineapple add about half of the can then all of the marshmallows. They will float on top. This is the top pan. The green Jell-O will always be on top.
- Then Red Jell-O make as on the box hot and cold water, then add about 1 cup of walnuts and 1/2 can of cranberries, mix and chill. Then once chilled add all of the sour cream on top of the red Jell-O. Spread all over the red.
- Then without breaking the mold take the green Jell-O and put it on top of the red Jell-O. The glass pan helps to see all the layers of color and it’s mmm good. The sour cream don't change it. It's what makes this dish. Try it.
