OLD-FASHIONED LARD BISCUITS

These old-fashioned lard biscuits are incredibly easy to make! With only 6 ingredients and a few simple steps the results are perfectly tender and flaky. Serve with my Classic Sausage Gravy for a comforting meal.

Number Of Ingredients 6

240 grams (2 cups) all-purpose flour, plus more for dusting the work surface
10 grams (1 tablespoon) baking powder
¼ teaspoon baking soda
6 grams (1 ¼ teaspoon) kosher salt
85 grams (6 tablespoons) leaf lard, cold
240 grams (1 cup, 240 milliliters) buttermilk, cold

Steps:

  • Position an oven rack to the center position and preheat to 450°F/230°C.
  • Spray a cake pan with non-stick spray or line a sheet pan with parchment paper or a silicone baking mat.
  • Measure out all ingredients. Keep the lard and buttermilk in the refrigerator until ready to use.
  • In a large mixing bowl, whisk together the flour (240 grams, 2 cups), baking powder (1 tablespoon), baking soda (¼ teaspoon), and salt (6 grams, 1 ¼ teaspoon).
  • Add the cold lard (85 grams, 6 tablespoons) to the mixing bowl and cut it into the flour mixture. To do this, press down on the fat with the wires of the pastry blender or the tines of a fork as you move it around the bowl. Continue cutting the fat into the flour until most of the pieces of fat are about the size of peas with some pieces being about the size of a walnut half.
  • Add the cold buttermilk (240 grams, 1 cup) into the bowl and stir with a spoon or a silicone spatula just until combined. This should only take a few turns. The dough will be pretty wet and sticky.
  • Turn the dough out onto a lightly floured counter. Dust flour over the top of the dough. With floured hands bring the dough together into one mass.
  • Pat the dough out (do not roll with a rolling pin) until it is about 1-inch (2.5 cm) thick. Using a bench knife (or a metal spatula can be helpful if you do not have a bench knife), fold the dough in half and then turn it 90 degrees. Pat out and fold again for a total of 6 times. This process is creating layers that will create flaky biscuits.
  • Press the dough out to about 1-inch (2.5 cm) thick and use a round cutter that is about 2.5-inches (6 cm) in diameter to cut out your biscuits. When cutting out, dip your cutter in flour, press straight down, and pull it back up without twisting it. Twisting can seal the edge of your biscuit, not allowing it to rise fully. Gently pat the scraps together to cut out the rest of your biscuits. Alternatively, you can pat the dough into a rectangle and use a sharp knife to divide the dough into 8 rectangular-shaped biscuits.
  • Place the biscuits in the prepared cake pan or baking sheet with the edges touching so they will rise up against each other.
  • As an optional step, place the pan in the freezer for 10 minutes before baking. This will ensure that your biscuits will not spread too much and will allow your oven to fully pre-heat.
  • Bake at 450°F/230°C for 13-15 minutes until golden brown. Do not open the oven door for at least the first half of baking time. You want the steam to stay trapped in the oven to help with the rise.
  • Brush biscuits with melted butter or top with sausage gravy.

3 teaspoons baking powder
1 teaspoon salt
1/3 cup shortening
2/3 cup 2% milk
1 large egg, lightly beaten

Steps:

  • Preheat oven to 450°. In a large bowl, whisk flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Add milk; stir just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat dough into a 10x4-in. rectangle. Cut rectangle lengthwise in half; cut crosswise to make 10 squares., Place 1 in. apart on an ungreased baking sheet; brush tops with egg. Bake until golden brown, 8-10 minutes. Serve warm.

2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup shortening
1 large egg, room temperature
2/3 cup 2% milk

Steps:

  • Preheat oven to 400°. In a bowl, whisk together first 4 ingredients. Cut in shortening until the mixture resembles coarse crumbs. Whisk together egg and milk. Add to dry ingredients; stir just until moistened. Dough will be wet. , On a well-floured surface, knead dough gently 8-10 times. Roll to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place on a lightly greased baking sheet. , Bake until golden brown, 10-12 minutes. Serve warm.

This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.

2 cups all-purpose flour
2 tablespoons white sugar
4 teaspoons baking powder
½ teaspoon cream of tartar
½ teaspoon salt
½ cup vegetable shortening
1 egg
⅔ cup milk

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Sift flour, sugar, baking powder, cream of tartar, and salt into a bowl. Use a pastry cutter to chop vegetable shortening into the flour mixture until it resembles coarse crumbs. Whisk egg and milk together in a separate bowl and slowly add milk mixture to flour mixture, stirring as you pour, until dough is moistened and well-mixed. Drop dough by spoonfuls onto an ungreased baking sheet.
  • Bake in the preheated oven until biscuits have risen and are golden brown, 10 to 12 minutes.

Grandma used this recipe for biscuits her wonderful home made biscuits that we often ate warm with home made butter and fresh honey. They were also great warm with fresh strawberries and whipped cream.

2 c all purpose flour
4 tsp baking powder (be sure it is fresh for best results)
3 tsp sugar
1/2 tsp salt
1/2 c shortening
1 egg
2/3 c milk

Steps:

  • 1. Preheat oven to 450 degrees. In a medium bowl, combine the flour, baking powder, sugar and salt. Cut in shortening until the mixture resembles coarse crumbs. Beat egg with milk. Stir into dry ingredients just until moistened.
  • 2. Turn onto a well-floured surface. Knead 10-20 times. Roll dough out to 3/4 inch thickness. Cut with a floured 2-1/2 inch biscuit (or round cookie) cutter. Place on a lightly greased baking sheet. Bake at 450 degrees for 8-10 minutes or until golden brown. Serve warm.

MY GRANNY'S OLD-FASHIONED BISCUITS



My Granny's Old-Fashioned Biscuits image

A simple, basic buttermilk biscuit with minimal ingredients. It's an old-fashioned recipe everyone should have handy. If you follow Elaine's directions, once baked the biscuit is perfectly flaky and fluffy with a little tang from the buttermilk. They're melt-in-your-mouth good.

2 c self-rising flour (Martha White or White Lily for best results)
1/4 c lard or shortening (about egg-sized and very cold)
1 c very cold buttermilk (may need to adjust amount)
3 Tbsp melted shortening or butter

Steps:

  • 1. Preheat oven to 450 degrees. Heavily grease a large cast-iron skillet or biscuit pan and set aside. (I prefer the cast iron skillet).
  • 2. Put the flour into a large bowl and add lard/shortening.
  • 3. Cut into flour using the usual pastry method.
  • 4. Add buttermilk and mix with fork or hands.
  • 5. Mix into a light dough.
  • 6. Turn dough onto a floured board and knead a couple of times.
  • 7. Pat dough to flatten to about 1/2 inch thick. Using a biscuit cutter, cut dough into biscuits.
  • 8. Place cut biscuits in the prepared pan.
  • 9. Pour melted shortening/butter over each biscuit.
  • 10. Bake for about 13 to 15 minutes or until golden. Remove from pan and place into a covered container and allow to steam for about 5 minutes. You may also brush melted butter over top prior to steaming (if desired).
  • 11. Serve hot with butter, apple butter, jellies, jams, honey, or anything else that you like.
  • 12. Special Note: I didn't have a biscuit cutter, so what I did was open both ends of a 4-ounce sized mushroom can, washed and removed the label and it works perfectly.
