6 cups sliced fresh strawberries
1/2 cup sugar
1 teaspoon vanilla extract
SHORTCAKE:
3 cups all-purpose flour
5 tablespoons sugar, divided
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cold butter, cubed
1-1/4 cups buttermilk
2 tablespoons heavy whipping cream
TOPPING:
1-1/2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine strawberries with sugar and vanilla; mash slightly. Let stand at least 30 minutes, tossing occasionally., Preheat oven to 400°. For shortcakes, whisk together flour, 4 tablespoons sugar, baking powder, baking soda and salt. Cut in butter until crumbly. Add buttermilk; stir just until combined (do not overmix). Drop batter by 1/3 cupfuls 2 in. apart onto an ungreased baking sheet. Brush with 2 tablespoons heavy cream; sprinkle with remaining 1 tablespoon sugar. Bake until golden, 18-20 minutes. Remove to wire racks to cool completely., For topping, beat heavy whipping cream until it begins to thicken. Add sugar and vanilla; beat until soft peaks form. To serve, cut shortcakes in half; top with strawberries and whipped cream.

2 eggs
1-1/2 cup sugar, divided
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 2% milk
1 tablespoon butter
1 teaspoon vanilla extract
1 to 1-1/2 quarts fresh strawberries, sliced
Sweetened whipped cream
Mint leaves, optional

Steps:

  • Preheat oven to 350°. Grease an 8-in. square baking pan. In a large bowl, beat eggs on medium speed 3 minutes. Gradually add 1 cup sugar, beating until thick and lemon-colored. In another bowl, whisk flour, baking powder and salt; beat into egg mixture. In a small saucepan, heat milk and butter just until butter begins to melt. Beat into batter with vanilla (batter will be thin)., Transfer batter to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely., Just before serving, cut cake into serving-size pieces; cut each slice horizontally in half. In a large bowl, combine strawberries and remaining sugar; spoon between cake layers and over top of each serving. Top with whipped cream and, if desired, mint leaves.

This is a fabulous old-fashioned recipe given to me by a friend. It was her mother's recipe and it is the best shortcake. It sops up all the juice and the touch of nutmeg sends it over the top. My very favorite recipe for strawberry shortcake!

2 cups all-purpose flour
1 cup white sugar
4 teaspoons baking powder
½ teaspoon salt
¼ teaspoon ground nutmeg, or to taste
½ cup butter
1 egg
⅓ cup milk

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Grease an 8-inch baking pan.
  • Sift flour, sugar, baking powder, salt, and nutmeg in a large bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs. Beat egg and milk in another bowl; stir into flour mixture until batter is just blended. Spread batter in the prepared baking pan.
  • Bake in preheated oven until golden, about 15 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

MA'S ONE EGG CAKE

This was my Grandma's recipe. I believe it dates back to the depression. A moist and versatile cake that will please everyone. Really good with recipe #182807 or for strawberry shortcake or pineapple upside-down cake. You can double the recipe for a 10x13 pan or triple the recipe for a 12x16 pan.

1 3/4 cups flour
1 1/4 cups sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter flavor shortening
2/3 cup milk
1 teaspoon vanilla
1/3 cup milk
1 egg

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease and flour a 9 inch x 9 inch pan.
  • Sift dry ingredients together.
  • Add shortening, the 2/3 cup milk, and the vanilla; beat for 2 minutes.
  • Add the 1/3 cup milk and egg; beat for 2 more minutes.
  • Pour into prepared pan.
  • Bake for about 45-50 minutes or until done. You might check a little earlier because my oven runs cool. If doubling or tripling the recipe, you'll have to increase the cooking time substantially.
  • UPSIDE DOWN CAKE:.
  • If making pineapple upside down cake, use the strained juice in the batter, reducing the milk by the amount of juice used.
  • Drop pieces of butter and sprinkle brown sugar on pan.
  • Lay pineapple rings down.
  • Pour cake batter on top.

This recipe can be used for either shortcake or upside down cake. Grandmom used to make this a lot and she put fresh strawberries, raspberries or blackberries on the shortcake. In the winter she would use canned peaches. She used pineapples for the upside down cake.

1/2 cup lard (I changed to butter)
1 cup sugar
1 egg
1 teaspoon vanilla
2 cups self-rising flour
1 cup sweet milk

Steps:

  • Mix and spread in a 9x14" pan.
  • Bake at 350 untill brown- approximately 20 minutes.
  • If you don't have self-rising flour you can use- 2 cups plain flour, 2 teaspoons baking powder and 1/4 teaspoons salt.

2 cups all-purpose flour
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
1 large egg, room temperature, beaten
2/3 cup half-and-half cream
1 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/8 teaspoon vanilla extract
Additional butter
1-1/2 cups fresh strawberries, sliced

Steps:

  • Preheat oven to 450°. Combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk egg and half-and-half. Add all at once to crumb mixture; stir just until moistened. , Spread batter into a greased 8-in. round baking pan, slightly building up the edges. Bake until golden brown, 16-18 minutes. Remove from pan; cool on a wire rack. , Beat heavy cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until stiff peaks form. Split cake in half crosswise; butter bottom layer. Spoon half the strawberries over bottom layer. Spread with some whipped cream. Cover with top cake layer. Top with remaining berries and whipped cream. Cut into wedges.

This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Sift flour, sugar, baking powder, cream of tartar, and salt into a bowl. Use a pastry cutter to chop vegetable shortening into the flour mixture until it resembles coarse crumbs. Whisk egg and milk together in a separate bowl and slowly add milk mixture to flour mixture, stirring as you pour, until dough is moistened and well-mixed.
