GRANDMA'S DATE FILLED COOKIES
These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

Steps:
- Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
- Mix together the shortening, sugar, and eggs.
- Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
- Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
- Chill dough for at least 1 to 2 hours.
- Roll out dough in thin layers in small batches and cut with round cookie cutter.
- Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
- Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

Steps:
- In heavy-bottomed,lg.
- saucepan or pot,melt butter.
- Stir in brown sugar and dates.
- Cook til sugar is melted.
- Remove from heat and QUICKLY stir in egg well.
- Return to med.
- heat, stirring constantly, til boiling.
- Boil and stir 1 minute.
- Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
- Roll into balls, about 1" or so, roll in powdered sugar to coat.
- Store airtight.
- (Can chill if desired, but serve room temp.).

GRANDMA'S CHRISTMAS COOKIE
My Grandmother used to make these for my mother and me for years. We took it for granted that she would always be here to do so. My mother and I played with the ingredients until we think we have duplicated Grandma's recipe. The light coating of powdered sugar makes these stand out from the other cookies in the tin.

Steps:
- Preheat an oven to 375 degrees F (190 degrees C).
- Stir the sifted flour, baking soda, cream of tartar, and salt together in a bowl.
- Beat the margarine, butter and sugar together with an electric mixer in a large bowl until smooth. Add one egg, and continue beating until completely incorporated; add the remaining egg along with the vanilla extract, and beat on low speed until incorporated. Mix the flour mixture into the butter mixture until just incorporated. Gently mix the pecans into the dough with your hands.
- Roll the dough into 1-inch balls; arrange onto baking sheets about 2 inches apart.
- Bake in the preheated oven until the edges are golden-brown, 8 to 9 minutes. Allow the cookies to cool on the baking sheet for 8 minutes. Place confectioners' sugar into a bowl, and lightly dip both sides of each warm cookie into the sugar. Tap of excess, and allow cookies to finish cooling.

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

- Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
- Grease your hands with margarine. Roll date mixture into 1-inch balls.
- Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

- 1. In dutch oven, or heavy bottomed pot, melt butter over medium heat. Watch, don't brown. Stir in dark brown sugar and dates. Stir til melted a little. Remove from heat and add egg whisking in *QUICKLY* so you don't scramble the egg. Whisk til mixed well. Return to heat and stir constantly til boiling. Boil and stir one minute. Remove from heat, add rest of ingredients, cool til cool enough to handle. Roll into balls. Roll in powdered sugar. Makes 3-4 dozen depending on size. 1 - 1 1/2" balls. Store airtight. Freezes well.
GRANDMAS COCONUT DATE BALLS
This was my Grandmothers recipe. She made them at Christmas. However delicious for any time of the year.

GRANDMA MINECCI'S SNOWBALL COOKIES

- Beat shortening, butter, and white sugar together in a bowl using an electric mixer until smooth and creamy; add eggs and vanilla extract and beat until smooth. Sift flour and salt into creamed butter mixture and stir just until dough is combined; fold in pecans. Shape dough into 1-inch balls and arrange on a baking sheet.
- Bake in the preheated oven until lightly browned, about 20 minutes. Cool cookies slightly and roll in confectioners' sugar. Cool cookies completely and roll again in confectioners' sugar.
