CARAMEL FROSTING
This frosting recipe was the one my Grandma used on top of her oatmeal cake, spice cake, and banana nut cake. I also like it on a yellow or white cake. You do have to use at once because this does stiffen as it cools.

Steps:
- Melt butter in a 2-quart saucepan over medium heat; stir in brown sugar. Bring to a boil, stirring constantly. Cook until thickened, about 1 minute. Let cool for 5 minutes.
- Whisk milk into the saucepan until mixture is smooth.
- Beat 3 cups confectioners' sugar and salt into the butter mixture with an electric mixer on low speed. Add remaining confectioners' sugar 1 cup at a time, beating until smooth.

- In a medium bowl, using an electric hand mixer, beat the butter until light and smooth. Beat in the powdered sugar, milk and vanilla until smooth and creamy.
GRANDMA'S BUTTER CAKE

- Preheat gas oven 350 degrees, electric 325 degrees. All ingredients should be room temperature. Grease and flour 2 (9-inch) round cake pans. Sift flour, add baking powder and salt. Set aside. On medium speed, cream butter and sugar, until light and fluffy. (Or 150 strokes by hand.) On medium speed, (or another 150 strokes) add 1 egg at a time. After 2 eggs add 2 tablespoons flour. Add flour mix alternating with the milk, ending with the flour. Add extracts. Place cake pan in middle of oven. Pans should not touch. Baking time approximately 35 minutes.
- In a hot cast-iron skillet or heavy saucepan melt butter and brown sugar together on high heat, stirring until sugar is thoroughly melted. Transfer into mixing bowl and, using mixer on low speed, starting and ending with confectioners' sugar; alternately add heavy cream with vanilla, beating until frosting becomes spreadable. Spread on cooled cake.;
GRANDMA'S BUTTERNUT FROSTING
If you have made my grandma's butternut pound cake then you need to make the frosting to drizzle on top as it completes this wonderful dessert.

- Combine all ingredients in order (butter, flavoring, sugar, cream cheese, then pecans).
- Mix well.
- Use to frost pound cake or bake cake in 3 layers and frost the butternut pound cake.
GRANDMA'S FROSTING
My Grandma was a great baker. She made the most delicious frosting for her cakes. I could never quite get why my frosting never tasted like hers. Years later I found this recipe in her handwriting and it had coffee in it. I'm not a coffee drinker, but boy was this frosting delicious. The recipe is actually for 3 variations: white, chocolate or mocha.

Steps:
- Cream butter and sugar together. Slowly add enough milk to make the frosting spreadable. Add the vanilla. Adjust milk and powdered sugar until desired consistency.
- For chocolate icing, add the cocoa powder.
- For mocha icing, delete the milk and add cocoa and cold coffee.

SNICKERDOODLE CUPCAKES WITH CINNAMON BUTTERCREAM FROSTING
These cupcakes have a good amount of that cinnamon-sugar flavor that is so sought after in the famous cookie form. They are good both with, and without, the frosting!

- Preheat the oven to 350 degrees F (175 degrees C). Line 18 cupcake cups with liners.
- Mix together 1/3 cup sugar and cinnamon for cupcakes in a small bowl. Set aside.
- Whisk together flour, baking powder, cream of tartar, salt, and baking soda in another bowl until combined.
- Cream together butter and 1 cup sugar in a large bowl until light and fluffy, 2 to 3 minutes. Add in egg and vanilla and mix an additional 2 minutes. Pour in half of the flour mixture and mix until just combined. Pour in buttermilk and mix until just combined. Add in remaining flour mixture and mix until just combined.
- Place 1 tablespoon of batter in the bottom of each cupcake liner. Sprinkle 1/2 teaspoon of cinnamon-sugar over the batter. Add another heaped 1 tablespoon of batter on top. Sprinkle with an additional 1/2 teaspoon cinnamon-sugar mixture. Repeat layering in each cupcake liner.
- Bake in the preheated oven until cupcakes spring back lightly when touched, 24 to 28 minutes. Allow to cool for several minutes in the pan before removing to a wire rack to cool completely.
- For the frosting: Beat butter on high speed until lightened in color, about 2 minutes. Add in powdered sugar 1 cup at a time, mixing well after each addition. Mix in vanilla, cinnamon, and salt. Add in heavy cream and beat until frosting is light and fluffy, an additional 2 to 3 minutes. Frost cooled cupcakes as desired.

- In a small saucepan mix the flour and the milk and cook over low heat until it forms a smooth paste with no lumps. Place in refrigerator and let cool completely.
- With an electric mixer beat the shortening, butter or margarine and the sugar until light and fluffy. Beat in the cooled flour paste and mix until smooth. Stir in the vanilla. Use to frost any cooled cake. Makes enough to frost one 9x13 inch sheet cake or two 8 or 9 inch layer cakes.
